We all know that vegetables are good for us. Some of the most nutrient dense options are the green family. Unfortunately, I often hear that people are avoiding these veggie gold mines. The reason for limiting them is usually that they are on a “blood thinner”. The term “blood thinners” refers to anticoagulant therapy that includes the medications Coumadin and War-farin. These medications prevent coagulation (clotting) in the blood. Green veggies contain Vitamin K, which has a direct interaction with blood thinning medication. To avoid a nega-tive reaction, the recommendation is to have a CONSISTENT Vitamin K intake. But, what does that mean? One might reasonably conclude that avoiding sources of Vitamin K in the diet would bethebestwaytogetthefullbenefitfromthemedication.
Vitamin K is actually very important to our health andallowing,orcausingadeficiencyisnotwith-out consequence. It is involved in many bodily functions including bone health, growth, dia-betes, pregnancy, cardiovascular health, renal (kidney) health, and some cancers. Plus, these foods provide other important antioxidants, like lutein. Lutein is known for its role in eye health and prevention of blindness. Greens also con-tain Vitamin C, Vitamin A, folate, potassium and fiber,nottomentiontheyareverylowincalories.
We now know that elderly people need more Vitamin K than the adequate intake level in ordertoavoiddeficiency.Avoidanceofthesehealthy vegetables has been associated with an increased risk of osteoporosis and cardiac and renalcalcification.
New research shows that an inadequate level of Vitamin K can negatively affect metabolism. This suggests that Vitamin K plays a role in obesity and diabetes also!
So, I’ve made the case that Vitamin K is impor-tant, but we know it interferes with blood thinning medications. What should we do? Variability of these medications and Vitamin K is especially dangerous. It is recommended that people who take blood thinners have a CONSISTENT but ADEQUATE amount of Vitamin K in their diets. This means that people need to include green veggies in their diets regularly. In other words, it is not advised to consume a bag of raw spinach one day and avoid leafy greens for the rest of the month. One might want to include a serving of vegetables high in Vitamin K every day.Aservingisdefinedas1cuprawor½cupcooked veggies.
The most important point is to NOT MAKE CHANGES IN VITAMIN K INTAKE WITHOUT FIRST TALKING WITH YOUR DOCTOR/NP/PA!! Your medication will need to be ad-justed to accommodate the Vitamin K in your diet.
What foods contain Vitamin K anyway? The top sources of this vitamin along with other nutrient heavy hitters are: Kale, broccoli, parsley, spin-ach, Swiss chard, Brussels sprouts, leaf lettuce and iceberg lettuce.
In conclusion, restricting Vitamin K is not recom-mendedasdeficiencyisassociatedwithmanydisease states. It is essential to talk about your intake with your medical provider. The medica-tion will need to be adjusted by your provider to counterbalance the Vitamin K in your diet. Do not make changes without talking with your medical provider.

Free Income Tax Assistance
AARP Foundation Tax-Aide sites across North Dakota will open beginning the week of February 1 to help people prepare their 2017 tax returns. This free service is avail-able to low- and moderate-income taxpayers of all ages with special attention to those 60 and older. You do not have to be an AARP member to take advantage of the service.
IRS-certified volunteers are trained to assist in filingaccurate returns and help taxpayers receive all of the benefits,credits,anddeductionstowhichtheyareen-titled.AllAARPTax-Aidesitese-filereturns,alsoatnocost, which helps taxpayers get refunds quickly. Every taxpayer’s return is quality reviewed and all information iskeptconfidential.
Last year in North Dakota 9,199 people were helped with their federal and state tax returns. This year more than 100 volunteer preparers and client facilitators will staff 10 sites across the state.
Individuals should ensure that they have all of the docu-mentstheyneedtofilebeforecomingtotheTax-Aidesite,including Social Security cards, photo IDs and a copy of last year’s tax returns.

* Transportation is available in the city of Lisbon from 8 am. - 4pm, Monday through
Thursday. Fridays 8 am to 3 pm. First ride will be given at 8:15 am. Last ride will be given at 3:45 pm.* Transportation to Fargo is available the sec-ond and fourth Tuesday of each month, and every Thursday. Time spent in Fargo will be from 10 am- 4 pm, unless all riders are done earlier.* Transportation from surrounding towns in Ransom County into Lisbon is available monthly from 9:30 am. - 2:30 pm.
