Spirit Spotlight

NEW MENUS FOR BODY AND MIND

Recently, the Dietary Department updated the menu format to

include new changes to the food items and ingredients they use. We sat down with the Director of Culinary Services, Eric Peters, to ask some questions about these new changes:

Q: What is the “Premier Healthy Entrée of The Week”?A: This entrée, which changes weekly,

is prepared utilizing natural fresh ingredients to promote an overall healthy food selection. Ingredients consist of, but

not limited to, fresh fruits and vegetables, whole grains, and lean meats.

Q: What is the “Food for Thought Entrée of The Week”?A: This entrée, which also changes weekly, is prepared utilizing ingredients shown to improve memory and cognitive abilities in older adults. Some of the ingredients utilized are fresh fruits like strawberries, apples, cantaloupe,

blueberries, and raspberries. Fresh vegetables like broccoli, avocados, brussel sprouts, spinach, and beets. Whole grains, salmon, legumes, olive oil, nuts, seeds, and beans. Oh yes, DARK chocolate! Studies have shown that these food items in particular improve the senior brain. “Brain Food”.

Q: What significant changes did you make to the daily menu?A: We made four significant changes:1) Entrees—The number of regular entrees were reduced by one and the dollars were applied to the heart healthy entrees to help fund a major update. In the past, the heart healthy entrée was pretty much either grilled chicken, steamed fish, or hamburger steak. We now are using foods like salmon, mahi mahi, halibut, trout, turkey breast, tuna, lean ground beef, and various cuts of pork and beef. Most of the recipes used are available on the American Heart Association website.2) Vegetables—The number of vegetable choices were also reduced by one, and the dollars are now used to purchase fresh where possible. On average, fresh vegetables are utilized 12 out of 21 times a week on the new menu. All vegetables are now prepared following heart healthy guidelines.3) Desserts—We now serve a dessert of the day, a gluten free dessert, and a sugar free dessert. In addition, cookies, ice cream, bananas, and yogurt are available.4) Sunday Brunch—Four entrées and two salads are now included on the Sunday Brunch. This menu is repeated every Sunday due to the items being most requested for a Sunday meal.

Q: How have the changes been received by those who dine at Spanish Cove?A: As with any changes, not all have been graciously accepted. Some have missed “the way we used to do it” while others were happy to see more healthy options. Food is a very personal subject and everyone has an opinion. Spanish Cove has over 400!! My team and I strive to provide a nutritional, varied, and palatable menu that offers something for everyone. Hopefully between the newly updated daily menu and the cook-to-order Bistro and breakfast menus, all patrons are able to leave on a full stomach. Bon Appetit!!

Executive Administrator’s Corner

The body of medicine has made many spectacular advances over the last half-

century. There have been many major discoveries on the prevention, treatment or cures for many diseases. Yet, don’t make plans for attaining early immortality just yet. It seems that for every health problem conquered, there are several others lurking to take its’ place.

Health problems don’t seem to care how old you are. Yet, the older you become, the more likely you will

have had plenty of first-hand experiences. Unfortunately, we don’t get to pick which problem(s) to face. You can, however, increase your chances of some problems by the habits you choose.

The plain and simple truth is there is no fountain of youth. We can get plenty of medical advice or buy pharmaceutical products to keep us around longer, but our days are still numbered. While you may not be able to pick your problem, you can choose how you will react if it calls your name. How you respond to devastating discouragement reveals much about you. In some instances, it can tip the outcome balance toward either good or bad.

Fear is the most formidable foe you will face in any crisis; health or not. It is a contagion of spirit that spreads faster than any infectious disease. It attacks your very resolve and leads to shock, discouragement, depression and decline. How you respond to fear may make a world of difference to a health problem’s severity, duration and outcome. Moreover, how you respond rubs off on others. When you can overcome it, you have won the opportunity to finish well each day.

There are other contagions of spirit that are just as infectious as fear but are helpful. These include courage, valor and having a positive outlook to name a few. Yet, unlike fear, these inspire and act as good medicine. Moreover, it only takes one person in the face of one catastrophe to spread such a good infection to others. I see this in the lives of many here at Spanish Cove and their resolve is greatly encouraging.

The days of courage, valor and steadfastness to things of virtue are not simply memories of how you used to be. They continue to be part of you and are the best medicines for your future; the substance of true heroes and overcomers. These and other good contagions of spirit add quality to your life but even more so, the people around you.

Welcome New Residents

Hazel Karnish is very excited to be moving to Spanish Cove 9 Janice #101 and being close to the many friends

she already knows here. She has lived in the OKC area all but two years of her life. Her husband, Ray died suddenly after 59 years together. They were blessed with one son, Kenny, who lives in Ponca City with his wife Janice. Two grandchildren, Kyle who is an optometrist and Kenzie who is in her 2nd year of dental school. Both live in OKC.

Hazel finished school at Central State College earning an elementary teaching degree and a masters in reading education. She taught fourth and fifth grades at Lake Park Elementary

for 22 years. After retiring she became a docent at the Cowboy Hall of Fame leading childrens tours and trips. Hazel has been

an adult leader for 23 years in bible study fellowship. She’s a part time travel guide in the Putnam City Travel Club and has been

involved in square dancing with the Swinging Rebels for many years.

Hazel is a member of Bethany First Nazarene Church. She’s looking forward to the activities of the Cove and meeting many more new friends. Welcome to Spanish Cove, Hazel!

Marvin Roger Mayberry, born in Tulsa, Tulsa County, Oklahoma and raised in Oklahoma City, Oklahoma. He worked for over

31 years at the Oklahoma Department of Transportation in “Roadway Design” and retired in April 2006. He has a brother and sister living in OKC along with four nieces, one nephew, three great-nieces and four great-nephews.

He enjoys family gatherings with all this group on a regular basis. He is an avid OSU fan and enjoys vacations in Cuchura, Colorado at a mountain cabin the family has visited for decades. He has been an almost daily walker and looks forward to exploring all the grounds at Spanish Cove.

Marvin’s first knowledge of Spanish Cove was from a long-time family friend, Mildred DeVore McCullough, who currently lives at the Cove. He is excited about all the activities offered at Spanish Cove and is ready to start a “new chapter” in his life. Welcome to Spanish Cove, Marvin!

Life The Way You Want It

As the U.S. population ages, the number of hip fractures is likely to go up and 95% of these fractures are due to falling. Falling has also been shown to be

the leading cause of death in adults aged 65 and older. According to the CDC, fall injuries are among the 20 most expensive medical conditions for older adults while 1/3 experience a fall. Improving your balance can help you prevent falls that can lead to fractures.

Balance is the ability to maintain the body’s center of mass over its base of support. Balance depends on many factors such as our vision, inner ears, and feet to assure our footing. As the body ages, our senses naturally weaken which affects our ability to stay balanced. Approximately 20% of the nerve fibers from the eyes interact with the vestibular system, which is the part of the brain that assists us with motion, equilibrium, and spatial orientation. Following trauma, fever, stroke, deconditioning, or sometimes for no apparent reason, one eye will aim higher than the other will which can cause balancing issues, as well as double vision or any other eye movement disorder. This means you should also schedule visits with your Optometrist on a regular basis. In addition to your eyes, the inner ears house loop-shaped canals that contain fluid and fine, hair-like sensors that help you keep your balance. These canals contain a bunch of tiny particles that help monitor the position of your head in relation to gravity and linear motion, such as going up and down in an elevator or moving forward and backward in a car. So in addition to balance training, you should clean your ears on a regular basis to free the inner ear from any obstructions that could potentially throw your balance out of whack. Regular visits with an Otolaryngologist or an ENT specialist are recommended. The arches of the feet provide us with flexibility, help to absorb shock, distribute the weight of the body, and assist the feet in adapting to surface changes when walking or doing exercise. Proper footwear and strengthening our feet and ankles play a key role in maintaining or improving our balance.

We will be starting a new eight week better balance class. The class will be Mondays and Wednesdays at 1 1:00 a.m. in the Exercise room beginning on Wednesday, September 7. The class will focus on walking balance, spatial awareness, and static balancing. Some of these exercises will be through game-play or cognitive training, making this class fun and full of variety. Doing these exercises will help us strengthen our bodies to help us maintain our balance.

For me, the ‘calendar year’ will always start in September. I know, I know, it really starts in January, but I remember from as early as kindergarten seeing September as the beginning

of a new year—the school year, that is. For over 50 years there has always been a beginning, September, and end, May. June, July and August were months thrown into the mix just for fun. So when I see September creeping up on the calendar, I clearly remember the smell of purple ink from the mimeograph machine, chalk dust being pounded off on brick walls, and yeast rolls rising in the cafeteria. September brings back good memories. This is what life is, a series of memories, some good, some bad. As we were living them we were unaware that someday we would look back upon that time period with fondness, the good ole’ days.

All that we do today will fade into the past. Some of the moments will linger as memories. Will they be bad memories or good memories? That is up to us.
