I love the managerial rivalries in the English Premier League because it’s like the father of the family picking a fight with his opposition and, let’s face it, we’ve had some pretty entertaining rivalries over the years.

However, we’re looking at a very different managerial battle. In the past, the headlines used to be hogged by Sir Alex Ferguson vs. Arsene Wenger.

Then, Jose Mourinho arrived on the English stage and he provided loads of entertainment. While his rivalry with Ferguson was intense, there was always a slight respect for him. By this time, Arsenal had begun to fade.

Of course, there was a fierce rivalry between Rafael Benitez and Fergie, which many Liverpool and Manchester United fans will remember. That provided lots to talk about each time the press built up to matches between the two. That is gone as Benitez has left the Kop.

Roberto Mancini arrived three seasons ago, made an impact, had a few clashes with Fergie, but was asked to leave so unfairly. Which brings us to the new season of the Premier League that’s on the horizon, in just over two weeks.

Now, there’s no Alex Ferguson. He’s retired. Arsene Wenger has lost steam and is slowly fading. Mancini and his ridiculous comments are gone but we have Mourinho back.

The Portuguese manager is definitely going to entertain with his unique quotes and arrogance, but who will he pick on? David Moyes is now in charge at United but he’s not the type to tell reporters off or to poke managers in the eye.

Manuel Pellegrini is in at Manchester City and looking to make an impact, yet the English league and culture are new to him. I foresee him taking a cautious approach.

In a season of unfamiliarity, many predict a power shift in the top teams. You can expect loads of entertainment and I’m sure that Mourinho will find someone new to pick on.

They love hunting for vintage frames, and over time, started to appreciate vintage frames for their manufacturing quality and experimental designs.

Since then, Mystic Vintage has launched their own designs that are influenced by vintage frames, each with a different theme such as Lullaby, Control, Thunderdodge, Alchemy and Sorcery – the latter two being part of the Magic series.

inspired by 1980s fanTasyTheir latest collections include Alchemy, which features brow line glasses (a style of eyewear invented in 1947) with acetate nose bridges, angular temples and alchemic colours, and Sorcery, sporting gentle curves and diamond studs.

Both have their own quotes such as “Power of rot, obscuring

truth, what once was old restore to youth!” and “You have no power over me” engraved in the temples of the eyewear.

“Alchemy and Sorcery were inspired by the movie Labyrinth and ‘80s animation series Visionaries. Both are magical films which had characters singing melodic spells and using ethereal powers of sorts. Our favourite quote, ‘Dance Magic Dance [from Labyrinth]’, is engraved on one of the frames,” say Alvin and Jason.

LocaL pride They currently have stockists in Singapore, Japan and Hong Kong. Mystic Vintage is in the midst of designing five new models and launching a frame called ‘Flinders’ for a fashion trade show.

And, just like in any long relationship, there comes a point where you ask yourself if it’s still working.

posT-break upFor founding members and brothers Zac and Josh Farro the answer, six years in, was, sadly, “No.” They left the band and many fans as well as industry insiders thought that that had spelt the end of Paramore.

Fans of the band will welcome their return after a four year hiatus. And they will not be disappointed. With seventeen tracks, the album clocks in at sixty minutes exactly, and many songs luxuriate at a generous four or five minutes.

“There’s something about these characters that have appealed to every generation since they were invented,” notes producer Jerry Bruckheimer.

Apart from hearty stews, street food, and soju that Korea is known for, Koreans

also have Gogigui. It’s basically Korean barbecue, and is often prepared at the diners’ tables with inbuilt grills.

At Bornga, the meats are grilled right in front of you, which adds to the sense of anticipation as you watch them slowly turning invitingly brown.

tHE NIBBLEsThe appetiser was water kimchi, which was cold and spicy, with crunchy radish bits. I liked the vegetable salad as the sesame oil made the sweet, tangy sauce fragrant.

There is a wide assortment of banchan, or side dishes for diners to choose from. They also provide ten varieties of fresh vegetables for you to wrap the meat and kimchi.

WINsoME GRILLED PoRKWe started off with Mansinjang Samgyupsal ($24 per 200g), which was tenderised pork belly with parsley flakes, salt and pepper. To be honest, this dish was a little plain and forgettable.

Sandwiches

Fortunately, the Yangnyum DwaejiGalbi($33per250g)wasmore promising. They changed the grill to a copper one to ensure more even cooking, and the pork ribs marinated with a special house sauce were soft, tender and succulent.

The highlight of the night had to be their signature dish, Woosamgyup ($28 per 200g), featuring Chef Paik’s patented recipe of thinly-sliced US beef short plate seasoned in Bornga secret marinade. Chef Paik is a renowned celebrity chef in Korea.

This beef brisket was doused in sauce just before it was grilled, which apparently enhances the traditional bulgogi taste. It was bursting with flavour, and amazingly delicious.

MoRE YuMMY DIsHEsThey then served the Dwaeji GohchujangBarbecue($36),where spicy pork slices are grilled, and then stir-fried with spring onions and served with leek on a hot plate. This is a dish I felt had personality - it had a distinctive taste, and the caramelised onions had me going for seconds.

Next up was the Bornga Bulgogi ($45),ayummybubblinghotpotwith beef fillet, vegetables and glass noodles which made for a

break from the last two intensely-flavoured dishes. The beef stock was naturally sweetened with pear broth, and it was warm, mild and comforting. This dish serves about two to three people.

The more spicy dishes were served at the end, with the sixth dishbeingSundubuJjigae($18),a tofu stew. It is put together and cooked in the serving vessel, with a raw egg added before serving.

The seafood soup was full of ingredients such as tofu, egg, scallops, and clams. Its fiery red

exterior belied a mildly spicy and sweet taste, which was a pleasant surprise for me.

The last dish, Yukgaejang ($20) was a fiery beef soup with shredded beef, scallions, bean sprouts and glass noodles. It was too hot for my liking, but may just be what another chilli-loving Singaporean is looking for. W

otHER sANDWICH tIPsHe also tells us his must-have item in his refrigerator – Dijon mustard or dijonaise.

“Dijonaise is an emulsifier for oil and vinegar. It is great when

making salad dressings on your own. It’s the wedding ring that binds oil and vinegar together,” he explains.

He also spreads the dressing last on the sandwich.

“You know how you take a bite out of a sandwich and everything shoots out the sides? That’s what happens when you put the sauce on first. Everything just slips out,” he says.

In the new season of the Sandwich King, Jeff will reinvent classics like the Italian sub and concoct dessert sandwiches to satisfy your sweet tooth.

The porchetta was smoky and fatty in the right places with crispy crackling on the top of the roast. Our only gripe was that the crackling was uneven, probably because the bottom of the roast was sitting in its juices. The Roasted Free Range Hen was incredibly tender as well.

FoR sHARINGOne of their sharing platters is a Broiled 200 Days Australian Angus bone-in rib-eye with grilled corn salsa, grilled lemon, braised root vegetables, bourbon mustard and béarnaise sauce. To feed three to four people, the medium-broiled steak is tender and well seasoned.

Only two and a half hours

away, I had a short yet enjoyable vacation in Kota Kinabalu. Here are some of the highlights.

FantaSy iSlandI spent four glorious days in my own ‘Fantasy Island’ resorts on Gaya Island off Kota Kinabalu, the capital of the state of Sabah in East Malaysia. Fans of the long-running TV series, Fantasy Island, will remember the charming island host, Mr Roarke, played by Ricardo Montalban, and his sidekick, Tatoo, played by Herve Villechaize.

Raya Island Resort Spa are worth splurging on. A 15-minute ride from Kota Kinabalu International Airport brings you to Jesselton Point Ferry Terminal for another ten to 15-minute boat ride to either of the resorts.

You can choose to stay in any of Gayana’s 52 villas over water or in one of 48 villas at its sister property, Bunga Raya Island Resort & Spa, tucked away in the Borneo rainforest. They are ten minutes apart by speedboat. The crystal clear waters around the resorts teem with marine life.

We were drawn to the magic of the corals, clams and various

fish species swimming in the turquoise blue sea beneath. The villas at Gayana sit on stilts above the water.

nature and adventureThe rainforest on Gaya Island is rich in biodiversity. In our 45-minute trek, we saw tropical hardwood trees and the infamous tongkat Ali tree, which our guide referred to as the “Viagra tree”.

We spotted the Russell Pit Viper. Thankfully, the villas are built on stilts to deter the snakes from entering. The jungle is also home to hornbills, monkeys and lizards.

While there, we caught a

glimpse of a hornbill and came up close to a giant lizard. A flying squirrel ‘joined’ us when we were having dinner at one of the resorts’ outdoor restaurants. To our amusement, a family of ‘tame’ wild boars also passed by but snubbed us.

If jungle trekking is not your cup of tea, try scuba diving, snorkelling, zip-lining, kayaking, canoeing or jet skiing. Book a nature or adventure tour package from any of the hotels, resorts or local travel agents in Kota Kinabalu.

Food, GloriouS FoodJesselton Ferry Terminal Point has a row of cafes and restaurants. I love the fresh fish at Alu Alu Café. We chatted with Chef Khiong who runs the kitchen there.

A casual Chinese café-style restaurant and one of many makan places in the jetty area, Alu Alu Café stands out for serving mostly fish dishes – about 30 different varieties. The fish

fillet (from a hybrid grouper) served in wasabi and buttermilk sauce with crispy potato shreds was awesomely delicious!

“He [Chef Khiong] is very hands-on. I’ve seen him say ‘no’ if he’s not satisfied with a dish, and it goes back in to the kitchen,” said 29-year-old Gillian Tan, the café owner.

Alu Alu’s fish and vegetables are organically farmed and Tan’s family, who also own a fish and vegetable farm, supply them to many of the local restaurants and hotels.

triumpH over adverSityChef Khiong’s story is an inspiring one of triumph over adversity. In 2010, he had an accident that left him wheelchair bound.

“We continued to involve him in all aspects of the kitchen and the rest of the staff was very helpful in accommodating his needs. He has done amazingly well and is such an inspiration. He handles everything from purchasing, hiring, quality control, new menus... You name it, he does it,” said Tan.

After the accident, Tan and her family, who also own the Gayana and Bunga Raya resorts, had ramps installed so that Chef Khiong could come to work.

mari mari cultural villaGeFirst-time visitors to Kota Kinabalu should visit Mari Mari Cultural Village, featuring the ethnic homes of Sabah’s different tribes as well as demonstrations of life in the days of headhunting.

From blowpipe demonstrations to the art of making honey and starting a fire, there are ample opportunities for you to click away. You can also watch or join in a cultural dance performance.

Sabah is truly a gem on the Borneo coastline. It is impossible to cover all of this “Land Below The Wind” in one visit, so Kota Kinabalu is a good start.

“Service is a deep-seated topic in Singapore and is often at the core of many conversations and experiences,” says John Conceicao, Executive Director, Singapore Tourism Board and GEMS Up representative.

“Businesses today are changing and owners are faced with multiple challenges such as manpower and evolving customer needs. The survey allows us to analyse the different perspectives and identify the missing link when it comes to elevating service standards in Singapore,” he says.

“It also presents a stark picture to the industry, and highlights a need for businesses to urgently improve their customer experience journeys so as to remain competitive,” he emphasises.

service staff attribute the service disparity to demanding customers, with 73 per cent and 64 per cent of managers and service staff saying that increasingly demanding clientele is the main barrier to delivering good service, although most of the local clientele did not view themselves as part of the issue.

More than half of the managers surveyed also highlighted that finding the right staff proved an obstacle to providing good service. The survey also showed that service staff felt that positive appreciation and compliments also added to the service experience.

The survey was carried out by market research group Taylor Nelson Sofres (TNS) to get better insight on the service debate in Singapore. With a representative sample size of over 460 participants, the survey was conducted earlier this year over a period of one month.

The survey is supported by the Go the Extra Mile for Service (GEMS) Up project, a joint movement involving SPRING Singapore, the Singapore Tourism Board, the Singapore Workforce Development Agency, the Institute of Service Excellence at the Singapore Management University (SMU), and the National Trades Union Congress (NTUC).

In a country where being perfect and efficient is almost a religion, the aspect of customer service seems to be lacking in Singapore, a new survey with local customers, tourist and service staff reveals.

However, tourists visiting our city ranked Singapore’s customer service as above average.

Do we as Singaporeans have high expectations of our own country? It certainly seems so with 56 per cent of local customers indicating that service staff could “go beyond the call of duty” to make their service experience more memorable. About 60 per cent of those surveyed considered service in Singapore acceptable.

Whereas, a much higher 74 per cent of tourists thought that Singaporean service was “above average” with almost half of that saying that service in Singapore was better than in their home country – in Asia, the United Kingdom or the USA.

Replace the mask with a new one when it becomes dirty, or distorted. This ensures the mask you are using is effective.

As N95 masks are designed to seal one’s face such that the air one breathes in has to go through the filter and not through the gaps between the mask and the face, it is important to wear the mask correctly to be well-protected.

Do note that N95 masks have not been certified for children’s usage, so it is advisable for them to stay indoors when the PSI levels are high. Women in the second or third trimesters of pregnancy should not wear the masks for extended periods.

messaging to our fans. We are planning to go ‘On-air’ sometime soon, and looking forward to have more interactive conversation with singaporean fans.

whAt is in the pipeline? super show 5 is happening in singapore in July! all the members are putting every ounce of their energy to prepare for the super show. i hope many singapore fans are looking forward to it!

you're A sinGer, Actor And model. which do you prefer?From the very beginning, i had this ambition to become both a singer and an actor. While chasing these two paths, my modelling career just followed. Picking just one of them will be difficult.
