½ cup (30g) Weight Watchers Fruit & Fibre Tropical

▲▲ ¼ cup (30g) traditional rolled oats

1 tbs artificial sweetener powder

½ tsp ground cinnamon

1 tbs psyllium husks

2 tbs LSA mix

2 tbs Weight Watchers Canola Spread, melted

▲▲ 1 red apple, thinly sliced

▲▲ 150g tub NESTLÉ DIET Vanilla Yoghurt

1 Pre-heat oven to 180°C or 160°C fan-forced. Line a baking tray with baking paper. Place Weight Watchers Fruit & Fibre Tropical in a bowl and crush with your fingers until fine crumbs form. Add oats, sweetener, cinnamon, psyllium and LSA and mix until combined. Stir in Weight Watchers Canola Spread until combined. Spread crumb mixture evenly over prepared tray. Bake for 5–10 minutes, stirring once, until golden.

2 Meanwhile, place strawberries, apple and kiwifruit in a bowl. Toss to combine. Divide fruit mixture among bowls. Serve topped with crumb and NESTLÉ DIET Vanilla Yoghurt.

▲▲ 4 flat mushrooms, halved

▲▲ 4 green shallots, cut into 5cm lengths

4 slices (55g) Weight Watchers Bacon, thickly sliced

▲▲ 4 eggs

4 x 45g slices soy and linseed bread

1 tbs Weight Watchers Canola Spread

1 Pre-heat oven to 200°C or 180°C fan-forced. Place tomatoes, mushrooms, shallots and Weight Watchers Bacon in a deep 15cm x 26cm ceramic baking dish. Season with salt and freshly ground black pepper. Lightly spray with oil and toss to coat. Bake for 15 minutes or until tomatoes have softened and bacon is browned. Remove tray from oven.

2 Carefully break eggs into tray, in and around the vegetable and bacon mixture. Bake for 5–10 minutes or until eggs are cooked to your liking.

3 Meanwhile, toast bread and spread with Weight Watchers Canola Spread. Serve the hot breakfast mixture in the baking tray with toast.

NZ MEMBERS NOTE: You can use Tegel Smoked Chicken Bacon instead of Weight Watchers Bacon. The ProPoints values remain the same.

½ cup (120g) Weight Watchers Canola Spread

½ cup (110g) caster sugar

▲▲ 2 eggs

1¼ cups (185g) self-raising flour

¾ cup (180g) Weight Watchers Sour Cream

▲▲ 400g can Weight Watchers Halved

Apricots, drained

¼ cup (80g) Weight Watchers Apricot Fruit

Spread, warmed

2 x 34g pkts Weight Watchers Vanilla

Flavoured Custard powder

1 Preheat oven to 180°C or 160°C fan-forced. Lightly

spray a 20cm round cake tin with oil. Line base

with baking paper.

2 Using electric beaters, beat Weight Watchers

Canola Spread and sugar until light and creamy.

Add eggs, 1 at a time, beating well after each

addition. Add flour and Weight Watchers Sour

Cream and beat until combined.

3 Spoon mixture into tin and smooth the surface.

Top with Weight Watchers Halved Apricots,

cut-side up. Spoon Weight Watchers Apricot

Fruit Spread over apricots to cover. Bake for

45 minutes or until cooked when tested with a

skewer. Stand cake in tin for 5 minutes before

transferring to a wire rack to cool.

4 Meanwhile, make Weight Watchers Vanilla

Flavoured Custard following packet instructions.

Serve cake with custard.

1 tbs lemon juice

1 Cook potatoes in a medium saucepan of boiling salted water for 15 minutes or until tender. Drain. Allow to cool for 10 minutes before slicing thickly.

2 Meanwhile, divide baby spinach and rocket among 4 serving plates. Top with Weight Watchers Tuna in Springwater, avocado, cucumber and sliced potatoes.

3 Combine Weight Watchers Mayonnaise, Weight Watchers Sour Cream, rind, juice and ¼ cup (60ml) water in a small bowl. To serve, drizzle dressing over salads and season with salt and freshly ground black pepper.

Smoked salmon fettuccine 12 ProPoints values per serve Serves: 4 | Prep: 15 mins | Cooking: 10 mins

375g fresh egg fettuccine pasta

200g smoked salmon, roughly chopped

150g Weight Watchers Sour Cream

50g Weight Watchers Cream Cheese

2 tbs finely chopped fresh chives

2 tbs finely chopped fresh dill

1 Cook pasta in a large saucepan of salted boiling water, following packet instructions, or until just tender. Drain. Return pasta to saucepan.

2 Meanwhile, place half the smoked salmon in a food processor. Add Weight Watchers Sour Cream, Weight Watchers Cream Cheese, and half of both the chives and dill. Process until sauce is smooth.

3 Add sauce to pasta and toss until well combined. Fold through remaining smoked salmon and most of the remaining chives and dill.

4 Divide pasta mixture among plates and sprinkle with remaining chives and dill. Serve.

SERVE WITH: A 0 ProPoints value green salad.

Entertain with Weight Watchers Foods Bacon & cheese tarts 2 ProPoints values per serve Makes: 12 | Prep: 10 mins Cooking: 15 mins

2 x 60g pieces lavash bread

½ x 125g pkt (3 slices) Weight Watchers Bacon, finely chopped

½ cup (50g) Bega So Extra Light 50% grated cheese

¼ cup (30g) parmesan cheese, grated

▲▲ 1 egg, lightly beaten

▲▲ 3 green shallots, thinly sliced

1 tbs finely chopped fresh flat-leaf parsley leaves

1 Preheat oven to 180°C or 160°C fan-forced. Lightly spray a 12-hole (2tbs/40ml capacity) patty cake tin with oil. Cut lavash into twelve 7cm rounds. Press lavash rounds into each prepared hole.

2 Heat a small non-stick frying pan over medium-high heat. Add Weight Watchers Bacon and cook, stirring occasionally, for 2–3 minutes or until golden. Set aside.

3 Place bacon, Bega So Extra Light 50%, parmesan, egg, shallots and parsley in a medium bowl and stir until well combined. Season with sea salt and freshly ground black pepper.

4 Spoon bacon mixture into prepared bread cases. Bake for 10–15 minutes or until golden and set. Serve.

1 Preheat oven to 180°C or 160°C fan-forced. Lightly spray an 18cm x 25cm (base measurement) baking dish with oil.

2 Lightly spray a large non-stick frying pan with oil and heat over medium heat. Add onion, garlic and capsicum and cook, stirring, for 5 minutes or until onion is softened. Stir in mushrooms, tomatoes, tomato paste, 1 cup (250ml) water and stock cube and bring to the boil. Reduce heat to low and simmer for 10 minutes or until thickened slightly.

3 Meanwhile, beat Weight Watchers Cream Cheese and Weight Watchers Cottage Cheese until well combined. Microwave mixture on High (100%) for 20–30 seconds to make the mixture easier to spread.

4 Spread one-third of the tomato mixture over base of prepared dish. Top with a single layer of lasagne sheets and half the cheese mixture. Add another layer of lasagne sheets, half the remaining tomato mixture and all the remaining cheese mixture. Top with a final layer of lasagne sheets and remaining tomato mixture. Sprinkle with Bega So Extra Light 50% and bake for 50 minutes or until pasta is tender and top is golden brown.

TIP: Cover lasagne with foil if the top is browning too much.

65g Weight Watchers Canola Spread, melted

2 x 150g tubs vanilla fromage frais 99% fat free

275g reduced-fat fresh ricotta cheese

1 tsp finely grated lemon rind

▲▲ 125g blueberries

▲▲ 250g raspberries

2 tsp icing sugar, to dust

1 Lightly spray the sides of a 12cm x 34cm rectangular loose-based fluted flan tin with oil (no need to spray base).

2 Place Weight Watchers Choc Chip Cookies in a food processor and process for 1 minute or until fine crumbs form. Add Weight Watchers Canola Spread and process for a few seconds or until combined.

3 Using the back of a spoon, firmly press biscuit mixture over base and sides of prepared tin. Refrigerate for 1½ hours or until firm.

4 Place fromage frais, ricotta and rind in food processor and process until well combined and smooth.

5 Carefully remove biscuit base from tin and slide onto a serving platter (see tip). Spoon fromage frais mixture into cavity and scatter with berries. Serve dusted with icing sugar.

SERVE WITH: Weight Watchers Creamy Vanilla Ice Cream. Add 1 ProPoints value per serve for ½ a 145ml tub.

TIP: Use a spatula to gently lift the chilled biscuit base off the base of the tin.

Let’s face it, we’re not all domestic goddesses with time to effortlessly pop delicious meals and other goodies in and out of the oven. While there’s lots of satisfaction to be had from baking and cooking from scratch, there’s also some fun to be had by faking it. No need to pick one over the other, but when you’re stuck for time why not get a little help from the aisles of your supermarket? Then when you’ve time to spare, try making your own pudding with our easy recipe. Either way your weight loss is the winner.

Sticky date puddings with caramel sauce 8 ProPoints values per serve Serves: 6 | Prep: 10 mins | Cooking: 30 mins

¾ cup (120g) pitted dried dates, chopped

1 tsp bicarbonate of soda

½ cup (120g) Weight Watchers Sour Cream

3 x 125g tubs NESTLÉ DIET Crème Caramel

½ cup (110g) brown sugar

▲▲ 2 eggs

1¼ cups (185g) self-raising flour, sifted

1 Preheat oven to 180°C or 160°C fan-forced. Lightly spray six 1-cup (250ml) capacity ramekins or ovenproof dishes with oil. Line the bases with baking paper.

2 Place dates and bicarbonate of soda in a small saucepan. Add ¾ cup (185ml) cold water and bring to the boil. Remove from heat and set aside to cool slightly.

3 Combine half the Weight Watchers Sour Cream, 1 tub of NESTLÉ DIET Crème Caramel, sugar and eggs in a bowl and stir until combined. Fold in flour and undrained date mixture.

4 Spoon mixture among prepared dishes. Place dishes on a baking tray and bake for 25 minutes or until slightly risen and firm to touch. Cool for 5 minutes. Using a small spatula or knife, loosen sides of puddings and turn out onto serving plates.

5 Meanwhile, beat together remaining tubs of NESTLÉ DIET Crème Caramel and Weight Watchers Sour Cream in a bowl until well combined. Serve warm puddings drizzled with caramel sauce.

SERVE WITH: Weight Watchers Creamy Vanilla Ice Cream. Add 1 ProPoints value per serve for ½ a 145ml tub.

TIP: This quick and easy caramel sauce is also great drizzled over sliced banana. The sauce has 1 ProPoints value per serve.

•We used eggs with an average weight of 59g

•We used standard metric measuring equipment approved by Standards Australia. This includes:

1. A 250 millilitre jug for measuring liquids

2. A graduated set of four measuring cups (1 cup, 1⁄2 cup, 1⁄3 cup and 1⁄4 cup) for measuring dry ingredients such as flour, sugar etc.

3. A graduated set of four measuring spoons (1 tablespoon, 1 teaspoon, 1⁄2 teaspoon, 1⁄4 teaspoon) for small liquid and dry ingredients.
