The 14th of February is a day of romance for lovers around the world. The occasion is believed to have originated in 496AD and

was named after an early Christian martyr, Saint Valentine. Today it is celebrated with red roses, candlelit dining, Valentine’s cards, chocolate and other sweet surprises.

Make this a Valentine’s Day to remember at Riva Mediterranean Steakhouse, courtesy of a five-course menu of sensual delights, paired with fine Champagne and sensual live jazz. Pan-fried French foie gras with grape reduction and truffle is just one of the starry-eyed dishes on the menu. March is the season for the royal vegetable – White Asparagus. Known as ‘white gold’ or ‘edible ivory’, the delicate white

asparagus shoots are considered a gourmet delicacy around the world due to their short season, sweet taste and tenderness and high nutritional content. Both white and green asparagus are low in calories and sodium, and are a good source of dietary fibre, protein, vitamins A, B6, C, E, K, iron, phosphorus, potassium, copper, calcium, magnesium and zinc.

Riva Steakhouse is Suzhou’s premier gourmet destination to sample white asparagus. Fo r e ve n i n g d i n n e r throughout March, Riva’s American Executive Chef Joshua Nudd presents an Asparagus Set Menu featuring a starter, soup, main course and dessert, w i th subt le asparagus flavours highlighted in each course.

Creamy white asparagus soup with truffles and Two-colour asparagus kick off the culinary showcase. These are followed by Roasted Tasmanian lamb loin with young asparagus ragout and cherry tomato. Vegetarians will love the creamy asparagus pasta. The sweet white asparagus even makes a delicious dessert with white chocolate pistachio gateaux.

Thai Master Chef to cook authentic Thai dishes from his homeland.

Between 5:30pm and 10pm nightly, a delicious spread of traditional salads, main courses, desserts and speciality drinks will be freshly prepared to taste. Signature dishes include Crispy Fish Salad (Plaa Duk Fu) with cashew nuts; Golden Money Bag Dumplings (Tung Tong) filled with shrimp, vegetables

and coriander and deep-fried to resemble little coin pouches; and Grilled Beef Salad (Yum Nuea Yang) of juicy tenderloin marinated with fresh herbs, lime juice and oyster sauce. InterContinental Suzhou is delighted to welcome American Executive Chef Joshua Nudd. Chef Nudd comes to Suzhou f rom Mandar in

Oriental Hong Kong’s Michelin-starred Mandarin Grill. During his career in the United States and Asia, Chef Nudd has worked for some of the world’s finest luxury hotels and Michelin starred restaurants, and collaborated with some of the greatest global culinary names, including Jean-Georges Vongerichten and Wolfgang Puck. He brings his dazzling contemporary Asian-influenced international cuisine to InterContinental Suzhou.

What made you want to become a chef? I cooked in a restaurant soon after graduation from high school and began to fall in love with the creative side of cooking. My interests and passion led me to attend the Culinary Institute of America in Hyde Park New York.

Why did you decide to come to Suzhou? Having worked in Hong Kong for two years, I was considering my next move to be in Mainland China. It was fitting when the opportunity to be Executive Chef of the InterContinental Suzhou was presented to me. Being in Suzhou will immerse my family in the local culture and give us the opportunity to explore the neighbouring cities.

What is the best thing about being a chef in Asia? Living and working in Asia has exposed me to sights, sounds, smells and cultures I used to read about as a young chef. Now I’m able to utilise these experiences in my day-to-day work and draw inspiration from them.

How do you unwind after a busy shift? I’m a very big tennis fan so after a busy week in the hotel I look forward to playing a few sets of tennis. I also enjoy relaxing, shopping and exploring with my wife. What is your favourite dish? My favourite dish of all time is my Grandmother’s Apple Slices. Thin layers of homemade pie dough filled with cinnamon-baked apples and topped with icing.

苏州洲际酒店迎来美国行政总厨Joshua Nudd。曾任香港文华东方酒店米其林餐厅----文华扒房厨师的他,这次选择将其二十多年的经验带到苏州。他曾在美国和亚洲的多个世界级酒店和米其林餐厅工作,并且和包括Jean Georges Vongerichten及Wolfgang Puck等在内的厨艺界大师合作过。现在,他将在苏州洲际酒店展现其富有亚洲特色的世界级厨艺。

你是如何成为一名厨师的呢?我高中毕业以后就去了一家餐厅做厨师,很快我就爱上了烹饪过程中那种创意无限的感觉。于是我便选择了去纽约海德公园的美国烹饪学院进修。

你为什么决定来苏州?在香港工作了两年后,我考虑是不是应该来内地发展一下,这时苏州洲际酒店行政总厨的职位恰好出现在我面前,于是我便顺理成章地来了。在苏州,我和我的家人有机会更好地了解本地文化,同时我们也有更多机会去探访一下邻近的城市。

你觉得在亚洲做厨师最棒的是什么?在亚洲工作,让我有机会接触到我年轻时只能在书上才能看到的东西。这里的风景、声音、味道和文化,都成为我日常工作的灵感来源。

你忙里偷闲时都爱干什么?我是一个网球迷,在酒店忙碌了一周后,我总想去打几轮网球。当然,我也喜欢和我太太一起放松,购物和发现新鲜事物。

你最爱哪道菜?一直以来我最爱的都是我祖母做的苹果片。薄薄的一层层自制馅饼皮塞买了肉桂香烤的苹果,并裹上糖衣,真是美味极了!

Tuna 金枪鱼Ground Tuna 金枪鱼Olive oil 橄榄油Thai chili minced 泰国辣椒末Shallot minced 干葱末

Gently season with salt, minced shallot and minced Thai chili and olive oil to taste.将金枪鱼加入盐、干葱末、泰国辣椒末及橄榄油轻轻地搅拌在一起, 然后调味。

Chili Oil 辣油12 ancho chilies seeds 12个烤安蔻辣椒去籽removed & toasted 16 dried chipotle seeds 16个烤墨西哥干辣椒去籽removed & toasted 8 allspice berries toasted 8个烤多香果12 cloves toasted 12个烤丁香2 tbs. fennel seeds toasted 2汤勺烤茴香子11 pieces mace toasted 11片烤肉豆蔻6 star anise toasted 6个烤八角茴香2 cinnamon sticks toasted 2个烤肉桂棒22 G salt 22克盐

Put in blender and puree medium fine.放入搅拌器,打成中度泥状。

Heat, stirring, until 72 degrees (C), then let cool. Strain through chinois and push for total extraction.加热搅拌至72摄氏度,然后冷却。用漏勺过滤并挤压萃取。

Bring lime juice and sugar to 190 degrees (C) and add lime leaves. Stir well and let cool down at room temp.将青柠汁和糖加热至190摄氏度,加入青柠叶。搅拌均匀冷却至室温。

538 G champagne vinegar 538克香槟醋651 G soy 651克酱油

Mix ginger puree with remaining ingredients.将生姜泥与其他配料混合。

Mix avocado with salt and olive oil. Three types of radish sliced ¼' thick and kept in cold water, then drained well, seasoned with salt and tossed with the chili oil. In the bottom of a small bowl arrange a generous spoonful of the avocado. Top with quenelle of tuna, then a generous pile of radish. Spoon the marinade around and drizzle with the chili oil.
