How  to  Prepare  

  Prepare  Chicken:    

Break  down  chicken;  cut  breasts  in  half;  you  should  have  10  pieces  of  chicken  total.  4  breast  pieces,  2  thighs,  2  wings,  and  2  drumsticks.    Poke  each  piece  of  chicken  3-­‐4  times  with  a  knife  to  all  the  brine  to  soak  into  the  chicken.

Roughly  chop  the  garlic  cloves;  saving  the  skin.  In  large  bowl  place  1  lemon-­‐juiced  and  then  quartered,  cultured  buttermilk,  salt,  cayenne  pepper,  paprika,  freshly  ground  black  pepper,  thyme,  white  and  brown  sugar.  Stir  well  to  ensure  all  ingredients  are  mixed  together.    Put  chicken  pieces  in  brine  and  full  submerge.  Cover  and  refrigerate  overnight.    

 

Prepare  Breading:    

Mix  all  ingredients  together  in  large  bowl.    

 

Remove  chicken  from  brine;  let  sit  on  wire  rack  for  2-­‐3  minutes  so  that  excess  brine  can  drop  off.    Press  each  piece  of  chicken  into  the  breading  to  ensure  it  gets  in  every  space.    Using  your  hands  really  press  the  breading  into  the  chicken.    

 

Prepare  Batter:    

    Mix  all  ingredients  together  in  large  bowl.    

 

Dip  wet  chicken  pieces  in  batter  and  then  dip  in  breading  for  a  2nd  coating.    Set  aside  on  wire  rack    

 

Heat  in  deep  pan  to  375º  8-­‐9  C.  Peanut  Oil  and  1  ½  C.  Bacon  Fat.    Fry  4-­‐5  pieces  at  a  time.  Fry  first  side  covered  6-­‐7  minutes;  turn  and  fry  uncovered  other  side  for  8-­‐10  minutes.  Remove  from  oil  and  set  on  wire  rack.  Sprinkle  pieces  with  salt  and  a  touch  of  lemon  zest.
