Inspector ReportByDarrell Hunter
HIGH WIND ALERT!
We had a trampoline recently launch into the air by strong winds and land about three houses down. Fortunately, no one was hurt, and property dam-age was minimal. After talking to the owner, she was surprised and meant no harm and explained that she had it professionally installed. So, let’s be reminded that Tiki is located in a very
high wind area and that high winds can happen without any warning, at any time.
I am even guilty of forgetting this and have lost several patio umbrellas or things have blown over. It is everyone’s responsibility to think about this for a moment and look around at potential missiles that can cause damage to not only your personal property but others. I have seen the lighter weight patio furniture and decorations blowing off decks or in the canals. Some people don’t even notice they are missing for a long time. When leaving your home espe-cially for a week or longer take a minute for a wind check and stack the chairs or tie down the objects that can blow around. I will try and be more observant and tidy up my house, how about you?

Christmas - The Best Things in Life, are not ThingsBy Jesse Castillo
Christmas is a wonderful time of the year when we celebrate the birth of Jesus Christ with a large variety of traditions with family and friends such as Christmas trees, lights and decorations, parties, turkey dinners, music, outdoor deco-rations, boat parades, gift exchanges, charitable help to those in need and a solidarity of peace and good will. These are all good things.Of course, the true meaning of Christmas is Love. The gift of Love as God sent his son, Jesus Christ to positively change the world forever. John 3:16-17 says, “For God so loved the world that he gave his one and only Son, that whoever believes in him shall not parish but have eternal life. For God did not send his son into the world to condemn the world, but to save the world through him.” The true meaning of Christmas is the celebration of this incredible act of love.Through Jesus Christ, we are given the most important gifts in life. All of those intangibles we give and receive on Christmas Day and throughout the year. Some are easy, and some are challenging but all help us become better Human
Beings. Let’s start with Love, being at peace with one’s self, caring, small acts of kindness, sharing, patience and forgiveness, being a better listener, tempering mo-ments of anger, thinking before speaking, hope, charity, humility, prayer, joy and laughter, being positive, learning to recognize and embrace Life’s wonderful little moments that we never forget, helping others to achieve the aforementioned and the list goes on. I’m happy to achieve any one of these intangibles on a daily basis. The challenge is to stay focused and not to get caught up in the day to day world which moves faster and faster in its complexities on a daily basis. The other Sunday, Pastor Bob of the Tiki Chapel spoke of Thanksgiving and dealing with changes in our lives. I don’t remember his exact words, but it was a reminder that despite how fast the world changes, Jesus Christ will always be the constant in our lives that will not change. I find that very reassuring and inspirational. - Merry Christmas Tiki!

Ms. Claudine’s Buttermilk Pecan Pie. Concetta Maceo Y’all, I’m going to be honest. I used to hate pie. I mean, really hate. I thought itwas the most over-rated dessert that should have gone out with aspic‘salads’ and carpeted chartreuse bathrooms. That is, until my mom’s friendClaudine brought this Buttermilk Pecan Pie to a Christmas get-together. It’sabsolutely life changing. Serve with a scoop of your favorite vanilla ice cream. Ingredients: 2 ¾ cup sugar 4 eggs 2 teaspoons Madagascar Vanilla 3 tablespoons flour 1 ½ sticks margarine, melted (3/4 cups) 1 ½ cup buttermilk ½ cup cinnamon graham crackers crushed ¾ cup Honey Toasted Pecans 2 Pie Crust (premade 2 pack: Pillsbury 9 in. pie crust) Directions: Preheat oven to 325° F. Crush your graham crackers using a food processor. Mix sugar and eggs ina large mixing bowl. Next, add the vanilla and flour, and then stir in themargarine and buttermilk. DO NOT BEAT. Fold in crackers & pecans intothe mix and pour evenly into the two pie crusts. Cover the rim of the pie withtin foil so the crust doesn’t bake too fast. Bake about 45 minutes, or until thecenter is firm. Let cool. Tip: Blind baking the crust before adding the filling will give the crust a niceflaky texture. Be sure to use baking beads to keep the crust from puffing up. Yields 2 pies Expect this recipe to take approximately 1 hour, including cook time.

Hi, I’m Cooper
I knew he’d be the best Dad ever, so I ran and jumped in his arms and saved him! I was just a skinny, hungry puppy then but now I’m a year and a half old and I have an awesome life on Tiki Island. I love spending time with my family, long walks on the beach, boating, golf cart rides and playing with my friends Jackson and Murphy. I hope to see you around Tiki!
I rescued my Dad and Mom (Jeremy and Tammy Benefiel) when I found them about a year ago. My Dad was just getting to work at the fire station in Houston and it was still dark out.
