■ Ventilate the sheets at the initial start-up carefully.

There is a risk of an explosion due the use of incorrect cleaning agents. ■ Do not use detergents containing alcohol.

Caution! Risk of electric shock!There is a risk of injury due to improperly executed work on the equipment.

■ The electrical connections and all work on the electrical equipment of the device may only be performed by a WIESHEU service technicians in accor-dance with the electrical regulations.

■ Use a separate fused power supply line for each device.

The device is equipped with a frequency converter. There is risk of electric shock due to improperly connected devices.

■ The electrical protection of the plugs with a “Ground Fault Circuit Interrupter” must be guaranteed.

Important functions such as safety circuits can fail and people and parts of the device can be harmed and damaged.

■ Protect all electrical components against moisture and dust.

Penetrating moisture can cause electric shock. ■ Prior to cleaning, switch off the device. ■ Disconnect the device from the power supply prior to starting work. ■ When cleaning, do not use high pressure cleaners, steam cleaners and wa-ter jets.

A defective device can cause electric shock. ■ Use the device only in perfect technical condition. ■ Check the device for damage prior to starting work. ■ Pull the mains plug, if there is damage!

Warning Fire hazard!An electrical overload of the device can cause a fire.

■ For each device use its own outlet. ■ Secure each wall outlet individually. ■ Do not attach films, papers, adhesive labels etc. to the unit. ■ Prior to initial commissioning remove all protective films from the device. ■ Never store objects or foreign bodies in, on or near the device. ■ Never heat alcohol, flammable or explosive goods!

WARNING

When transporting, tipping and falling parts can crush people and cause seri-ous injury.

■ No persons are allowed to stay or reach below the raised, suspended load!

The device combination can tip over and crush people. ■ Place the device combination on a flat and stable surface. ■ The surface must withstand the weight. ■ During set-up, comply with the manufacturer's recommendations according to the installation plan.

■ Do not place the device on a table. ■ Place the device only on WIESHEU underframes. ■ The combination of all device components may only consist of WIESHEU products. Only these were thoroughly tested.

■ During the transport with a transport pallet, completely move under the pallet with the lifting truck.

■ Secure the pallet with the device combination on the lifting truck before lifting. ■ Use a suitable lashing to secure.

2.4 Risk of tipping

The devices can slip and tilt and injure people. Therefore, secure the devices with bolts to prevent slipping.

■ Place the individual devices correctly on top of each other.

2.5 Risk of scalding

Caution, risk of scalding!Heated liquids can cause scalding. During unloading, hot liquids can leak over the edge of the baking trays.

■ Prior to opening the door, always check that there is no water in the baking chamber.

■ If, in case of errors, there is water in the baking chamber, do not take the oven into operation.

■ Disconnect the device from the power supply. ■ To fix and remedy the damage contact a WIESHEU service technician. ■ Do not insert containers with liquids or with cooking material which liquefies when heated, into the device.

■ Do not prepare any products from which a liquid outlet of >100 ml per loading operation can be expected.

■ Do not open the door during the program process.

Hot steam can cause scalding. Hot steam can escape at the rear of the device, through the exhaust air vent.

■ Set up the device in a manner that no personal injury is caused by the es-caping steam.

Despite safety technology hot steam and heat escape when the device door is open.

■ Step aside when you open the door. ■ Ensure that no other people are in front of the door opening. ■ Open the door carefully.

Hot water can cause scalding. If the solenoid valve is defective or the steaming valve permanently switched on, hot water can collect in the baking chamber.

■ In this case, immediately shut off the on-site water supply. ■ Further operation is prohibited.

Caution, risk of burns! Risk of burning on hot surfaces. The frame, the glass of the machine, and the surfaces of the baking chamber heat up and become hot.

■ Wear heat resistant gloves. ■ Open the door carefully. ■ Prior to cleaning, let the device cool down.

Caution, risk of cutting! The door of the device is made of glass. There is a risk of cuts from broken glass.

■ When unpacking watch out for any glass damage. ■ To avoid cuts, wear suitable gloves.

CAUTION

Caution, respiratory irritation!During baking in the oven substances can escape, which arise from the manu-facturing process.These substances can irritate the respiratory system.

■ Ventilate the premises at the initial start-up carefully.

There is a risk of aerosol formation. Do not spray the cleaning agents on hot surfaces! These aerosols can be inhaled, which can lead to respiratory tract irritation.

■ Wear suitable protective equipment. ■ Allow the device to cool down. ■ Spray the cleaner onto a suitable cleaning cloth.

CAUTION Caution, risk of crushing!There is risk of crushing the fingers or hands.

■ Close the door carefully. ■ When closing the door, ensure that no fingers or hands are between the door and the door seal.

3 Technical damage and safety information

3.1 Prevent water damage

Technical damage!The device is equipped with a drip pan. This can be clogged by debris.

■ Do not use the drip tray as a spout. ■ Do not dispose of liquid via the drip tray of the device.

The tap or the water supply line can have leaks. Leaking water can damage furnishings.

■ Open the faucet near the device only when the device is in operation. ■ Do not use old hose sets to connect the devices. These might be porous or defective.

■ For the water connection use only the supplied new water supply hose.

Escaping steam can cause a short circuit. Rising steam may adversely affect existing store safety devices or even trigger them.

■ Collect the steam in suitable lines or in a extraction hood. ■ Direct the steam upwards. ■ Route the exhaust pipe in a manner that steam egress through the air vents is not possible.

■ Keep the necessary distance to safety devices.

■ Attach the water supply lower than the power supply. ■ Route the exhaust pipe in a manner that steam egress through the vents is not possible.

■ Collect emerging condensate. ■ Drain the compensate away via a suitable medium.

Cold, heat and humidity may damage parts of the device. ■ Place the device in a dry, frost-free room. ■ Pay attention to the ambient temperatures. ■ Ideal temperature range for operation: 50 - 105 °F [10 - 40 °C]

Technical damage! There is a risk of heat accumulation. Components can fail and put the device out of operation.

■ Keep the indicated minimum distance. ■ Note the installation plan for the device.

Damage to the device can be caused when the device is placed horizontally. ■ Transport the device or device combination always in a vertical position. ■ Always move the device combination in conjunction with the transport pallet and a suitable truck.

■ The device combination can be moved, on its own rollers, a maximum distance of 118 inches [3 meters] for service, maintenance and cleaning purposes.

NOTICE

Salt residues and aggressive acid residues may damage the surfaces of the baking chamber.

■ Remove salt residues and aggressive acid residues in the baking chamber daily.

The shop oven is equipped with an LED light strip. This is located between the two glass panels of the oven door. The LED light strip is fragile and can be damaged by detergents or mechanical cleaning.

■ Do not bring the light strip in contact with detergents. ■ Do not bring the light strip in contact with cleaning objects. ■ Do not wipe with cleaning cloths over the light strip.

The Dibas 64 blue with optional automatic door is equipped with an automatic sliding door. When manually pushing there is the risk that components may be damaged and the automatic door is permanently disabled.

■ Always open the automatic door using the “Door” button.

The use of unsuitable cleaning agents leads to damage to the equipment. The WIESHEU GmbH put a major effort to recommend detergents that on one hand provide excellent cleaning performance and on the other hand do not attack and damage the shop oven.

■ Use only the cleaning agents indicated. ■ Never use abrasive or scouring objects.

Do not lift the Dibas above the baking chamber. These can deform or damage. ■ Move the lifting unit in the specified slots on the rear panel of the device.

The device is equipped with a frequency converter, which can be damaged by voltage spikes.

■ After disconnecting the power plug from the mains wait 1 minute until all components have completely discharged.

■ Then reconnect the mains plug to the mains supply.

Each device is identified by an article number. This can be found on the type plate of the device. The arti-cle number is composed of a fixed number combination (A) and a variable character string (B).The device type and size of the device can be derived from the number combination.

The exact composition of all possible options is defined via the 9-digit combination of letters. Using the table, the article number on the type plate can be decrypted. The special character * Star can be at differ-ent places. In these cases, the special character is a placeholder for an option that does not have to be explicitly stated.Example:

5 Explanation for the operating instructions

These operating instructions introduces you to the intended and safe operation and contains important information in order to operate the device safely, properly and economically. Prior to use of the device, read the operating instructions.Depending on the model, the pictures may differ from the product. These operating instructions are sup-plemented by the control unit instruction manual. Depending on the model of the device it is additionally supplemented by the operating manuals for automatic cleaning and loading.

Compliance with the operating instructions is necessary to prevent injury or death, to optimize and accelerate workflows, reduce repair costs and downtime and increase the reliability and service life of the device.

The Dibas 64 blue is a hot air circulating device. With this shop oven commercial bakery products can be heated and baked.

The device is not intended for placement in refrigerated rooms. The full functionality can only be ensured properly at temperatures of at least 50 °F [10 °C] and a maximum of 104 °F [40 °C].The device is not intended for installation in kitchens or sausage kitchens.The device is not intended for installation or for use in vehicles or transport means.The device is not intended for drying or curing of objects that are not considered food. In the specifications, the amount of the layers provide the maximum layers. The device can, regardless of the specified number, also be operated with fewer layers. 9 Transport and set-up

9.1 Safety information for the transport and set-up

The device or device combination is packaged on a transport pallet. ■ With a pallet truck drive under the transport pallet.

When transporting, tipping and falling parts can crush people and cause seri-ous injury.

■ No persons are allowed to stay or reach below the raised, suspended load!

The device combination can tip over and crush people. ■ Place the device combination on a flat and stable surface. ■ The surface must withstand the weight. ■ During set-up, comply with the manufacturer's recommendations according to the installation plan.

■ Do not place the device on a table. ■ Place the device only on WIESHEU underframes. ■ The combination of all device components may only consist of WIESHEU products. Only these were thoroughly tested.

WARNING Warning, risk of tipping! The raised load can tip and cause serious injury.

■ During the transport with a transport pallet, completely move under the pallet with the lifting truck.

■ Secure the pallet with the device combination on the lifting truck before lifting. ■ Use a suitable lashing to secure.

Do not lift the Dibas above the baking chamber. These can deform or get dam-aged.

■ Move the lifting unit in the specified slots on the rear panel of the device.

Technical damage!Damage to the device can be caused when the device is placed horizontally.

■ Transport the device or device combination always in a vertical position. ■ Always move the device combination in conjunction with the transport pallet and a suitable truck.

■ The device combination can be moved, on its own rollers, a maximum distance of 118 inches [3 meters] for service, maintenance and cleaning purposes.

Drive the complete device combination to the place and location of the set-up.The individual elements of the combination have to be loosened, if the device combination can not be transported in whole to the site and location. Using a suitable lifting device with appropriate forklift tines.The two transport openings (A) are closed with covers.

■ Remove the screws on the covers. ■ Remove the covers. ■ Drive into the intended transport openings (A) on the rear of the oven. ■ Only use a lifting device with narrow forks. ■ If the lifting device is to be driven into the transport openings on the front of the appliance, it is necessary to dismantle the drip bowl.

■ Position the oven on its location (e.g. a WIESHEU base frame, a WIESHEU proofer).

■ Observe the minimum distances according to the installation plan. ■ Use the appropriate connecting pieces for assembly to position the oven.

In this manual, examples are provided for safe and quick disassembly.However, not every case or eventuality can be shown in detail.

If the combined installation cannot be transported to the premises in its entirety, it is necessary to dismantle the individual units from the combination.

■ Disassemble the waste water pipe / exhaust air pipe. ■ Lift the individual components and remove them from the combined installation. ■ When lifting and carrying the individual units, use suitable support materials.

15.1 Safety instructions for the electrical connection

■ The electrical connections and all work on the electrical equipment of the device may only be performed by a WIESHEU service technicians in accordance with the electrical regulations.

■ Attach the water connections within the specified installa-tion window (B), but not higher than the power connection.

■ Ensure that the water supply has drinking water quality (according to drinking water regulations).

■ Ensure that the water temperature is max. 122 °F [50 °C].

■ Ensure that each water connection is easily accessible, even after installation. → Otherwise, provide a shut-off cock on-site.

■ Make sure that the flow pressure of the water does not exceed 87 psi [600 kPa]. → Otherwise, provide a pressure-reducing device on-site.

■ Ensure that the water pressure required for the automatic self-cleaning system has a minimum pressure of 22 psi [150 kPa].

■ For the water connection use only the supplied new water supply hose. This is a food grade pressure hose ½" with threading ¾", tested according to IEC 61770 (WIESHEU GmbH article no. 104476).

17 Waste water connection

■ Route the outlet pipe in a manner that steam egress through the air vents is not possible.

■ For the connection, use a vapor and temperature resistant pipe up to 212 °F [100 °C], minimum cross-section Ø 1.9 inch [50 mm] HT pipe DN 50, length max. 59 inches [1.5 m].

■ Provide a constant slope and a free outlet with min. 5% or 3°. ■ Do not make any reduction of the pipe diameter.

Provide the wastewater connection in accordance with ANSI/ASB/Z50.2.Ensure that a free outlet with an air gap is provided.

There is a red hose located on the rear panel of the device. This serves as an overflow for the event that water has accumulated in the baking chamber. If an error occurs, the water should be able to drain freely. The hose is not connected to the sewage system.

16.3 Connection of a water filtration system

The steaming unit should be supplied exclusively with drinking water, which passes through a corresponding water filter.

A so-called “demineralization” of the water is important for the device and its steaming system.

■ Set the filter head to level “0”. → All of the water passes through the water filter. → No unfiltered water is mixed in through the bypass.

The device is equipped with a safety thermostat. This switches the device off at a temperature below 17.6 °F [-8 °C] or above 624 °F [+ 329 °C] inside the oven. At an ambient temperature below 17.6 °F [-8 °C], the device can not be switched on.

23 CleaningMaintain and clean the shop oven with great care. Only with clean equipment can hygienic products be prepared. With prolonged use in the temperature range below 212 °F [100 °C] the possibility of nucleation is present. This chap-ter provides basic information on how to clean the device.

Technical damage!Salt residues and aggressive acid residues may damage the surfaces of the baking chamber.

■ Remove salt residues and aggressive acid residues in the baking chamber daily.

The shop oven is equipped with an LED light strip. This is located between the two glass panels of the oven door. The LED light strip is fragile and can be damaged by detergents or mechanical cleaning.

■ Do not bring the light strip in contact with detergents ■ Do not bring the light strip in contact with cleaning objects. ■ Do not wipe with cleaning cloths over the light strip.

The use of unsuitable cleaning agents leads to damage to the equipment. The WIESHEU GmbH put a major effort to recommend detergents that on one hand provide excellent cleaning performance and on the other hand do not attack and damage the shop oven.

■ Use only the cleaning agents indicated. ■ Never use abrasive or scouring objects.

For damage caused by unsuitable cleaning agents, WIESHEU GmbH assumes no responsibility or liability. Claims against the WIESHEU GmbH can not be justified, even within the scope of guarantee or warranty.
