Breadless Cauliflower Stuffing

The name says it all! Stuffing, when made with the traditional loaf of bread, it is a heavy addition to the holiday table that can leave you feeling, well, stuffed! The attributes that make stuffing so popular – a mild, comforting flavor and rich, indulgent texture – can be achieved with all sorts of different ingredients.

Ingredients:3/4 cup butter (or olive oil)1 pound crimini mushrooms, cut in half1 leek2 stalks celery1 head cauliflower, broken into florets1 cup hazelnuts2 lemons1 teaspoon lemon zest2 garlic cloves1 tablespoon fresh thyme1/3 cup roughly chopped parsley1/2 teaspoon salt

Instructions:1) In a sauté pan over medium heat, melt 1/4 cup of butter and sauté mushrooms, leek and celery for about 5 minutes, until the mushrooms soften a bit. Combine with cauliflower florets in a 13×9 inch rimmed baking pan.2) In a food processor, combine hazelnuts, juice of one lemon, lemon zest, garlic, thyme, parsley, salt and 1/4 cup of melted butter.3) Pulse until the mixture is well-blended and the hazelnuts are in tiny pieces, but it’s not nearly as smooth as a paste.4) Spoon the mixture on the top of the cauliflower and mushrooms and mix well.5) Bake for 45 minutes at 350°F, stirring occasionally. Raise the heat to 375°F and bake another 35-45 minutes, stirring several times so the stuffing does not burn or stick to the pan. It is these last 35-45 minutes that are crucial to finishing the dish. The hazelnuts will brown and lose moisture, becoming caramelized and a bit crunchy again.

This stuffing can be baked a day ahead and then covered and re-heated before serving. Right before serving, squeeze the juice of the remaining lemon on top and add more salt if needed.

In an era when 69% of all US citizens describe their work place as a major source of stress1 and greater than 50% of full-time employees in the US work between 40-60 hours per week, it makes sense that fatigue, tension and irritability are common concerns. Food Allergy or Food Intolerance:by Amy Pereira

Are there differences? If so, what are they? This article helps us explore common intolerances and their potential effects upon the digestive system, in addition to the roles that enzymes can play in supporting individuals with these intolerances.

According to the National Institute of Allergy and

Infectious Diseases (NIAID), food allergies affect 4% of adults in the U.S.1 Meanwhile, other authorities state that food intolerances affect up to 20% or more of the population.2 Food allergies, food intolerances, what’s the difference? Let’s take a closer look…Defined by NIAID, food allergies involve “abnormal response to a food, triggered by the body’s immune system.”3 In these cases, our bodies perceive food as a threat (allergen) and respond by creating antibodies that attach to the allergen and enable its removal. Once allergens are bound to antibodies, special cells (on which allergens and antibodies attach)

release histamines and other chemicals that cause various symptoms, like itchy/swollen mouth, vomiting, diarrhea, hives or eczema, or even swollen throat/impaired breathing.

Food intolerances don’t involve an immune response but instead often result in digestive system response. To dispel

confusion

surrounding differences between food allergies and intolerances, NIAID clarifies that intolerances involve the body’s inability to produce the enzyme (or enough enzyme) necessary to digest a particular food. Even if the immune system isn’t engaged, intolerance consequences are nevertheless discomforting, frequently appearing as occasional gas, bloating, abdominal discomfort and diarrhea. Lactose intolerance is one example of an inability to produce the enzyme lactase, required to digest the milk sugar, lactose.However, not all people with dairy difficulties benefit from lactase. In the

American Journal of Clinical Nutrition, researchers noted that 64% of those with dairy intolerance actually
