The Spring Festival Gala Dinner under the auspices of Chef Philippe ETCHEBEST
Saturday 15th June 2013
Following well-established tradition, the festivities of the VINEXPO exhibition were launched in
Saint-Emilion with the Saint-Emilion Jurade’s Gala Dinner on Saturday 15th June.
This evening was the third time the Saint-Emilion Chef Philippe Etchebest worked with the
Saint-Emilion Jurade and was another opportunity to honour the close relationship that has
developed over the years between this illustrious ambassador of Saint-Emilion and the local
winegrowers. In fact, for the first time in its history, the Jurade welcomed a celebrity other than
a winegrower or merchant as Jurat, by inducting their peer and Chef, Philippe Etchebest
himself!
40 other celebrities, all wine professionals, connoisseurs or journalists from all over the world
were also inducted at this Solemn Chapter of the Spring Festival, chaired by First Jurat, Hubert
de Bouard. The French actor Stéphane Hénon, well-known for his role in “Plus Belle la Vie” and the famous architect Mario Botta were part of the important
guests and could be seen during the induction and the aperitif.
The 800 guests have enjoyed a menu elaborated by the Chef double star Michelin, Philippe
Etchebest, paired with a selection of Saint-Emilion Crus in a 90 square feet dining room specially
created for the happening. It was a slightly mad, unpredictable evening in Saint-Emilion, which
continued with an after-party in the Palais Cardinal moat, where the guests really let their hair
down dancing to some famous English hits.

About Philippe ETCHEBEST
After a classical training at the Bordeaux hotel school, then a short detour via the family restaurant Le
Chipiron in Bordeaux, Philippe Etchebest worked with some of the big names such as Jean Bardet, Firmin
Arambide and Jacques Chibois, then took his first position as second chef at Le Clos Longchamps in Paris (2
Michelin stars) followed by a stay at Les Jardins de l’Opéra in Toulouse. Philippe is Basque, but Bordeaux
has adopted him and he is in love with the south-west of France. He was chef at the Château Grand Barrail
hotel, before living a Perigord adventure at Château des Reynats, where he gained his first Michelin star.
Hostellerie de Plaisance with its rich history, but its resolute future outlook needed a Chef able to build
bridges between traditional fare and modern cuisine. Philippe Etchebest met the challenge so well, he won
a second prestigious Michelin star for Hostellerie de Plaisance in 2008. In his characteristically daring way,
he introduces impressionistic touches from elsewhere that he has collected on his travels, but the produce
remains fairly and squarely the focus of all his dishes. Philippe himself calls his cuisine modern and inspired
by sound classical fundamentals. He strives to make his dishes contemporary, light and with elevated taste.
His thoughts begin at the local market nearby, which provides inspiration and where he maintains special
relations with producers. He is always alert and shows interest in everything. He likes things to go quickly and enjoys a good team spirit. He is a
painstaking perfectionist and his cuisine is often said to be delicate and feminine, which in view of his pastimes and physique may appear
paradoxical, but this is what highlights his talent and appeal.
Since 2010, Philippe Etchebest has set out to share his own experience in a TV programme on the French 6th channel, entitled “Cauchemar en
Cuisine” (Nightmare in the Kitchen), in which he helps out restaurateurs in difficulty.
