    The familiar lyrics of a favorite Christmas carol tell of Chestnuts roasting on an open fire, but how much do you know about these tasty, nutty treats? Lets explore some interesting facts about chestnuts, the subtly sweet, healthy nuts we associate with the Holiday Season. American chestnut trees were the dominant

    hardwood trees for food and timber in the Appalachian Mountains several hundred years ago. When Chinese chestnut trees were imported, a bark fungus came with them for which the American species had no resistance. As a result, the American chestnut died off. Known as the great chestnut blight, the disease killed over 30 million acres of the trees from Maine to Georgia and west to the Ohio Valley. The widespread death of this tree species was one of the largest ecological disasters in American history.

    Back in the heyday of American chestnuts, they were an important food for people and wildlife from birds to bears. Rural communities depended on the nuts as a cash crop for feeding livestock, and the sale of lumber from these trees was also important for rural economics. Another chestnut product was tannin, a chemical substance found in some plants that is used in the leather tanning

    During his four terms and 13 years in the White House, Franklin Delano Roosevelt was considered by many to be one of the most vital figures in American politics. Chestnuts are 40 percent carbohydrates and only 2-3 percent fat, compared to many nuts that contain 50 percent fat. They contain 5-10 percent high quality protein and no cholesterol.

    Chestnuts are excellent steamed or roasted. They are often included in roast turkey stuffing for holiday meals and are a great addition to soups and stews. They can also be ground into flour and used for baking pastries and bread. A traditional European dessert, Mont Blanc, has chestnuts sweetened with honey and topped with whipped cream. Also, a few brewers are even producing gluten-free chestnut beer!

    One of the largest chestnut forests in the world is on the French island of Corsica. In the 16th century, landowners were ordered to plant four trees each year in an eastern mountainous area of the island. The town of Castagniccia, which means chestnut grove, became forested with magnificent chestnut trees. Today, sadly, that forest is dying from neglect.

    Tourists and locals walking the streets of Beijing and other Chinese cities are likely to find chestnuts being roasted and sold by street vendors. About 40 percent of the worlds chestnuts are consumed by the Chinese, who roast them in ovens, on coals or even in hot sand. They are a main ingredient in numerous dishes and also added to soups.

    American chestnut wood is straight-grained, easily workable, lightweight and highly resistant to rotting. It is used for railroad ties, fence posts, barn beams and home construction,

    industry. James Carpentar of Salem, Ohio, a member

    of the Northern Nut Growers Association (NNGA), discovered a large living American chestnut in the midst of a grove of dead trees in the early 1950s. Miraculously, the tree showed no sign of blight infection. Carpentar and Dr. Robert T. Dunstan, another member of the NNGA, cross-pollinated grafts from the strong American chestnut with a mixture of three Chinese chestnut varieties. After years of work, Dunstan Hybrid Chestnuts were developed having a combination of American and Chinese traits. The first chestnuts to ever receive a U.S. Plant Patent, the Dunstan trees are healthy, vigorous trees that bear heavy annual crops of large, sweet-tasting nuts.

    The grandson of Dr. Dunstan, R.D. Wallace, and his wife, Deborah A. Gaw, started Chestnut Hill Tree Farm in 1981 in Alachua, Florida. Dunstan Chestnuts are the most widely planted chestnut variety, and Chestnut Hill is a national leader in the chestnut industry.

    The American Chestnut Foundation, started by plant scientists in 1983, is also working to reestablish American chestnut trees. They have worked to breed blight-resistant trees, while maintaining the characteristics of the original trees. The successful program has resulted in trees that retain no Chinese characteristics other than blight resistance.

    Canadian scientists and naturalists established the Canadian Chestnut Council in 1988 to work on reestablishing the trees in Canada as well, mainly in Ontario.

    Today there are fewer than 2,500 acres of chestnut orchards in the United States, and our import amount is about $20 million annually. Our consumption of chestnuts is very low compared to Europe, Asia and Africa. Most chestnuts are imported from Japan, China, Spain and Italy.

    Chestnuts are frequently used as a potato substitute in Europe, Asia and Africa. The nuts actually contain twice as much starch

    as well as for musical instruments and fine furniture. Healthy chestnut trees grow straight and tall, often not producing branches until around 50 feet. The trees are known for being used from cradle to coffin.

    A famous piece of chestnut furniture is an armchair on display at the Longfellow National Historic Site, operated by the National Park

    Some animals as well as humans had to change their eating habits because of the death of American chestnuts. Records from the early 1900s show that a hunter found 92 undigested chestnuts in a wild turkey he had shot.

    American chestnuts were a great crop for many families

    in the early 1900s. In West Virginia in 1911, one railroad station reported

    shipping 155,000 pounds of the nuts! Some large trees produced ten or

    more bushels of chestnuts, and there were reports of American Chestnuts

    laying four inches deep on the forest floor. After the trees started

    dying, trees were brought in from Europe and Asia to satisfy the demand

    of chestnut lovers!

    A CHECKLIST TO BUYING IN A 55+ GOLF COMMUNITY

    Senior communities like Heritage Palms C.C. Sun City Palm Desert, Sun City Shadow Hills, and Trilogy are active adult golfing communities in the Palm

    Springs area comprised mostly of single family homes.

    I have owned homes in two of these developments and sold homes in all five. There are a few tips on buying Ill pass on now, and then at the end tell you how you can receive my FREE CHECKLIST TO BUYING.

    You do not have to be a golfer to enjoy any of these communities. In fact, 40% of the owners in at least one of the clubs are not golfers, but they enjoy living on a course and watching others enjoy the sport. There is a separate fee for golf so you are not paying for not playing. If you are a golfer, ask your realtor to arrange for a complimentary round of golf.

    These Clubs all have some type of restaurant and bar. Hang out for awhile and engage residents in conversation. They are the best source of information. You can ask about all the other amenities besides golf. If youre into tennis, check out the courts. Ask if they are lighted for night play. Is there a Social Club?

    Ask your realtor what the HOA dues include. Will you be expected to maintain your lawn? Are the original warrantees transferable? What about your four legged friends? Is there a dog park on site? Is there a restriction on the number of pets you can have?

    Security is always high on the list of must haves for a senior. Ask if there is 24 hr. security. If it makes you feel better, also check at the local police department.

Initially thinking he was only sick with a cold or the flu, he went to bed to rest and heal. His fever climbed, and his arms and legs began to ache. He collapsed trying to get out of bed the next morning and by that afternoon he was paralyzed. After being taken to a specialist, FDR was diagnosed with polio.

    There was no cure for polio at that time, and the treatments available had little effect. R o o s e v e l t worked hard, exercising and swimming in warm water daily. He regained much of his upper body strength but his legs never recovered. From that point on, he was forced to use leg braces, crutches and a wheelchair for mobility.

    In 1927, he founded the Georgia Warm Springs Foundation for Rehabilitation, a center for the treatment of polio and other afflictions, which is still in operation today.

    Even from a wheelchair, Roosevelt had not lost his determination have his life make a meaningful impact on the world, and he served as governor of New York from 1928 to 1932. In the midst of the Great Depression in 1932, the Democratics called on him again, this time to run for president. Eleanor wasnt sure it was a good idea, but supported him in whatever he decided. She stated, If polio didnt kill him, the presidency wont either!

    Roosevelt defeated incumbent Herbert Hoover and took office in 1933 as president, introducing his plans for a New Deal for the American people. He was reelected three times in 1936, 1940 and 1944, the only American president elected to four terms. His time in office spanned both the Great Depression and World War II.

    with a sign that read, Teddys Bear. The bear sold quickly, and they were soon inundated with requests for similar stuffed bears.

    Mitchom wrote a letter asking president Roosevelt for permission to name his popular bear Teddy. The president sent Mitchom a hand-written reply stating, I dont think my name is likely to be worth much in the toy bear business, but you are welcome to use it.

    The Mitchoms bears were so successful that they started the Ideal Novelty and Toy Company, with their main success being teddy bears.

    At about the same time that teddy bears were becoming the hot toy item in the United States, Margarete Steiff, a disabled German seamstress, started making stuffed toy bears at a toy factory in Geingen, Germany. The Steiff bears were based on drawings from Margaretes nephew, Richard. Richard was an art student and sketched bear cubs that were at the Stuttgart Zoo.

    The Michtoms bear resembled the Berryman cartoon bear, while the Steiff bear looked more like a real bear cub with a humped back and long snout.

    An American toy buyer ordered 3,000 Steiff bears in 1903, realizing that the teddy bear popularity in the United States was growing fast. Millions of Steiff bears were sold between 1903 and World War I. In 1905, a trademark button in the left ear was added to Steiff bears.

    Presidents are often remembered for their historic decisions in leadership, be they good decisions or bad, but only one president is remembered for inspiring a toy whose popularity has endured worldwide for many generations. Tidbits thought it would be interesting to look into the origin of that popular toy -- the teddy bear.

    Theodore (Teddy) Roosevelt served as President of the United States from 1901 to 1909. A political cartoon by artist Clifford Berryman that appeared in The Washington Post on November 16, 1902 with Roosevelt as the subject, marks the beginning of the teddy bear story.

    Berrymans cartoon depicted an incident that happened weeks earlier when the president, an avid outdoorsman and hunter, had been invited on a bear-hunting trip by Mississippi governor Andrew H. Longino. The hunt proved disappointing for Roosevelt, who was the only one in the party who hadnt bagged a bear. Wanting to please the president with at least one kill to his credit, guides captured a bear and tied him to a tree for the president to shoot. But Roosevelts sense of fair sportsmanship would not allow him to shoot the helpless animal, and he refused to do so.

    News of the incident spread quickly and the story was picked up nationally by newspapers inluding The Washington Post, who published Berrymans cartoon.

    Brooklyn shopkeeper Morris Mitchom asked his wife, Rose, a seamstress, to sew a jointed bear that resembled the bear in Berrymans cartoon. They put the bear in their shop window

  • When Kids Wont Leave the Nest In Italy, theyre know as mammon (ma-mas boys). The Japanese call them parasaito shinguru (parasite singles). In the U.S., theyre referred to as boomerangs. And in Britain, they go by KIPPERS, an acronym for kids in parents pockets eroding retirement savings. As humorous as this may sound at first, kids moving back home after college or after losing their job is a growing problem for many families in many countries. Growing up and facing life independently is getting increasingly more expensive. Add to this, most young adults believe that to find a reward-ing career they must first opt for college after high school. Four years later when they finally have their degree, they now have school loans far greater than they can handle even at low inter-est rates. Add on the cost of a car, food, clothing, shelter and some kind of social life, and suddenly moving back in with Mom and Dad (Translation: someone else to pay the bills) becomes a finan-cially attractive option. So, whats a parent to do? Here are a few suggestions:

    Create a contract. Call it a Temporary Residency Agreement, wherein you as the par-ents are the Landlord and your adult child is the Tenant. Err on the side of not cutting your young adult any slack here. This is an excellent oppor-tunity to teach personal responsibility and the fine art of living on a budget. Have a beginning and an end date. Address everything in this agree-ment and close all loopholes. If you treat this in a business-like way, youll get a lot more respect in the days (weeks, months?) ahead.

    Set rules. This is about money, so dont skirt around the issue. Whether your kids are still with you because they moved back or because

    they never left, its time to lay down the law that says everyone in the household contributes to the expenses and maintenance. This includes paying rent, a portion of the utility bills and food. Deter-mine what these amounts will be, and then make it part of the contract. As for their own expenses, adult children need to pay their own car payments, insurance, gasoline, credit cards and cell phones. Beyond money. Everyone living in the home needs to participate in its maintenance. What are your minimum standards for laundry and meals? Who gets to park where? What about guests? Dont assume anything. Put everything in writing.

    Exit strategy. There needs to be a clear cut plan for how long this arrangement will last (do not skip the ending date on that contract) and a plan for its conclusion. Then make sure everyone is sticking to that schedule.

    This is not about how much you love your kids or your ability to support them forever. Its about loving them enough to force them to grow wings and learn to fly on their own, regardless the state of the economy, the load of debt theyve amassed or their inability to find the job of their dreams. You may have to push them from the nest, but if you play your cards right, it wont come to that. Hopefully, through your loving persistence, they will gain the strength and stamina to fly off on their own.

    Decoding Canine Behaviors We have a 7-month-old baby who is learn-ing to crawl. When she starts moving, our 10-year-old Ridgeback/Pit bull mix gets anxious and starts circling her. Every once in a while when she is mov-ing, he will charge at her and nudge her with his nose. Sometimes he will growl when he does that. Mind you, we do not let her crawl around without us there, and we push him away when we see him charging at her. He was OK with her until she started crawl-ing. He follows us with her everywhere. Even when she is sleeping in her crib, he has to be in the room with her. He wont leave her side. We feel that he is protecting her. When she is crawling, it is a different story. Barnie has had a tough life. We rescued him at 2 years old, and we were told at the shelter that he was beaten as a puppy. As for the baby, it seems like he is protect-ing her until she gets on the ground. Should we be worried about him charging her? What does that mean? Is he scared or threatened by her? Any sug-gestions would be appreciated. If you were on a boat in the middle of the ocean and you noticed a shark circling your boat, would you jump in the water? No. Would you feel scared or threatened? You bet. An animal circling something is in predator mode, and whatever he is circling is potential prey. It is no different when the parties involved are a dog and a baby. Charging can be an aggressive action. Growling is a clear and certain warning of escalat-ing aggression. This couple has a tough decision to make. Their choices are: -- Find a new home for the dog. -- Find a new home for the baby. -- Find a way to keep the two away from each other 100 percent of the time. They were hoping to train the dog and elimi-nate the behaviors through training. But timing is everything. Baby is already crawling, and Barnie is ten
