Please note, as of May 1, 2022, if you can afford to, and would like to contribute, the suggested volun-
tary and anonymous contribution will increase to $3.00 per meal. All individuals are encouraged to make
voluntary and anonymous contributions towards the cost of the meal. Persons with a self-declared income at
or above 185% of the Federal Poverty Level are encouraged to make a contribution equal to the actual cost of
the meal which is $10.86. For 2022, income at 185% of the Federal Poverty Level is $25,142 for a household
of one, and $33,874 for a household of two.

10 Dangerous Food Safety Mistakes
We all want to keep our families safe and healthy. But sometimes a simple mistake in how we
handle and prepare food can lead to serious sickness. With some germs like Salmonella, just a
small amount in undercooked food is enough to cause food poisoning. And just a tiny taste of
food with botulism toxin can cause paralysis and even death. You can protect your family by
avoiding these mistakes.
Mistake #1: Washing meat, chicken, or turkey
Why It’s a Mistake: Washing raw meat, chicken, turkey, or eggs can spread germs to your sink,
countertops, and other surfaces in your kitchen. Those germs can get on other foods, like salads
or fruit, and make you sick.
Solution: Don’t wash meat, chicken, turkey, or eggs. Cooking them thoroughly will kill harmful
germs.
Mistake #2: Eating raw batter or dough, including cookie dough, and other foods with uncooked
eggs or uncooked flour
Why It’s a Mistake: Uncooked flour and eggs may contain E. coli, Salmonella, or other harmful
bacteria.
Solution: Cook or bake flour and eggs thoroughly. Don’t eat foods that contain raw or
undercooked eggs, such as runny eggs, homemade mayonnaise, hollandaise sauce, and
eggnog. Don’t eat raw (uncooked) dough or batter that contains flour or eggs. Keep raw dough
away from children, including play dough. Wash hands, work surfaces, and utensils thoroughly
after contact with flour, raw eggs, and raw dough.
Mistake #3: Thawing or marinating food on the counter
Why It’s a Mistake: Harmful germs can multiply very quickly at room temperature.
Solution: Thaw food safely. You can thaw it:
▪ in the refrigerator,
▪ in cold water, or
▪ in the microwave.
Always marinate food in the refrigerator no matter what kind of marinade you’re using.
Mistake #4: Not cooking meat, chicken, turkey, seafood, or eggs thoroughly
Why It’s a Mistake: Undercooked foods may have germs that can make you sick.
Solution: Use a food thermometer to make sure you cook food to a safe internal temperature.
Also, if you won’t be serving hot food right away, keep it hot (at 140°F or above) until serving.
Mistake #5: Peeling fruits and vegetables without washing them first
Why It’s a Mistake: Fruits and vegetables may have germs on their peel or skin. It’s easy to
transfer those germs to the inside of fruits and vegetables when you cut or peel them.
Solution: Wash all fruits and vegetables under running water even if you’re going to peel them.
Use a clean vegetable brush to scrub firm fruits and vegetables like melons, avocados, and
cucumbers. Washing fruits and vegetables with soap, detergent, or commercial produce wash is
not recommended. Do not use bleach solutions or other disinfecting products on fruits and
vegetables.
Mistake #6: Not washing your hands
Why It’s a Mistake: Germs on your hands can get on food and make it unsafe.
Solution: Wash hands the right way—for 20 seconds with soap and running water. Wash hands
before, during, and after preparing food; before eating; and after using the toilet or changing a
child’s diaper.
Mistake #7: Eating risky foods if you are more likely to get food poisoning
Why It’s a Mistake: Anyone can get food poisoning, but some people are more likely to get
sick and to have a more serious illness. This includes:
▪ adults aged 65 and older
▪ children younger than 5 years
▪ people who have health problems or who take medicines that lower the body’s ability to fight
germs and sickness (weakened immune systems)
▪ pregnant women
Solution: People who are more likely to get food poisoning should not eat:
▪ Undercooked or raw animal products (such as meat, chicken, turkey, eggs, or seafood)
▪ Raw or lightly cooked sprouts
▪ Unpasteurized (raw) milk and juices
▪ Soft cheese (such as queso fresco), unless it is labeled as made with pasteurized milk
Mistake #8: Putting cooked meat back on a plate that held raw meat
Why It’s a Mistake: Germs from the raw meat can spread to the cooked meat.
Solution: Always use separate plates for raw meat and cooked meat. The same rule applies to
chicken, turkey, and seafood.
Mistake #9: Tasting or smelling food to see if it’s still good
Why It’s a Mistake: You can’t taste, smell, or see the germs that cause food poisoning. Tasting
only a tiny amount can make you very sick.
Solution: Check storage times to see how long you can store food safely. When the time is up,
throw it out.
Mistake #10: Leaving food out too long before putting it in the fridge
Why It’s a Mistake: Harmful germs can grow in perishable foods (including meat, chicken,
turkey, seafood, eggs, cut fruit, cooked rice, and leftovers) if you leave them out of the
refrigerator 2 hours or longer.
Solution: Put perishable foods in the refrigerator within 2 hours or within 1 hour if the food is
exposed to a temperature over 90˚F (like in a hot car). Divide roasts and large portions of food,
such as pots of stew or chili, into smaller containers so they will chill quickly. It’s OK to put warm
or hot food into the refrigerator, as long as it’s packaged in amounts small enough to cool
quickly.

Don’t give your personal or financial information in response to a request that you didn’t expect.
Legitimate organizations won’t call, email,
or text to ask for your personal infor-
mation, like your Social Security, bank
account, or credit cart card numbers.
If you get an email or text message from a
company you do business with and you
think it’s real, it’s still best not to click on
any links. Instead, contact them using a
website you know is trustworthy. Or look
up their phone number. Don’t call a
number they gave you or the number
from your caller ID.
Resist the pressure to act immediately.
Legitimate businesses will give you time
to make a decision. Anyone who
pressures you to pay or give them your
personal information is a scammer.
Know how scammers tell you to pay.
Never pay someone who insists you pay
with a gift card or by using money
transfer service. And never deposit a
check and send money back to someone.
Stop and talk to someone you trust.
Before you do anything else, tell someone—
a friend, a family member, a neighbor—
what happened. Talking about it could help
you realize it’s a scam.
Block unwanted calls and text messages.
Report Scams to the FTC If you were scammed or think you saw a
scam, report it to the Federal Trade
Commission.

Four Signs That
It’s a Scam
1. Scammers PRETEND to be
from an organization you know.
Scammers often pretend to be contacting
you on behalf of the government. They
might use a real name, like the Social Se-
curity Administration, the IRS, or Medi-
care, or make up a name that sounds offi-
cial. Some pretend to be from a business
you know, like a utility company, a tech
company, or even a charity asking for
donations.
They use technology to
change the phone number
that appears on your caller
ID. So the name and number
you see might not be real.
2. Scammers say there’s a
PROBLEM or a PRIZE.
They might say you’re in trouble with the
government, or you owe money, or
someone in your family had an emergen-
cy, or that there’s a virus on your comput-
er.
Some scammers say there’s a problem
with one of your accounts that you need
to verify some information.
Others will lie and say you
won money in a lottery or
sweepstakes but have to pay
fee to get it.
3. Scammers PRESSURE you to act
immediately.
Scammers want you to act before you
have time to think. If you’re on the
phone, they might tell you not to hang up
so you can’t check out their story. They
might threaten to arrest you, sue you,
take away your driver’s or business li-
cense, or deport you. They might say your
computer is about to be corrupted.
4. Scammers tell you to PAY in a
specific way.
They often insist that you pay by sending
money through a money transfer compa-
ny or by putting money on a gift card and
then giving them the number on the back.
Some will send you a check (that will later
turn out to be fake), tell you to deposit it
and then send them money.

During a disaster, at-risk individuals with access and functional needs require additional help before, during, and after an incident.
Residents can provide any information they wish to share during emergency planning, response, and recovery efforts.
Participants are encouraged to provide the following:
• Full name, address, and contact information
• Caregiver contact information
• Medical conditions and medications
• Nature of disability
• Pets, service animals, livestock
• Home power and utility information
• Access to vehicle and ability (or inability) to evacuate
Smart911 Saves Time and Saves Lives
With Smart911, you can provide 9-1-1 call takers and first responders critical information you want them to know in any kind of emergency.
Smart911 is a national service meaning your Smart911 Safety Profile travels with you and is visible to any participating 9-1-1 center nationwide.
Safety Profiles can include:
• People living in your household
• Pets, service animals, and livestock
• Medications and medical equipment
• Vehicle descriptions
• Phone numbers associated with your family
• Medical conditions and allergies
• Property details, layout, and utility information
• Emergency contacts
Hands on Huntington, a Neighborhood Naturally Occurring Retirement Community program, is a program provided at no cost to seniors age 60 years and older. If you reside in their catchment area, including parts of Greenlawn, East Northport or Huntington, this program can assist you with at home access to a social worker for case management, a nurse for health assess-ments and educational programs. Services are geared to keeping seniors in their homes and community, living as independently as possible.
