GoalReduce the amount of waste water that is
produced as a result of cleaning in dining facilities on university and college campuses nationwide.
OutlinePolicy Options for ReductionEvaluation of Policy OptionsProposed Policy for Siena CollegeEvaluation of ProposalQuestions and Comments
Policy OptionsReduction:Elimination of Reusable and Biodegradable
Plastic CupsSelf-plating in Dining HallsElimination of TraysOn-site Treatment:United Membrane Biological Reactor (UMBR)Ecological Machine
Reusable MugsGoal: Adopt reusable mugs campus-wide and
eliminate use of biodegradable and reusable plastic cups as a mode to reduce waste water production.
Price varies with size, style, and durability. $5 in meal plan, $8-15 for addition purchase.
Perceived Benefits: -personal attachment -durable-less chance of spill/leak -cheaper in long term-personalize -can be brought home -reduces waste and energy use
Self-PlatingGoal: Eliminate pre-plating in dining halls to
reduce the amount of water used in washing dishes.
Pre-plating certain high preference foods (Burgers, quesadillas, pasta option) causes an excess of used plates
With the elimination of the pre-plating, people can put all of their food on one or two plates
Costless
Elimination of TraysGoal: The elimination of trays will reduce the amount
of energy, water, chemicals, and waste generated.Trayless dining encourages less wasted, uneaten
food, which eliminates unnecessary energy usage transporting garbage & limits the amount of waste put into our landfills.
Less wasted food saves food for less-affluent areas.Less energy, water, and chemical usage due to the
fact of elimination of trays.Reduces the amount of spending for purchasing
and replacing trays.Drawbacks: Some students may be against the idea
of trayless dining because of the inconvenience in carrying more than one plate.
UMBRGoal: To use the United Membrane Biological
Reactor as treatment for contaminated wastewater
The UMBR technology allows for bioreactor operation with higher mixed liquor suspended solids (MLSS)Elevated biomass concentration allows for
effective removal of soluble and particulate biodegradable materials
Ecological MachineGoal: Implement treatment of wastewater on-
site, where the water can be recycled as pool water, toilet water, or water for agriculture/irrigation.
The cost of every system we design and build is dependent on individual site conditions
Eco-Machine technology allows owners to minimize, or in some cases even eliminate environmental impact. Many client sites have zero discharge.
ProposalGoal: To reduce waste water production on Siena Campus by eliminating use of
trays, adopting reusable mugs, and self-plating in the dining halls
Implementation: Going Tray-less:
Complete elimination of plastic dining trays in all dining facilities on campus By eliminating the trays, we can eliminate the wastewater that is produced in
facilities Reusable Mugs:
Making reusable mugs a part of every student's dining meal plan Making reusable mugs a everyday part of the student body's lifestyle by
introducing these ideas from freshmen year as an "Acceptance" gift from the college
Making reusable mugs readily available in the Book Store on campus as well as at on-campus restaurants
Allow for the usage of "outside" mugs (it's the concept not the profit made by the campus that should prevail)
Elimination of Pre-plating: Going back to individual plating by all food lines (in specific the 'burger' line) Encourage the usage of one plate per student in order to reduce the need for
multiple plates
EvaluationCosts:Going "Tray-less":
No relative costs associated with the elimination of plastic dining trays; decreases the amount of water and detergent that is used as well as a reduction in the amount of energy that the facility uses in the cleaning process
Reusable Mugs: Yearly fee as part of dining plan ($5.00 per student) for first
reusable mug Additional mugs available at Book Store for a cost of $8 -
$15 (prices vary depending on styles and preferences) Elimination of Pre-plating:
No relative costs associated with the elimination of pre-plating, reducing the amount of plates used daily, which therefore drastically reducing the costs associated with the cleaning of plates as well as a reduction in wastewater
