Here we are in June, already half way through the year! June marks the start of Summer with the longest day of the year on the 21st so let’s hope the sun begins to shine. For all the tennis fans, Wimbledon starts on the 20th June and who knows maybe this year we will have a Brit in the fi nal?

Knebworth will become a hive of activities from the 17th until the 26th June as the village holds its annual festival. St Martin’s will become an exciting performance space as this is the venue for an evening of Cabaret, a Showcase of Knebworth Talent including the new Knebworth Youth Choir, a show featuring music from Movies and Musicals with the Knebworth Community Chorus and an evening of vibrant Gospel Music with Ancient Landmark. The following weekend on the 25th Knebworth School will hold a Gala Day from noon until 4pm with lots of fun for everyone including incredible infl atable’s for all ages, ride-on steam traction, panning for gold, penalty shoot-outs, golf challenge, face painting, sponge bob, traditional fun stalls, BBQ, beer tent, PIMMS, refreshments and lots more at Knebworth Primary and Nursery School. The festival has something for everyone over 10 days including Garden Talks, Jazz, Painting, Yoga, Flower Arranging, Wine Tasting, a Barn Dance, Village Fete and much more. RAISING FUNDS FOR GOSH

Great Ormond Street is a charity which is very close to Village Life’s heart. Publisher, Jose Saavedra’s son Emilio was born with an abnormally shaped skull which had to be operated on when he was 14 months old back in November 2009.

Because of Great Ormond Street Hospital, he is now fi t and healthy and they were so touched by the care that Jose and wife, Mel, received that they set themselves a target of raising £10,000.

To date they have raised £5920 from various fund raising activities including village fetes, cookery demonstrations, car boot sales – Jose even did the INCA Trek in Peru. They are planning to put on more events in the Summer so watch this space!

Great Ormond Street needs to raise £50m each year to rebuild and refurbish the hospital to fund the most up to date equipment to support research for breakthrough treatments and to provide support services for families and patients.

The Bell rings againThe Bell in Codicote has reopened on the high street with new owners, a new management team and new staff. A major refurbishment is underway along with a new menu and winelist! You can see further details on pages 16 and 17.

The Chequers in Stevenage Old Town has recently changed hands and is now run by a team of three ladies (Yaz, Ali and Ellie). They offer great homemade food, outstanding drinks and a warm and friendly atmosphere. They believe it is the only pub in the old town to serve all homemade food.

I mean the ‘other’ sorts of things that people seek out a therapist for

help with. Some have had lots of

tests and the Doctor says there is nothing there, nothing to worry about, but they have still got the symptoms and want to get better.

One such person was Clare (names changed for confidentiality) who had had a miscarriage and had not been able to get pregnant again. The Doctor said all is ok, but that wasn’t helping her to get back in a cycle, nor her sense of loss and tears

at having lost a baby, nor her feelings of failure, or her jealousy at seeing other people pregnant, nor the counting off the months and thinking how pregnant she would be now if

she had not lost it. Women in this state need help. They need relaxation to sort their system out, get it back in sync, and reassurance that all really is ok. Clare was grieving, too, and needed help to open up and love her lost child. The soothing tapping of EFT helped us here.

Another person was Janet, who only uses complementary medicine. She has a weight issue which is wrapped around household obsessions and her family. There are many emotional issues tied up here and we are unravelling them with great care and safety. I have a number of clients like Janet, who have obsessions, or worries, about negative thoughts, routines, food and the like. They benefit in numerous ways as we progress, including gaining more confidence and self belief.

Apart from relationship, IBS, anxiety issues, help to get jobs, driving tests, flying phobias, smokers and people wanting to lose weight, there have been numerous children and teenagers this last couple of weeks. Bedwetting and nail biting issues, study for exams, confidence, and sports techniques that need to be mastered. It is delightful to see the smiles on their faces when they experience hypnotherapy. Everyone loves it.

I not only listen, as a counsellor or psychotherapist might, but I am proactive too. Having trained in CBT, EFT, NLP and energy therapy, as well as Hypnosis I am able to teach people really helpful techniques they can use. As they help themselves they progress faster and feel better quicker.

So, you see there are many differing ways hypnotherapy and EFT can help. It is fascinating to see people change for the better just using a bit of caring help to access their own resources. If you relate to any of these then phone for a chat or look at my website.

We popped back on a Friday afternoon to sample the menu and found a busy pub with a large group in the restaurant,

some diners in the bar and people enjoying a drink outside in the garden. We were greeted with a smile by landlord Adam and shown to our table by Lucy.

The pub has a traditional feel, the restaurant has a contemporary design with exposed beams which are in keeping with the original building. There was a relaxed, inviting atmosphere as we walked in, soft music was playing in the background and the tables were well spaced apart.

Mel opted for the Breaded Somerset Brie with Mixed Berry Compote & Watercress Salad as a starter. The presentation was superb with 2 generous wedges of crispy Brie, the Berry Compote complimented the cheese making this a delicious dish. I went for the Steamed Mussels with Bacon, Rosemary & Cider which arrived in a quirky black pot. The top half came off to house the shells and I was pleased to be given a finger bowl. The Mussels were full of flavour and the bacon worked well.

For the main course, Mel chose the Spinach & Goats Cheese Tart from the Specials Board - a light pastry tart full of flavour which was accompanied with side dishes of new potatoes and salad. I decided to try the Crispy Pork Belly with Roasted Root

Vegetables & Aspall’s Cider Sauce and I wasn’t disappointed. The Belly arrived as a thick square with crackling on the top, the plate was decorated with tasty vegetables and there was a subtle pepper sauce. The meat was tender and the portion size was just right, making this a winning dish that I absolutely loved.

The food is locally sourced and homemade and the deserts were no exception. Lucy recommended the Triple Chocolate Brownie with Swiss Chocolate Ice-cream & Double Cream and I chose the Crumble of the Day Apple Crumble with Sweet Somerset Cider. Both of these deserts were delightful and again the presentation was fantastic.

We had a wonderful experience at The White Horse, the atmosphere was great and Lucy really looked after us, I really like the fact that she offered recommendations. I have to mention the presentation again as for me this was outstanding and on par with fine dining restaurants. The food was delicious and the menu offered a good variety of dishes with some great specials available.

Dr Neel Jaiswal is opening a new private dental practice next to the Doctors

surgery on the High street in Old Welwyn. It has been built to provide comprehensive dental care for all the family in a comfortable modern environment.

After graduating in Dentistry from Birmingham University in 1996, Neel went on to attain his Vocational Training Certificate in Norfolk. Wanting to broaden his skills, he worked as a junior Doctor in Oral and Maxillo Facial Surgery in Lincoln Hospital. He then worked in Sydney, Australia gaining a wide variety of experience. On his return he practiced in London and trained further, completing his Membership exams at the Royal College of Surgeons.

Having since attained a Certificate in Surgical Implantology at the prestigious Eastman Dental Institute, Neel has also recently attained his

Masterclass Certificate in Facial Aesthetics at the Royal College of Surgeons.

He has also trained and mentored young dentists and is a member of several distinguished professional organisations. His next visit will be to do the Mastery Continuum at the Frank Spear Dental institute in Arizona, USA.

Neel believes in long term dental health by providing functional cosmetic dentistry with kindness, integrity and a genuine interest in helping his patients. This is reflected in the fact that most of his patients have joined through personal recommendations.

We met up with Neel this month and he told us, “I soon realised I enjoyed dentistry as it gave me a chance to talk with no interruptions! Seriously though it’s wonderful to help people overcome their dental fears and walk out smiling. It’s clichéd but people who smile do enjoy life more and

improve the day of everyone who comes into contact with them. I firmly believe a healthy mouth means a healthy body and this has been proven with gum disease being linked to heart disease and diabetes amongst others.

A lot of SMEs underestimate the importance of good bookkeeping! If a business has good books it can:

Good news, The Bell in Codicote has reopened with new owners, a new

management team and new staff. A new restaurant is opening called Chimes, which will be offering a full varied A-la-carte menu. In the mean time you can still enjoy great food, prepared fresh and sourced from local suppliers.

Steve Baker, the General Manager has over 8 years experience in the hospitality industry having worked for Fullers Brewery and managed 4 and 5 star hotels such as the Grand in Brighton. He is also a trained chef and has worked at Michelin star restaurants such as Auberge du Lac

at Brocket Hall. Steve told me he sees a fantastic opportunity at the Bell and has some great plans for the future, his staff are well trained and are passionate about customer service.

Head Chef Terry Hukin has worked in 4 and 5 star hotels and restaurants in London and previously at the Grove in Watford. He is very passionate about European food and enjoys cooking good quality English Food with some variations, he also loves fish so you will find a great selection of fish dishes on the menu such as Traditional Wing of Skate served with Lemon, Basil & Caper butter and finished with

Samfir. There are some fantastic starters including Seared King Scallops and Black Pudding on a Sweat Potato Puree finished with Beurre Blanc and Chicken Liver Parfait on Melba Toast and Brandy Apple Compote. The main courses include Best End of English Lamb served with a miniature Shepherd’s Pie and a Rosemary and Red Wine Jus and Slow Roasted Belly of Pork on a Wholegrain Mustard Mash with a Creamy Cider Sauce.

A Traditional Sunday lunch is served every Sunday from 12.30pm to 4.00pm where you can enjoy three courses for £16.95. The meat is of a very high quality from a local award winning supplier and includes Rib Eye Roast Beef, Rare Breed Pork, Lamb and Chicken with all the trimmings.

From meeting Steve and Terry, it is clear that they are enthusiastic and passionate and we look forward to returning next month to sample the menu.

COMING SOON…Arriving shortly is a new purpose built secure children’s play area so you can enjoy a drink or a bite to eat outside while the kids are playing.

They have started a major refurbishment project on all 25 rooms which will include new LCD TVs with Freeview and free WIFI will be available on request. New bathrooms are being installed with modern fi ttings giving them the high standard of rooms the modern traveller expects.

A new wine menu is available offering an excellent section of wines from around the world available by the glass; you can enjoy everything from a glass of Pinot to a glass of Champagne. Monday to Friday is happy hour from 5pm to 7pm where you can get discounts on selected drinks.

Various events are being planned including Charity Quiz Nights, Cookery Lessons and a Beer and Cider weekend festival during the August Bank Holiday. The bar will now have Sky Sports for match days.

There will be an offi cial re-launch party on 23rd July which will be hosted by comedian Jimmy Jones, it will be an all day event with live music, hog roast and BBQ.

The Rusty Gun has been open for a year now and to celebrate the bit that was not done a year ago, the outside area, has received a

£30,000 makeover. We featured the Rusty Gun last year before it had opened and this month we return to hear about the exciting new developments.

When you visit the Rusty Gun, it is clear that it is much more than a country pub with great food.

There is a Farm shop stocking a range of produce from various local suppliers, you can pickup Honey, Wine, Chocolate, Hen, Duck & turkey Eggs, soaps, jams, marmalade, cheese, mustard, organic juices

and much more all made in the local area. The Rusty Gun a year ago had a pair of disused

paddocks, one has now been transformed into a farm with rare breed pigs including Gloucester old Spots, Tamworth, Saddle backs and Iron Age Pigs (bred with wild boars). The pigs are bred on the farm and there is currently a selection of the prettiest young piglets walking around, it is nice to see the amount of space they have to roam around in. Paths have been laid so you can walk and see the pigs.

Balkans style green oak rotunda complete with seats around a central fire pit for al fresco dining all year round. There is a new nature pond and meadows with wild flowers, the garden has gained Quince and Bramley apple fruit trees. You can enjoy a game of chess on a giant lawn chess set and there are three Alfresco Hot Plancha tables where you can cook your own meal from a selection of meat, salad, chips

and marinades. A vegetable patch and herb garden is being planted and the produce will be stocked in the farm shop.

There is a fantastic selection of Australian Yalumba wines and the bar stocks organic presses and cordials with very few of the usual boring soft drinks so often found. The Rusty Gun even has its own bitter - Rusty Gun Bitter which is brewed exclusively by a Micro brewery, you can even buy 8 pint casks to take home with you from the shop.

Award Winning Head Chef Jollan D’Souza has worked in a selection of Michelin star restaurants was a Head Chef at 21 and spent 18 months working in France. There are two menus available; a traditional menu offering dishes such as Battered Fillet of Fish which is cooked with Rusty Gun Bitter, Moules Marniere, Rusty Gun’s hand pressed fillet burger and Pink Roast Rump of Windermere Lake Beef.

Chef explained that he likes to take something classic and give it a twist and this is seen in the specials menu with starters such as Pan Seared Curried Scallops with Chorizo Jam, Smoked Cauliflower Puree, Baby Herbs and Lime Pickle, or Rusty Gun Pork Pie and cold pressed Fois Gras. Mains Courses include Fillet Steak with a Beef and Truffle Pastie, Roast Loin of Rusty Gun Pork with cheese and Chutney Sausage Roll, Russet Apple Puree, Potato Gratin and Wilted Greens finished with a Sloe Berry Sauce and Pork Scratching.

There is also a new ’retro style’ garden menu, offering basket food, delivered with Rusty Gun care, such as Scampi and Chips, Roast Beef in a Bun, Chicken in a Basket, Battered Fish in a bap with chips etc..

Everything is cooked fresh and as much as possible is sourced locally including Hertfordshire Beef, Knebworth Venison, even the puddings are handmade on the premises. The Rusty Gun Kitchen use a lot of wild produce and go foraging themselves

for mushrooms. The Business uses a lot of green

technology including Induction cooking using 90% less energy than gas and Michelin Kitchen style water baths, which allows food to be cooked with extra ordinary care. (Used in less than 0.1% of kitchens

in the UK)You can enjoy a Premium

Sunday Carvery for £11.95 which is cooked in small batches in the morning as if it was being cooked at home, there is Roast Shoulder of Pork and Topside of Beef which is cooked in a water bath for 12 hours and will just melt in

your mouth. Food is available daily from 12pm to 3pm, 5.30pm to 10pm weekday and all day over the weekend.

There are a range of events at the Rusty Gun, with a 10 mile dinner being a favourite where all the

ingredients of the meal come from within 10 miles of the business. Over the summer there are hog roasts planned, more 10 mile dinners and a range of other events to enjoy.

Since setting up my own business in 2007 I have met many business owners who

struggle to maintain a work-life balance that allows them to enjoy all aspects of their lives whilst building

their business. Here are some tips to help achieve a healthy and happy lifestyle whilst growing a successful business.• Create a timetable and factor in ‘me’ time. It’s

all too easy to allow work to take over and if you don’t create non-negotiable blocks of time for yourself you will soon find that you are running yourself ragged and unable to give your best to your business and your clients.

• Don’t let your business control you. It is a separate entity that should be under your control. Establish an ‘agreement’ between yourself and your business and how much time you will give to it. You will achieve a more balanced lifestyle and keep yourself sitting firmly in the driving seat!

• Manage your clients and don’t overpromise. It is all too easy to fall into the trap of responding to every whim of your client. Be clear about what and when you can deliver and they will respect you for it. Those that don’t may not be worth having.

• Make contingency plans and get support where you need it. Don’t try to do everything yourself. Delegate the bits you’re not so good at to people who are. Make sure there is someone who can step in if for any reason you have to step out of the business for a period of time.

• Take care of your health. What can be more important? Take time out to follow a healthy fitness routine and don’t feel guilty about it. Looking after yourself is the most critical aspect of being successful in business.
