The following excerpt from the land-mark Policy Guideline published by

the conservative Journal of the American Medical Association (JAMA) says it all. Although this policy guideline was pub-lished in 2002 it has not been updated since.

“Insufficient vitamin intake is apparently a cause of chronic diseases. Recent evidence has shown that suboptimal levels of vitamins (below standard), even well above those causing deficiency syndromes, are risk factors for chronic diseases such as cardiovascu-lar disease, cancer, and osteoporosis. A large portion of the general population is apparently at increased risk for this reason.” -Dr Robert Fletcher and Dr. Kathleen Fairfield

What vitamins should you take?

Although the experts have slight differences in the optimal daily regimen used to attain optimal health and longevity, they all include three basic elements. The following is a basic supplement regimen that EVERYONE can use as a foundation upon which they can build and add condition-specific nutrients based on individual circumstance.

1- Multiple Vitamin

A high potency multiple vitamin mineral formula is absolutely essential for optimal health. A deficiency of any nutrient can mean the difference between health and disease. In addition to the enormous number of studies showing benefits from the individual nutrients in a high potency multiple, studies have shown that people taking a multiple vitamin and mineral formula may experience higher energy levels, improved brain function, fewer colds or infections, improved ability to deal with stress, greater sense of wellbeing, and reduced risk for cancer, heart disease and diabetes.

2- “Greens drink”

Most of the greens drinks available in Pilgrims provide a concentrated mix of powerful phyto-chemicals from herbal ex-tracts, barley grass, wheat grass and nutrient dense algaes like spirulina and chlorella. The compounds in these drinks address many of the deficiencies created by your diet and lifestyle and go a very long way in boosting energy levels, reducing inflammation and alkalinizing your body..

3- Omega-3

The health benefits of the long-chain omega-3 oils found in fish are now well known. Inflammation has emerged through mainstream clinical research as the main driving force in most diseases, and omega-3s are the most effective and safest means to combat inflammation. Most experts agree now that a vitamin D supplement is a critical component of a foundation-al program as well.

I have personally supplemented with these three items for nearly 20 years and I am convinced of their importance. A very wise nutritionist named Betty who worked at Pilgrims years ago liked to tell me that these foundational supplements were like a tylenol. When taking a tylenol for pain you might not notice when it starts working but you certainly notice when you forget to take it and find yourself in pain again. She is totally right. When I am taking these supplements I feel great and rarely get sick but I am not perfect so I definitely forget to replace my bottles from time to time and always find my lack of energy as the reminder to get back on my program. Give it a try for three months and I am sure you will agree. May you enjoy a very happy and healthy New Year!

With each circular we send to you, we choose a local vendor to spot-light. Shopping local, farm to table and eating local are all contemporary mindsets. Thankfully our culture finally caught up with what is so very important and a big part of Pilgrims Market core.

Winter is the most challenging time to reach a local farmer due to the weather. After brainstorming it dawned on us. Hey! We are a local vendor and probably one of the biggest in the Coeur d’Alene area. Between our deli, bakery, produce, meat and supplement department, we make over 400 items from scratch right here in house!

If you’ve ever shopped with us before the 10 am, you know that walking into Pilgrims is like floating into a carb lovers heaven. We smell like a bakery because we are! In fact, we use a very rare European steam-in-jected deck oven to prepare our artisan breads. Fancy, huh? Our team of eight bakers arrive around 4 am, pour their large cup of coffee as they measure, pour and mix all the ingredients to have everything out of the oven and in the bakery case by 10 am. In total, we make over 70 baked goods, including a minimum of 12 different artisan breads each day with rotating variety. We also have a case entirely designated to gluten free baked goods that don’t taste like cardboard. Last but not least, our bakery creates the best tasting ice cream you’ll ever have which makes this department arguably the greatest in the store.

Then 10:01 hits and our deli is a foodies paradise. Best part about the deli isn’t the convenience of quick and healthy food, but the fact that it’s all made from scratch. From soups to the salad bar, even the toppings and sauces we put on the grill items, we make it all here in house. Right behind supplements, we have a commercial sized kitchen (more like a football field sized kitchen if you ask me) where all the food magic happens. This is where Chef Joe leads his team in creating authentic and fresh foods that are rich in flavor and robust in nutrition. Our salad bar is a salad-lovers delight with in-house candied nuts, dried fruit, pickled and fermented veggies, grilled meats, bacon, fruit, cheeses, legumes dress-ings, croutons and did I mention bacon?

We have eight hot bar items daily that are priced the same as the salad bar so you can mix, match and combine into your personal slice of heav-

en. The display case is full of home-made salads and great entrée items like salmon patties, flank steak and greek chicken breasts. Customers get into a down-right frenzy waiting for the meat department’s smoked chicken, turkey and salmon and is also known for amazing house-made sausages.

Produce of course stocks its shelves with nearly 90% NW locally farmed organic produce in the summer months which is awesome but they are also known for their in-house specialities. That guacamole you make a special trip to come see us for? Produce makes that from scratch! They chop the cilantro and onions, peel the garlic and only they know how many avocados they have to peel to produce that much guac. YUM! But that’s not all they do. They prepare so many fruits and vegetables to make eating healthy and cooking fresh easy for us. Thank you, Pilgrims Produce!

Supplements gets in on the local vendor spotlight even. They’re starting to package and label a handful of high quality essential oils to bring the cost down for our customers.

And of course we are perhaps most famous for our Cultured Mama line of fermented foods. Sauerkrauts, dips, jalapenos, carrot coins and now kaut brine for a shot of probiotic goodness or as a secret ingredient in home-made dressings and sauces.

The Market Garden:Yes it’s been a ridiculously slow process but I guess it’s not too hard to believe when a grocer decides to become a urban farm-er. Delays and setbacks are to be

expected… or at least that’s what I keep telling myself. The upside however is that my vision has continued to expand. Now that I have pur-chased all three residen-tial lots behind the store the next goal is to get them converted to com-mercial so we can not only grow food but also dine and enjoy the garden in others ways too! The plan now is to build a second greenhouse that can be used for dining year round and to also build walking and small gath-ering areas for outdoor dining. I will be going be-fore the city council soon requesting the zoning change so if you support the cause please show up and voice your support. The other update is that we have nearly completed construction on our first green house and are on schedule to begin growing our starts in February. Be on the lookout for fresh greens from our own garden come may or june. Yipee!

The Bakery: We have some great talent in the bakery right now and we are looking for great ways to expand what we produce in house. We tried a bagel program but it just didn’t take off. We are producing some awesome paleo cookies and maca-roons that are doing very well so if you haven’t tried them yet then get on it. We have been debating lots of other ideas like an in-house dehydrated food program, explanded paleo

items or even a bean to bar chocolate program. What would you like to see our bakery produce fresh daily? Please fill out a customer comment form and let us know

The Deli: Like in the bakery, we have our best staff yet in the deli. We have made tremendous strides in our hot bar, salad bar, grab and go compound salads and even the grill program. We are look-ing for more innovative items to produce in this department as well . We have considered any variety of smoked prod-

ucts, potato chips and rotisserie chicken. We believe we have the talent so please let us know what you would like to see.

Gluten Free Chocolate, Coconut Granola

Carrot and Lentil Soup

1 ½ cups Gluten Free Oats1 ½ cups unsweetened Coconut Flakes½ cups ground flaxseed½ cup pumpkin seeds½ teaspoon salt2 tablespoons almond butter¼ cup melted coconut oil

¼ cup cocoa powder¼ cup pure maple syrup2 teaspoon pure vanilla extractToppings¾ Chocolate Chips1 teaspoon coconut oil spray¾ cup unsweetened coconut flakes, toasted

3 large carrots1 onion1.5 cup red lentils2 tbsp lemon juice2 clove garlic

5 cup chicken/vegetable broth2 tbsp olive oil1 cup greek yogurt1 tps salt & peppertop with pomegranate seeds

Directions: Preheat the oven to 300°F. Line two medium baking sheets with parchment paper or greased foil. Set aside.

Make the granola: In a large bowl, use a rubber spatula or wooden spoon to stir together the dry ingredients: rolled oats, coconut, ground flax and salt.In a medium bowl, whisk together the almond butter, coconut oil, cocoa powder and maple syrup. Add vanilla and stir until very well incorporated and smooth.Pour the wet mixture over the dry mixture. Stir until the granola is evenly coated in the wet mixture. Pour the granola onto the prepared baking sheets and spread into an even layer. Create pockets of space between clusters of granola so it can really crisp up. Set your large mixing bowl aside for later. You’ll need it after the granola is done baking. Bake for 10-15 minutes on one side, then flip the granola over with a spatula. Bake for another 10-15 minutes. Monitor the granola closely so it doesn’t burn. Don’t worry if the granola is slightly soft. It will harden up as it cools. Clear some space in your freezer for a large baking sheet. You’ll need this space later. Remove granola from the oven and pour into the large mixing bowl.

Melt the chocolate: In a small saucepan over medium-low heat, melt chocolate chips and coconut oil (or coat with nonstick spray). Stir until chocolate is just slightly soft and melted. Quickly remove from heat, placing on a insulated surface. Continue stirring until smooth.

Alternate chocolate melting method (microwave): Place chocolate chips and ½ teaspoon coconut oil in a bowl. Heat in the microwave for 10-20 seconds, until chocolate is softened. Stir until smooth. Pour melted chocolate over granola and fold until granola is well coated. Fold in ¾ cup toasted coconut. Line a large baking sheet with wax paper. Pour the granola onto this sheet, in an even layer. Place the baking sheet, with an insulating cloth underneath, in the freezer for 15 minutes. Remove from freezer. Break granola into clusters by hand. Enjoy!

Chocolate Hazelnut Milk1 cup hazelnuts4 pitted dates, coarsely chopped2 tablespoons¼ teaspoon cinnamon¼ teaspoon turmericPinch of sea salt

Directions: Place nuts in a jar, cover in water and set in refrigerator overnight. Drain and rinse nuts; place in blender pitcher along with 3 cups of filtered water. Blend on high speed for 2 to 3 minutes or until smooth. Strain through a nut milk bag or fine-mesh sieve lined with cheesecloth, squeezing out as much liquid as possible. Dump pulp back into blender along with 1 cup filtered water. Blend on high for about a minute and then strain again through nut milk bag. If you want a thinner nut milk, add more water as desired.If you prefer a smoother, less gritty nut milk, you can strain it again if you like (let the liquid drain through slowly, without squeezing, to prevent as much grit from getting through). Pour into jars and refrigerate for up to 1 week.

What do you do outside of work for fun?

We have a family cabin on Priest Lake that I have enjoyed going to for many years. Jet skiing, ATV riding and hanging out with my family and friends are probably that best ways I could spend my free time in the summer. During the fall and winter months I am an avid Seahawk and Gonzaga fan along with my wife, Sharon.

What sparked your interest to work at Pilgrim’s Market?

When I researched Pilgrim’s Market I was attracted to the autonomy of the store. I like how it uses local organic resources and is not driven by a large corporation. I also appreciated the high standards Pilgrims has and its devotion for their community.

Where were you born and raised?

I was born in Spokane and grew up in Omak, Washington. I currently live on the NW side of Spokane and commute to work in CDA.

Where have you worked in the past?

One of my more interesting jobs in my youth was delivering Ansel Williams Art to various art dealers up and down the coast of California. Other than that, I followed in my father and Grandfather’s footsteps  and worked for Safeway.

I hope to meld some of my past work history and experiences with that I am learning at Pilgrim’s to provide great customer satisfaction.
