have to start facing reality and the challenges of living in an over-populated world where technology keeps eliminating more and more jobs. Personally, I think the “end of the world as we know it” already occurred in the 1980s; and we’re just day-dreaming in some sort of surrealistic nightmare where the majority of people are living zombies taking commands to watch, consume and conform from the self-appointed cretins in charge. What does any of this have to do with an entertainment guide? Everything. Let’s face it, entertainment is a diversion from reality. The more reality bites, the more we indulge in things that take our minds off of uncertainty and the day-to-day struggle to survive. And for most people, modern existence consists of work-eat-sleep and do it over again, with a little playtime on the weekend, and a (charged) summer vacation. Of course, entertainment is also fun, which is why we publish this guide. Even though most people spend more time living other people’s lives—the TV, sports, music and movie stars. Like anything else, even diversion is o.k. in moderation. That said, there’s a lot to do in Indiana—most of which involves face-to-face interaction with people—old school social networking. Let’s talk beer drinking this month. And my apologies to the fine wine and liquor connoisseurs—even the high-end craft beer drinkers (let Kenly deal with you on page 28). I’m speaking about good old, out-of-the-tap pint glasses of draft. They’re pretty easy to find in this town, but they vary in price, quality and manner of service. The first thing I can’t stand is a beer served without a head. And I know that many bartenders (and you know who they are) think they’re doing you a favor by squeezing in an extra ounce or so; but when you eliminate the head, you diminish flavor. Make sure you get about an inch of froth at the top. But keep in mind, it’s not always the fault of the the pourer, sometimes it’s the tap system, or detergent left in the glass; or, it could just be bad beer. If you’re not getting foam, you might want to try another brand.

Next, avoid plastic cups if possible. This can be difficult, particularly at the high-volume bars—which understandably push them on busy nights. But if you’re downing beers like you’re at a keg party—you’re probably not thinking of taste unless it’s really crappy beer, or it’s too warm. My advice is to go early, get a good seat at the bar and ask for a glass. By the way, Sam Adams is best drunk from their etched glass (The Coney). As for beer specials… “If you’re having more than one,” you can find beers on sale every day. It’s not as nutty as the happy hour “well drink wars” (which are ridiculous), but there are some real bargains out there. I listed a couple for each day on the calendar (centerfold).

But we don’t choose where to go out to drink just because of the price. If that were the case, we’d all stay at home with a 12-pack. Fermented beverages are best when served out of a tap; and when poured properly by a friendly, somewhat intelligent bartender in an environment conducive to fun. After all beer drinking is a social experience. —Hell, you go as far to say it’s patriotic—many of the Founding Fathers were not only big beer drinkers, but guys like Franklin, Jefferson and Washington were home brewers. Here’s a hand-written recipe by the First President:“To Make Small Beer… Take a large Sifter full of Bran Hops to your Taste. Boil these 3 hours then strain out 30 Gallons into a cooler put in 3 Gallons Molasses while the Beer is Scalding hot or rather draw the Molasses into the cooler & Strain the Beer on it while boiling Hot. Let this stand till it is little more than Blood warm then put in a quart of Yeast. If the Weather is very Cold cover it over with a Blanket & let it Work in the Cooler 24 hours then put it into the Cask Leave the bung open till it is almost done Working—Bottle it that day Week it was Brewed.”

Anyway, the bottom line is, whether it’s watching a game, having a meaningless discussion about insignificant matters, talking politics or the opposite sex, or listening to good music louder than you can at home; it’s about the people you’re with and the surroundings you’re in. And without sounding like a slogan, there’s nothing like good beer with good people. And as party hosts, it’s the responsibility of the bar and bartenders to make sure people are having a good time. There’s nothing worse than walking into a too bright or too dark bar, with no music playing and trying to get the attention of a bartender who thinks they’re more important than you, or is busy texting; and then pours you a warm or flat beer. I frequent a lot of bars in preparation for each issue, and I can’t believe how some places just don’t get it. Anyway, if you see a portly fellow with a cap seated at the bar for a couple hours, I’d say you found one of the finer draft beer establishments. Last, let’s not forget restrooms—considering the frequency of visits by us beer drinkers, they do matter. See you at the bar; or, as Cage shoutedin Leaving Las Vegas, “Let’s get a drink!”

This month, the Beerman’s Corner returns to Belgium; this time to a Trappist monastery in Chimay in the southern province of Hainaut. Notre-Dame de Scourmont Abbey is home to Chimay Brewery, one of only seven in the world to produce Trappist beer. Trappist monks live by a 1500-year old set of directives written by St. Benedict of Nursia, one of which is to support their communities by creating goods with their own hands—such as foodstuffs and even coffins. The monks of Scourmont Abbey established their brewery in 1862, where they also produce fine cheeses—including the “Chimay With Beer,” featuring what else? A Chimay beer-soaked rind. The first to label its beers as “Trappist Ales,” Chimay makes three varieties plus a patersbier, or “father’s beer,” a weaker ale, available only in the monastery and to the monks for their own consumption. Commercially available are the Rouge or Red Cap (also referred to as “Premiere”); the Bleue or Blue Cap (“Grande Reserve”); and, the Blanche or Chimay Triple. The Red Cap is the firstborn of the Chimay ales, based upon the monks’ original 1862 recipe. 7% alcohol by volume and a rich mahogany in color, it is sweet, fruity and yet slightly tart. Described by some as “easy to drink,” the Rouge is best served in a glass at around 50°-60°F. Recommended pairings include cheese and pork. While Belgian beers are known to age well, Chimay suggests enjoying the

Red Cap within a year. Chimay Bleue, in comparison, is 9% alcohol by volume and may be kept years before opening. A brown beer with flavors of pepper, raisins and toffee, it is also best served in a glass and between 50°-60°F— though some prefer it as cool as 45F. Like the Rouge, it is also good with cheese. Other suggestions include spicy seafood dishes, lamb and barbecue. The baby of the family, golden Chimay Blanche, or Triple, is 8% alcohol by volume. Spicy, fruity and often described as “champagne-like” and effervescent, it should be served between 43° and 46°F, in a glass. Seafood, chicken and salads are tasty partners for this summery beer. The Chimay ales are highly drinkable and accessible in more ways than one. You may find a bottle of any member of the family at our local Giant Eagle. And, during the month of January, H.B. Culpeppers on Philadelphia Street will be featuring Chimay Blanche (Triple) on draft and giving away a free Chimay Crystal glass with purchase, while supplies last, of course.
