Lunchboxes are something I get quite excited about. I don’t know why but it is something I get a kick out of. Crazy I know. Maybe I’ll change my mind when I have two at full time school in February 2015.
I can appreciate that lunchbox ideas are often hard. We end up repeating the same thing day in and day out, not that children mind all that much I’ve found. It’s always good to add some variety though.
I’ve created this little booklet for you to make lunchbox filling just that little bit more easy but also fun and to encourage children being involved in the process. This booklet has a broad selection of ideas. They will not suit everyone, allergies and eating styles. These are just popular ideas and recipes in my home and on the blog.
Included are a variety of printables that make lunchbox planning easy and organised as well as a few extra goodies to make it fun also.
We also showcase some great businesses that sell fantastic items for back to school. Some you will have seen before as Im big sup-porters of their products but also some newly discovered gems.
I hope you find this useful and it makes life that little bit easier.

Peta’s tips for easier lunchbox prep!
A lot of schools now have exclusions on some food items such as eggs or nuts. Check with your school to ensure you pack a safe lunchbox for all (we all know how kiddies love to share their food).
Involve the children in planning their lunchboxes. They will be much more likely to eat what is in it if they have had ownership over it (and no I don’t mean letting them pick lollies and chips only). Use our lunchbox planners to help with this process.
Ensure the lunchbox and drink bottle are age appropriate and easy to use. Nobody wants to battle a hard to open clip when hungry (or hangry in my case!).
Pack lunchboxes the night ahead if possible. This saves time in the morning if you know you will be in a rush. I often will pack the night before and then in the morn-ing just add the last minute pantry items that would go soggy if placed into the fridge.
Prepare ahead wherever possible. Sandwiches with fillings such as cheese and ham, jam, nut butters, vegemite and cheese freeze very well. If space allows, make up enough sandwiches at the beginning of the week and freeze in freezer safe sandwich containers or zip lock bags. Simply pull out of the freezer and pop into the lunchbox to thaw. Frozen fruit such as orange quarters, grapes and bananas also keep the lunchbox cool and are great prepare ahead snacks.
Lunch doesn’t always mean sandwiches. Leftover chicken drumsticks, sausages, sausage rolls, meatballs, quiches and wraps all make great lunchbox additions. My kiddies enjoy these cold but if your school has a microwave even better!

I say this all the time but bake in bulk and freeze. There are a variety of muffins, cakes and biscuits on the blog that are great for the freezer. I store them in ziplock bags or wrap in aluminium foil and cling film and place into a freezer safe container. You want to avoid freezer burn.
Most vegetables and fruit do really well stored, cut up in containers for up to a week, particularly if you have a specific fridge container system. At the beginning of the week, chop up your fruit and vegetables in to bite size pieces and keep in individual containers that you can grab in the morning or in a large container and portion out as needed.
Ensure you use ice bricks especially in warmer months to keep food fresh. A wet sponge frozen and placed in to a ziplock bag makes a great DIY ice brick. I love making frozen yoghurts and slushies, freeze them in reusuable pouches and pop into the lunch box. Even frozen muffins or slices of cake make great mini ice bricks and thaw in time for morning tea.
To prevent apple or pears from browning once cut, cover with a little lemon juice. Or soak in little water that has a teaspoon of citric acid added to it. Drain and pop into the lunchbox. Another great tip is cut the apple into quarters and remove the core. Place the apple together again so it looks whole and place a food safe rubber band around it.
Make it fun! No one said lunch had to be boring. Include lots of colour, tastes and textures. There are some great businesses featured in this guide that sell amazing lunchbox goodies to make lunch that little bit more enjoyable.

Lunchbox SuggestionsUtilise your freezer!Most Sundays I do a big cook up and prepare enough snacks for the weeks worth of lunchboxes or more. Things like cookie dough, cookies, muffins, pikelets, cakes, quiches, sausage rolls and meatballs to name a few can be easily frozen.
You need to prevent freezer burn so make sure what you are storing is wrapped correctly. I will either use zip lock bags or wrap in a layer of cling wrap then aluminium foil. I then store them in a freezer safe container.

Ingredients
100g butter, cubed
70g brown sugar
70g honey
2 teaspoons vanilla bean paste
220g oats
40g shredded coconut
30g pepitas
15g chia seeds
50g sunflower seeds
50g caramalised buckinis
Instructions
Preheat oven to 180 degrees.
Place butter, honey, sugar and vanilla into the bowl.
Cook at 100 degrees for 3.5mins, speed 2.
Once melted add remaining ingredients.
Mix on speed 2 until just combined.
Press a tablespoon of mixture into each hole of a silicone muffin form or
greased muffin tin.
Press down and compact the mixture. This will make 48 bites.
Bake for 15-20 minutes or until golden brown.
Allow to cool. Keep in an airtight container for up to a week.

Ingredients
Cranberry60g dried cranberries
2 pitted dates
10g desiccated coconut
1 teaspoon honey
Apple60g dried apple chunks
2 pitted dates
10g desiccated coconut
Instructions
Place your first batch of ingredients (apple or pineapple) into the bowl.
Blitz on speed 7 for approximately 30-60 seconds. Each batch will differ slightly in
time due to texture and moisture in the fruit.
The longer you blitz the better it mixes and combines.
Stop and test the batch by rolling some in your hand. If it is too wet add a little extra
coconut. If its too dry add a little extra honey or an extra date.I didn’t find I needed
to with the amounts listed in the ingredients section but each dried fruit brand will
differ slightly in texture and moisture.
Roll into small balls and coat in desiccated coconut.
Store in the fridge for up to a week or freeze.

Ingredients
Bread150g self raising flour
80g desiccated coconut
90g sugar
35g coconut oil
250g milk
Lemon Icing80g icing sugar
1-2 tablespoons of lemon juice
Instructions
Preheat oven to 180 degrees and line or grease a small sized loaf tin.
Add all bread ingredients into bowl.
Blitz on speed 5 for 10 seconds.
Pour batter into prepared tin.
Bake for approximately 20-25 minutes or until slightly golden on top and cooked
through.
Once bread is cooled, combine icing sugar and half of the lemon juice
in a bowl. With a small whisk or spoon combine.
Drizzle in more juice until a thin lemon icing is achieved.
Spread over the bread.
10 Second Coconut Bread Serves 8

Ingredients
280g self raising flour
60g sugar
250mls milk
2 large eggs
2 teaspoons vanilla extract
1 teaspoon of baking powder
½ teaspoon of finely ground salt
45g melted butter
Instructions
Place all ingredients into bowl except the butter.
Blitz on speed 6 for 20-30 seconds or until lump free.
Add more milk if it appears too thick.
Add melted butter and blitz on speed 6 until just combined.
Place small spoonfuls of the batter into a frying pan on medium heat.
I do three at a time. I use a tiny bit of butter to grease my pan.
Once bubbles appear on the pikelet, flip over and cook for 30 seconds or until
cooked through.
NotesThese can be frozen.
Fluffy Vanilla Pikelets Yields 20

Ingredients
100g coconut oil or butter
80g honey
80g dark choc chips
200g oats
2 tablespoons dessicated coconut,
(optional)
Instructions
Preheat oven to 180 degrees
Line a slice tin with baking paper.
Add oil and honey to bowl.
Melt on 90 degrees, speed 2 for 5 minutes.
Add choc chips to the hot liquid and then the oats and coconut.
Mix on reverse, speed 4 until just mixed through and chocolate has melted.
Pour into prepared tin and press down. Compress slice well.
Bake for approximately 20 minutes or until you can tell its has hardened slightly.
It can be hard to tell due to the chocolate colour. Ensure you don’t burn it.
It doesn’t taste nice burnt (trust me on this one).
Place the tin onto a cooling rack. Do not remove the slice from tin.
Allow to cool completely, remove from pan and cut into slices.
Store in an airtight container.

10g flaxseed meal
Instructions
Place butter, honey, sugar and vanilla into the bowl.
Cook at 100 degrees for 3.5mins, speed 2.
Once melted add remaining ingredients.
Mix on speed 2 until just combined.
Press into a tin that has been lined with baking paper and let cool in the fridge
for an hour or more.
Store in the fridge for up to a week.

Ingredients
Dough220g lukewarm water
375g bakers flour
1.5 teaspoons yeast
1 teaspoon of salt
1.5 teaspoons of bread improver
OptionalMilk or egg, lightly beaten
Sesame seeds
Instructions
Add the ingredients in this order: water, yeast, flour, improver, salt.
Blitz on speed 7 for 10 seconds to roughly combine. Knead for 6 mins.
Remove dough and place into a lightly oiled bowl. Cover with cling film and place into a
warm spot. I use the front seat of my car or a warmed oven.
Leave this to rise for approximately an hour or until doubled.
Remove dough from bowl, knock out the air by shaping your dough into 7 bread rolls.
Place them onto a lined tin in a flower formation (one roll in the middle and 6 around it) en-
suring they slightly touch.
Brush with a little milk or egg wash and sesame seeds.
Allow to rise until almost doubled in size.
Preheat oven to 180 degrees. Bake for approx 30-40 minutes.

Ingredients
220g lukewarm water

1.5 teaspoons of bread improver
3 tablespoons each of pepitas and sunflower seeds
1 tablespoon each of chia seeds, poppy seeds, seseme seeds, flaxseeds
Instructions
Add the water, yeast, flour, improver and salt in that order.
Blitz on speed 7 for 10 seconds to roughly combine. Knead for 6 mins.
In the last 30 seconds add the seeds.
Remove dough and place into a lightly oiled bowl. Cover with cling film and place
into a warm spot. I use the front seat of my car or a warmed oven.
Leave this to rise for approximately an hour or until doubled.
Remove dough from bowl, knock out the air by shaping your dough into a loaf shape.
Combine coating seeds on a plate and roll your dough in them.
Place the dough in to a bread tin and sprinkle over any remaining seeds from the plate.
Allow to rise for another 30-45 minutes in the tin. Due to the seeds, the
second rise needs to be a little longer than a traditional white loaf.
Preheat oven to 180 degrees. Bake for approximately 30-45 mins.

Simply roll out small balls of pizza dough of choice. I use the below recipe of mine. This is plenty for
32 pizza pops. You can halve it if you prefer if you want a tray of 16 as shown in the photo.
Ingredients
220g lukewarm water
375g bakers flour
1.5 teaspoons yeast
1 teaspoon of salt
1 tablespoon of oil
200g cheese
Pizza fillings of your choosing
3 tablespoons tomato paste
Instructions
Add the ingredients in this order: water, oil, yeast, flour, salt.
Blitz on speed 7 for 10 seconds to roughly combine. Knead for 6 mins.
Remove dough and place into a lightly oiled bowl. Cover with cling film and place
into a warm spot. Leave this to rise for approximately an hour or until doubled.
Remove dough from bowl, knock out the air by shaping your dough into balls.
Allow to rise for another 30 minutes, ensuring it is covered.
Pop a little filling on the flattened out balls of dough, roll up into a
ball by dragging the edges towards the centre and press the
ends together. Brush with milk or egg.
Bake at 180 degrees for about 20-30 minutes.
Pizza Pops Yields 16-32

Ingredients
300g dried apricots
50g pitted dates
100g dessicated coconut
2 tablespoons desiccated coconut
for coating, (optional)
Instructions
Place everything into bowl.
Blitz on speed 7 for 20 seconds.
Increase speed to 10 for 30 seconds.
Line a small loaf tin with baking paper.
Spoon mixture in and smooth out using the back of a glass or your tmx measuring
cup that has been covered with a little baking paper to avoid sticking.
Refrigerate for 1 hour then remove from tin.
Slice into 12 bar shapes and then into pieces. I got 40 small squares from mine.
Place squares and coconut into a bowl. Toss until coated.
Refrigerate in an airtight container.
NotesIf the mixture is too dry, process a little longer or add an extra date.
You can use medjool dates however they are quite sweet so
taste the mixture as you go.

Ingredients
3 slices of day old bread
500g chicken breast, chopped
110g broccoli florets
1 small carrot, chopped roughly
1 onion, peeled and quartered
2 small garlic cloves, peeled
Salt and pepper, to taste
Instructions
Preheat oven to 180 degrees.
Line a baking tray with baking paper.
Place bread in to bowl. Blitz on speed 7 until desired consistency, as fine or coarse
as you like. Set aside.
Add onion, garlic and vegetables to bowl.

Blitz on speed 7 until combined. Approximately 5-10 seconds.
Shape into 18 small nugget shapes.
Coat with breadcrumbs.
Place onto tray. Drizzle with a little olive oil.
Bake for 30 minutes. Flip halfway through cooking.
Serve.

Ingredients
2 pieces of day old bread, wholemeal
or seeded works well
1 teaspoon parsley, or to taste
20g parmesan cheese
1 garlic clove, peeled
Half an onion, peeled and halved
400g can of chickpeas, drained and rinsed
1 egg
10g olive oil
Instructions
Place bread, parmesan and parsley into bowl.
Blitz on speed 7 for 8 seconds. Set aside.
Add onion and garlic to bowl.
Blitz on speed 7 for 5 seconds or until fine. Scrape down.
Add oil.
Cook at 100 degrees for 4 minutes, speed 2.
Add remaining ingredients including breadcrumb mix.
Blitz on speed 8 until well combined.
Shape into patties and shallow fry in a frying pan.
This will make 15 small patties in total.
Drain well on paper towel and serve.

Ingredients
500g good quality beef mince
1 onion, peeled and quartered
2 garlic cloves, peeled
1 egg, you can leave this out
1 heaped tablespoon of honey
1 tablespoon of soy sauce
1/2 tablespoon of oyster sauce
Pepper, to taste
1 teaspoon of sesame seeds
Dipping sauce3 tablespoons soy sauce
1 spring onion, sliced
Instructions
Preheat oven to 180 degrees. Place onion and garlic into bowl.
Blitz on speed 7 for 5 seconds. Scrape down.
Add remaining meatball ingredients except sesame seeds.
Blitz on speed 4 for 6 seconds or until just combined.
Roll into 28 balls and place into large baking dish. Bake for 18 minutes.
Sprinkle sesame seeds over the top.
Combine soy sauce and shallots in a small bowl. Serve.

Ingredients
330g bakers flour, or plain flour
120g warm water
60g olive oil, a flavoured one would be fantastic
1 teaspoon Herbamare salt or salt of choice
1 egg, beaten
Extra Herbamare for sprinkling over the top
Instructions
Preheat oven to 180 degrees and line to baking trays.
Place flour, water, olive oil and salt into bowl.
Knead for 2 minutes. It will look like little pebbles.
Remove from bowl and knead with your hand to form a smooth ball of dough.
Divide into two balls. Roll one ball out on the baking mat or tray you will be baking on.
Roll the dough out into a large rectangle. Roll very thinly. The thinner it is rolled,
the crispier the cracker will be.
Using a pizza wheel or spatula, cut the dough horizontally and vertically to make
square or rectangle crackers. Repeat for second ball of dough on the other tray.
Brush with egg lightly and sprinkle with a little extra Herbamare of desired.
Bake for approximately 15 minutes, you may need to bake for a little longer
to cook the middle crackers. Just take out the cooked ones out and let
the middle crackers cook a few minutes extra.
Place onto a cooling rack.
Store in an airtight container.
