TOASTED PECAN SWEET POTATOES
(makes one 9x9 casserole)
1 29 oz. can sliced sweet potatoes (drained and rinsed)1 cup granulated sugar1/4 cup melted butter2 eggs1 teaspoon vanilla extract1/3 cup evaporated milk
Topping1/2 cup dark brown sugar1/4 cup all purpose flour2 1/2 Tablespoons melted butter1 1/2 cups finely chopped pecans
1. Preheat oven to 350.2. Coat the inside of a 9x9 baking dish with non-stick cooking spray.3. With an electric mixer, beat the first 6 ingredients until smooth.4. Pour into the prepared baking dish.5. Prepare the topping by combining all the ingredients in a medium bowl to form
a crumbly mixture.6. Sprinkle on top of the creamy yams.7. Bake uncovered on center rack in oven for 25-30 minutes until browned on top.
(Cover lightly with foil if the topping begins to brown too quickly.)
