    We have designed our wine list to offer a full experience in

    rustic Italian dining, from beginning to end, through aperitifs to

    digestives, to compliment our cuisine. We have chosen wines from

    almost every Italian region and have re-discovered some indigenous

    grape varietals. They have evolved thanks to modern winemaking

    techniques though their Italian heritage flavours and regional

    characteristics remain. In designing this list, we have attempted to

    provide a wide representation of renowned regions. Highlighting

    Tuscan, Friulian, Sardinian and Venetian appellations giving special

    focus to the region of Sicily which produces a large diversity of

    wines from fresh crisp whites, to powerful reds and delicious

    dessert wines. All wines which include samples of classic regional

    Australian wines are listed together by varietal. They are listed in

    order from lighter-bodied to the heavier styles.

    Our staff is passionate about all things gastronomic and vinous and

    are more than happy to assist you with your selection.

  • Glera (Prosecco)

    The name of the grape from which Prosecco is made. It can be dry or off dry. Sparkling with good acidity and light

    creaminess and flavour. The grapes are largely grown in Veneto (in the Valdobbiadene and Conegliano zones north of

    Venice). Prosecco is used to make the classic Bellini cocktail with the seductive peach nectar. The wine is fresh, not high in

    alcohol or highly aromatic.

    Brachetto

    Light red with a flavour reminiscent of the most aromatic wild strawberry. It is found in Piedmonte and is a sweet and

    aromatic red sparkler.

    Riesling

    The flavours of the Riesling grape vary according to the soils in which it is grown. It runs the gamut of possessing a smoky

    tang to a flowery or slightly spicy aroma with flavours of peach, green apple, quince and citrus peel and the riper wines

    can also taste of apricot. Australian Rieslings usually have aromas of ripe lime and toast and although it may not sound

    appealing, Rieslings can, with bottle age, acquire a characteristic aroma of petrol/kerosene, but with that, they also

    develop delicious flavours of honey, marzipan, and buttery short bread. Botrytis adds a dried apricot, almond or raisin

    flavour.

    Pinot Grigio

    Pinot Grigio is the Italian name for pinot gris. Grown in the north east of Italy, it produces a wine that is very light, crisp

    and delicate with spice.

    Pinot Bianco

    This variety has a touch of spice and round, creamy fruit. While not an assertively aromatic wine, it can have hints of pear

    and apple freshness. In Italy its flavour closely resembles a mild chardonnay.

    Gewürztraminer or traminer aromatico

    This grape variety has its birth place in Alto Adige, in the area Tramin. In spite of the suffix “aromatic”, few wines here

    are traditionally very scented, although they are elegant. In areas like Eden Valley, Tasmania and Victoria they can be

    thrillingly scented. The range of this varietal runs from dry to off dry to late harvest and the aromas can vary from rose

    petal, lychee, cinnamon, orange peel or honey suckle.

    Grechetto

    This variety has a good structure, richness and nuttiness.

    Carricante

    Grape grown on Mount Etna, Sicily producing dry and refreshingly intense wine. The grape provides wonderfully rich

    orange and lemon peel fruit and anise spiciness.

    Vermentino

    Vermentino is Sardinia’s star white grape variety. An aromatic variety featuring citrus and herbal aromas, it ranges from

    crisp to rich, ripe and intense with fennel, sage and melon.

  • Friulano, Tocai Friulano

    The grapes of Friuli produce a wine of good structure, balance and depth.

    Nuragus

    Nuargus is an ancient variety found in Southern parts of Sardinia. It is medium bodied with apple and almond notes and a

    lively, crisp acidity.

    Garganega

    This is the primary grape behind Soave grown in the Veneto area of Soave. It has both delicacy and structure, finesse and

    just enough weight with a flavour reminiscent of almond, green plums and citrus.

    Turbiana

    Trebbiano is the most widely grown grape in Italy and is renowned for its acidity - the most prized being turbiana, known

    as Trebbiano di Lugana or Veronese.

    Verdicchio

    Produces wine that is not aromatic but has good flavour of nuts, lemons and plenty of weight.

    Vernaccia

    Produces a wine of good crisp acidity with ripe, leafy citrus fruit characteristics.

    Greco

    Greco makes wines that are lightly peachy, leafy and fresh.

    Pecorino

    Grown in the native of Marche and Abruzzo of Offida, Pecorino has good depth with rich aromatic nutty characters.

    Trebbiano d’Abruzzo

    Is the incorrect name for bombino Bianco, grapes grown in Abruzzo and Marche regions, produce wines with depth and are

    seldom very aromatic.

    Falanghina

    A very old variety grown in Campania south of Naples it makes fresh lively white wine similar to pinot grigio with aromas

    and flavour of green apples and citrus fruit.

    Cannonau

    Cannonau is the most planted and well-known Sardinian red grape. Cannonau is local name for Grenache and it has juicy,

    fruit characters with warm earthy notes. Ideal for slow roast meats, it is medium-bodied to soft, rich, supple and powerful.

    With flavours of leather, roast nuts, honey, pepper and black coffee, it is rather addictive.

    Refosco

    A North Eastern red grape, refosco has a high acidity and is a deep coloured wine, often with somewhat harsh , green

    tannins; but attractively berried dark plum depth and black chocolate bitterness when aged a couple of years.

  • Lagrain Dunkel (Dark)

    Lagrain Dunkel is a variety from Trentino Alto Adige. Producing a wine with an interesting mouth feel, it has flavours of

    sour plum, grass and bitter cherries with a black chocolate richness. The very light tannin structure gives a combination

    of good chewy dark fruit and easy drinkability. It is related to Refosco grapes.

    Monica

    Grown in the southern island of Sardinia, has star and anise scent and cranberry flavour with nice firm acidity.

    Sangiovese

    The traditional flavour of Tuscan Sangioveses is bitter cherry and violet with hints of savoury tomato and an herb and

    tea-like finish. With high acidity and tannins up front and hot fruit flavours, this is the be all and end all of traditional

    Tuscan reds. These days, this wine style is likely to be richer and more concentrated with better textures and finer tan-

    nins. Most international styles have a hint of vanilla and spice from new oak and the fruit flavours lean towards black

    cherry, plums and mulberries. If cabernet is blended in, it tends to have more of a plum flavour.

    Sangiovese can be rustic, heavier, broader and more alcoholic depending on if the weather is “hot” or not. New world

    flavours vary from oaky plummy cabernet look a-likes with high alcohol but unripe tannins, none reaching The finesse

    of Good Montalcino. Emulators have found it surprisingly difficult, not for the first time, to capture the quintessence of

    Italy .

    Malvasia Nera

    Malvasia Nera is the dark form of Malvasia and is found in most regions of Italy. It possesses dark plum richness and a hint

    of floral scent. Both dark and white Malvasia can make sweet, sparkling or aromatic wines.

    Corvina

    Is the main stay of Valpolicella, light red wine ofVeneto, north Italy. With not much colour or tannins , it has aromas and

    acidity , producing wines with floral, cherry-ish perfume. Corvina grapes are dried to give recioto wines or amarone ac-

    cording to the method applied. Recioto usually being white and the latter being red wine .

    Amarone

    This is the name for wine blended with corvina, rondinella and molinara grapes. One is used for the aromatic qualities it

    possesses and the latter for the acidity. Those grapes have been partially dried to provide a more concentrated flavour and

    body and to deepen the colour. The ‘Amarone’ they yield is elegant and full of raisinated fruit flavoured wine.

    Montepulciano

    Not to be confused with ‘Vino Nobile Di Montepuliciano’ which is made with Sangovese(mainly) in the town of Montepul-

    ciano. This variety is grown in Umbria, central and South of Italy and is best known as Montepulciano dAbruzzo, The palate

    is round, plumy and weighty, with red ripe tannins and good acidity.

    Merlot

    Merlot grapes give a soft, juicy, silky texture with smooth velvety tannins, and flavours of black cherry, black currants,

    plums, figs, prunes and cinnamon spices. A seductive wine well matched with duck and spicy game meats.

  • Tintilia Grape native of Molise, central/south of Italy on the Adriatic Coast. It produces full bodied wine, deep colour and intense

    aromas and long lasting flavour.

    Bovale Bovale makes a deep red wine and is related to the French Mouvedre. It has a rich, earthy palate with herbal notes and a

    soft finely tannic finish.

    Primitivo This grape from the South of Italy is renowned for making big, burly, alcoholic wines. Related to the American Zinfandel,

    its origins are most likely from an island off the coast of Croatia.

    NebbioloThe wines are known for their elegance and bouquet. Classically described as tar and roses for its amaizing scent, this wine

    combines high levels of tannin and high acidity. With the most exotic scents to be found as it ages, it has an irresistible

    array of flavours that vary from leather, fresh and dried herbs, spice, liquorice and dried fruit. Soft tannins, high acidity,

    and lots of fruit and alcohol are all in perfect balance. Just great. Just divine.

    BaroloName of a town in Piedmont which gives its name to the wine made with Nebbiolo grapes grown soley in that area.

    Chiavannesca The name for Nebbiolo grapes in Valtellina, a region in Lombardy.

    Aglianico This grape, found mainly in the Campania and Basilicata regions, south of Italy. The best example of this grape is found in

    Basilicata and Vulture, with its volcanic soils. It has intense, plum, withered black cherry, flowery (violet), black pepper

    and smoky flavours with good acidity.

    Sagrantino Only found in Umbria around Perugia in the area of Monte Falco, this wine has intense tannins and a strongly fruity

    flavour, typically of cherry and smoke. This varietal has a lot of personality.

    Carignano Originating in Aragon, Cariñena Spain. Carignano has found its home in Sardinia’s warm soils (which it needs to show its

    full characteristics). It plays the back bone, colour, acidity and tannin for the wines of Sardinia and for the famous and

    highly sought out wines of Rioja. The wine has rustic but attractive fruit and perfume. Delivering a most powerful red

    Nero d’Avola Nero d’Avola is of Sicilian origin and produces wines that are ruby red with purple reflections with notes of red berries,

    cherries, vanilla and fruit jam. Rich of ripe fruit. Great structure. Soft, yet robust. They age very well if oaked. Often

    compared to Syrah (Shiraz).

    Calabrese A slightly different form of Nero d’Avola.

  • Nerello Nerello has two versions: Mascalese and Cappucci0, which are direct descendents of Nero d’Avola. This variety has lots of

    power, but is still very elegant.

    NegroamaroFound in Italy’s southern region of Puglia, the Negromaro has the classic Italian combination of high perfume and rich

    bitterness (hence its name – black bitter). The wine is indeed very dark in colour and has a very interesting/attractive

    farmy-yardy flavour.

    Lacrima A wonderful rose scented red grape found in the area of Morro d’Alba in central Italy. The wines made of this varietal are

    generally dry with high acidity. Ideal for light meals and entrees.

    Cabernet – AustraliaThe Cabernets from Coonawarra led the way in the 1970’s with bright, often minty fruit and fine structure. These days, a

    typical cabernet can be based on the dusty/herby and tightly structured wines of Margaret River, the balance and elegance

    of the Yarra Valley, the sweet fruity Claire Valley offerings or the more full-bodied wines of Barossa.

    Sardinian digestive liqueur made by infusing dark Mirto berries unique and pleasant flavour true reflection of Sardinian

    country.

    Marsala

    Fortified wine usually made from native grapes like Grillo, Catarratto or Inzolia. Used as dessert wine, digestive and

    aperitive wine. Today’s Marsala is often divided into three standard oro (gold), ambra (amber) and rubino ( ruby). There are

    sweet and dry types.

    “Fine” aged minium one year

    “Superiore” minium two years

    “Superiore riserva” aged in wood for four years

    “Vergine” aged in oak up to seven years

    Some Houses age it in oak casks since 1860 making Marsala experience a piece of Sicilian history.

    Vermouth

    Wine flavoured with botanicals. It can be sweet or dry. Used as aperitive.
