Presence of bacteria or other

microbes which infect the body

after consumption

Ingestion of toxins contained within the food, including bacterially produced exotoxins, which can happen even when the microbe that produced the toxin is no longer present or able to cause infection

Who contaminates food..? Mostly: pathogenic bacteria, viruses, prions or parasites Rarely: chemical or natural toxins (poisonous mushrooms or reef fish ), pesticides or medicines in food

Bacterial Pathogens Illness/ Symptoms

Campylobacter jejuni ( rarely life threatening)

Clostridium perfringens

Salmonella spp (zoonotic infections)

Escherichia coli O157:H7

Contaminated water, unpasteurized milk, poultry meat, household pets

poorly prepared meat and poultry

Unclean food particularly in Institutional kitchens/ restaurants,excrements, polluted water, eggs, cattleundercooked, contaminated ground beef, drinking unpasteurized milk, swimming in or drinking contaminated water, and eating contaminated vegetables.

Gastroenteritis, Peridontitis, less than 1 in 1000 cases- Guillain-Barre’ syndrome

abdominal cramping and diarrhea, Gas gangrene

Diarrhea, Salmonellosis, Typhoid Fever, paratyphoid fever

Bloody diarrhea,no fever and occasionally - sudden kidney failure. Other strains: gastroenteritis, UTI and peritonitis

1. Food from street vendors, dingy restaurants and the ones that are empty. X

2. Improperly cooked food (usually contaminated with dust) X

1. Drink only bottled mineral water.

2. If mineral water is not available, ask for boiled water

3. Do not drink beverages with ice.

4. Never ever drink water from roadside vendors, water sold in polythene bags, tap water, at restaurants and other public places.

5. Beware of cheap fake bottled water. Make sure to check that the seal of the bottle is intact.

6. Also, see if there is anything floating in it before buying.

Most important thing you can do to keep from getting sick !

Correct way to wash hands

1. Wet your hands with warm water, Apply soap.2. Rub hands together and scrub really well.3. Be sure to get under fingernails and in between

fingers.4. Scrub for about 10-15 seconds5. Rinse hands of soap & Dry hands well with a clean

paper towel or cloth.6. Turn off faucet with paper towel.

• Cover your mouth and nose with a tissue when you cough or sneeze, put used tissue in the trash.

• If you don't have a tissue, cough or sneeze into your upper sleeve, not your hands

• Wash your hands often with soap and running water, especially after coughing or sneezing

• Avoid close contact with sick people

• In case of nasty sunburn, visit the nearest clinic and get yourself treated.

• Do not roam around barefoot as it might give you fungal and parasitic infection. If you do, make sure you wash your feet thoroughly with clean water and soap and dry them quickly.
