    I ndia ranks first in the w orld in production of

    fruits and second in vegetables, accounting

    roughly 10 and 1 5 per cent, respectively, of total

    global production. I ndia have a strong and

    dynam ic food processing sector playing a vitalrole in diversifying the agricultural sector,

    improving value addition opportunit ies and

    creating surplus food for agro-food products.

    Presently, a m ere 2 .2 per cent of fruits and

    vegetables are processed, even as the countr y

    ranks second in the w orld in term s of production.

    This is comparatively low w hen compared to other

    countries like Brazil ( 30 per cent) , USA (7 0 per

    cent) and Malaysia ( 82 per cent) .The National

    policy aims to increase the percentage of food

    being processed in the country t o 10 per cent by2010 and 25 per cent by 2025.

    Major vegetab les grow n are Potato, Onion,

    Tomato, Cauliflower, Cabbage, Bean, Egg Plants,

    Cucumber, Gherkin, Peas, Garlic and okra. The

    maj or fruits grow n in I ndia are Mangos, Grapes,

    Apple, Apricots, Orange, Bana na Fresh, Avocados,

    Guava, Litchi, Papaya and Wat er Melons. Mango,

    accounts for 40 percent of the na tional fruit

    production and I ndia is one of the leading

    exporters of fresh table grapes to the global

    mark et. The changing food habits are discernible.

    preserved and dehydrated vegetables and fruits

    such as sauces, preserve d onions, cucumbers an d

    gherkins, green pepper in brine, dehydrated garlic

    and ginger pow der, dried garlic and ginger,

    tomato products, pickles and chutneys, processed

    mushrooms and t ruffles and curried vegetables.

    Nearly one t hird of our horticultural produce,

    especially fruits and vegeta bles are w asted,

    mainly on account of poor cold storage and othe r

    storage facilities. W astage of fru its and

    vegetables due to poor post-harvest manag ement

    and la ck of cold chain facilities have bee n

    estimated t o cost up to Rs 500 billion annually.

    The country a lso exper iences w ide fluctuations in

    prices of horticultural produce, particularly

    potatoes and onions. The cold storages will help

    boost exports of agr icultural an d allied produce,

    marine produce etc.

    I ncentives to build cold-storage facilities w ill

    bring investm ent, cut food wastage and smoothen

    the supply chain in the world's second biggest

    producer of fruits and vegetables. With a view to

    ensuring faster development of cold storage

    capacity and to encourage entr epreneurs to invest

    more in this sector a new credit-linked capital

    subsidy scheme f or construction of cold storages

    and godowns. The scheme w ould be implem entedby NABARD/ NCDC/ NHB. National Horticulture

    Board is providing capital subsidy to

    entrepren eurs for construction, expansion and

    modernization of cold storages for horticulture

    products. This scheme is to promote setting up of

    cold storages in the country for reducing post

    harvest losses. A subsidy of 25 % of the proj ect

    costsubject to a m aximu m of Rs.50 lakh per

    project w ill be availed under this scheme.

    How ever, for the projects in the northeastern

    States, maxim um subsidy admissible would beRs.60 lakh @ 33.33 % of the project cost.Cold

    Storages including contr olled Atmospher e ( CA)

    and Modified Atmosphere ( MA) Stores, pre- cooling

    units and other Storages for onion et c.

    Natu rally this scheme w ill attr act new investment

    in th e sector. This move is a good de cision for

    agriculture sector w hich is struggling w ith food

    w astage problem. Cold storage facilities are

    limited and th e focus of the recent budget on

    bringing in more investme nt w ill boost

    w arehousing and cold storage sector.

    In India fruits & vegetables are produced in plenty. A large

    quantity of fruits & vegetables are exported to other countries

    & even in India itself they are transported from one place to

    another. Transportation business takes time. So, it is desirable

    that fruits & vegetables should be kept at a place where they

    can remain safe, otherw ise a lot of them will be wasted. For

    the same purpose, cold storage is used. Cold Storages are

    special kind of room in which very low temperature is

    maintained. Maintenance of low temperature is with the help

    agricultural and allied produce, marine produce etc. Other food

    segments like dairy products, and pr ocessed meat, also

    require cold st orage facilities. Freezing is a quick, convenient,

    and popular way to pr eserve fruits and vegetables. Freezing is

    not usually as economical as canning, but it pr eserves m ore

    nutrients in the food if properly done. Built-in-place cold

    storage can be constru cted out of wood pole and post, st eel

    and/ or concrete block. The constr uction cost will depend on

    labor cost and on the type of materials used for the frame,

    walls, floor, ceiling and insulation. The cooling process is one

    of the most important steps in the entire process that brings

    fruits and vegetables from the farm to the storage table.

    Incentives to build cold-storage facilities will bring investment,

    cut food wastage and smoothen the supply chain in the world's

    second biggest producer of fr uits and vegetables. Government

    Support for cold storage plants are available in the form of

    subsidies with consultancy services to help connecting farm ers

    to m arket & to avoid heavy losses & wastes of food products.

    With a view to ensuring faster development of cold storage

    capacity and to encourage entrepreneurs to invest more in this

    sector , a new credit- linked capital subsidy scheme for

    construction of cold stor ages and godowns is being availed

    from government. The scheme would be implemented by

    NABARD/ NCDC/NHB. Nation al Hort icult ure Board is prov iding

    capital subsidy to entrepreneurs for construction, expansion

    and modernization of cold storages for horticulture products.

    This scheme is to prom ote setting u p of cold storages in the

    project will be availed under this scheme. However, for the

    projects in the northeastern States, maximum subsidy

    POTATO POWDER, FLAKES &

    GRANULES WITH COLD STORAGE

    Potato is considered to be one of the tr aditional food item s of

    India. Potato is the staple food for 2/3rd of the world

    population. I ndia is presently t he 3rd largest potato growing

    country in the world. Potato is one of the important tuber

    vegetables, which is consumed throughout the year. Its

    Botanical name is Solanum tuberosum. The main edible part is

    its tuber. Potato is one of the most important but perishable

    groups kn own. Unprocessed foods are susceptible t o spoilage

    by biochem ical processes, m icrobial attack and inf estation.

    The right post harv est practices such as good processing

    techniques, and proper packaging, transportation and storage

    (of even processed foods) can play a significant r ole in

    reducing spoilage and extending shelf life. Among various

    methods of preservation, dehydration of vegetables is one of

    the most popular and oldest methods. Dehydration increases

    the storage period of vegetables and make them available

    throughout the year and even in off-season, thus supplying

    the import ant nutr ients in a concentrated form . Dehydrated

    foods are top-qu ality biological products and foods, picked in

    the peak of their ripeness and after cleaning and trimming,

    dehydrated with 98% of their moisture taken out. Dehydrated

    foods are more concentrated source of m inerals than any

    other preserved form of foodstuff. Almost all dehydratedpotato products like flakes, granulates and powder forms are

    not new to households & restaurants. It has good potential in

    food processing industries, defenses, pharm aceutical

    industries, hotels and restaurant s, caterers, etc. Potato

    powder, Granules and flakes are pr ocessed dehydrated pot ato

    products. The processing of pot atoes increases the shelf life of

    potatoes. There are various m achines which are required for

    the processing of potatoes. Most of t he m achines are

    indigenously available & very few of them may be imported.
