garden Veggie Burger

1WHAT YOU NEED

DIRECTIONS

Morningstar Farms® patty

slice provolone cheese

T reduced fat mayo

t curry powder

tomato slice

red onion slices

ring of favorite pepper

whole wheat bun

1. Cook patty according to

package directions.

2. Top burger with cheese slice. Let stand for one

minute.

3. In small bowl stir together mayo & curry powder. Spread on bun. Top with burger, tomato slice, red onion, bell pepper & bun top.

4. Serve with fries or vegetables on the side & enjoy!

homemade black bean Burger

5 hamburger buns

3 T extra virgin olive oil

1 t chopped garlic

1 can black beans

1 grated lime rind

1 t chili powder

2 chopped fresh oregano

1 pinch of salt

1 large egg, slightly beaten

WHAT YOU NEED

DIRECTIONS1. Place bun in a food processor, process until crumbs measure about1 cup. Transfer to a bowl.

2 Combine 1 tablespoon oil, garlic, lime, chili powder, oregano, and beans in processor, pulse 8 times or until beans make a thick paste. Salt to taste. Scrape bean mixture into bowl with breadcrumbs.

3. With hands, divide bean mixture into 4 equal portions shaping each into a patty.Heat remaining 2 tablespoons oil in a large nonstick skillet over medium high heat. Add patties to pan, reduce heat to medium, & cook four minutes. Carefully turn patties over and cook for three minutes.

4. Customize this burger anyway you want and enjoy!

1 t chili powder

2 chopped fresh oregano

1 pinch of salt

WHAT YOU NEED

DIRECTIONS1. Preheat a large pan over medium high heat.Saute the onions in oil with a big pinch of salt for about 5 minutes, untillightly browned.

2. Add the oil. Addthe seitan and cookfor 7 to 10 minutes,until seitan is browned. Add garlic and blackpepper. Saute for abouta minute.

3. Mix in the broccoli and cover the pan to cook.. Cover until soft.

4. Add your favorite bbq sauce, toss to coat, and cook for about 5 more minutes. Sauce should become thick and bubbly.

5. Salt, season, and serve!

seitan fajitas

WHAT YOU NEED

DIRECTIONS1. Cut the seitan into strips. Add the salt,cumin, and both types of ground pepper, and toss together until evenly coated.

2. In a large skillet add the onions and pepperstrips. Stir fry quickly over medium high heat.

3. Add the seitan and cook for about 7 to 10 minutes.

4. Warm the tortillas and keep them covered so they don’t cool off & dry out. Serve with sour cream, salsa, guacamole, beans, etc. Enjoy!

1 cup bell pepper strips

1 small yellow onion, in strips

1 pinch of salt

pan fried Tofu1 12 oz package f irm tofu

1 T vegetable oil

3 cups vegetable broth

1 T hoisin sauce

1 T soy sauce

1 T sesame oil

2 t fresh minced ginger

1 t sriracha

1 t roasted sesame seed

WHAT YOU NEED

DIRECTIONS1. Remove the tofu from its package. Cut the block in half and then into small slices.

2. Heat a non-stick panon medium high heat. Add 1 tablespoon of oil.

3. Fry the tofu for 4 minon each side until golden brown. Remove the tofu from the pan and place them on a serving plate.

4. Add the broth, hoisin sauce, soy sauce, sesame oil, ginger, and sriracha to the pan and cook for 30 seconds.

5. Pour the sauce over the tofu and enjoy!

Tofu stir fry

1 8 oz f irm tofu

1/4 eggplant, diced

8 sliced mushrooms

4 sliced carrots

2 sliced green onions

2 T fresh minced garlic

1/2 T fresh minced ginger

1 cup soyaki sauce

2

cups rice

WHAT YOU NEED

DIRECTIONS1. Start cooking rice. Pat dry tofu, then cut into cubes.

2. Heat wok. Add the tofu. Add half the ginger & half the garlic to the tofu after 3 minutes. Cook until the tofu is browned on all sides, about 5 minutes total. Take the tofu out of the pan & set aside temporarily in a bowl.

3. Reheat wok. Add in carrots, onions & then mushrooms. Cook until tender & add to tofu.

4. Add eggplant to wok, cooking until it starts to get brown and tender. Add last of garlic & ginger, stir-fry 1 minute. Add in tofu & other cooked vegetables. Add soyaki sauce. Turn heat down to medium, simmer for five minutes. Enjoy!
