York employs modern viticulture practices and management techniques for growing, pruning and spraying to ensure that the fruit harvested is of the best quality. The combination of modern Australian and South African winemaking practises combined with old-world French influences is an open-minded approach. VITICULTURE + VINIFICATION The vines for the 40% Shiraz, 60% Cabernet Sauvignon blend are grown on light red soil with medium clay content and the vines benefit from Y structure trellissing. Grapes were handpicked once they achieved 23-23.5 Brix and fermented separately in tank for 18-22 days for maximum flavour and tannin extraction. New and used toasted French oak barrels were carefully paired to each varietal for 13-14 months maturation with no fining and minimal sheet filtration at 2 microns before bottling. TASTING NOTES Lifted aromas of jammy, sweet vanilla and Christmas cake characters with nuances of nutmeg, cloves, blackcurrant and coffee.
