JUNGLE FACTS • Why is the jungle so diverse? 30 million years ago, the area that is now the Amazon jungle entered a long dry period. The tropical rain forests growing there at the time were wiped out, and only isolated pockets of jungle surrounded by vast grasslands remained. Each pocket of jungle followed its own evolutionary course over thousands of years. • When the climate once again became warm and wet following the last ice age 10,000 years ago, the different types of jungle grew together again, with each forest contributing many different species of plant and animal. • As a result, the South American forests are the most diverse in the world. Whereas many temperate forests are composed largely of just a few species of tree, in the Amazon you may have to travel a mile or more to find two trees of the same species. • In any North American forest it is rare to find more than 15 species of tree in the entire ecosytem. In the Amazon, a five-acre plot may contain between 100 and 250 different species. • In the northern deciduous forests of the temperate climates, every tree drops its leaves at the same time, triggered by the change of seasons. Thus, each year the forest floor receives a huge boon of nutritious new dead material all at one time. This stuff gradually turns into rich soil. • But in the tropical rainforest, no change of season occurs so no massive leaf drop ever happens. Tropical trees drop their leaves gradually over the entire year. UNENDING RAIN• In temperate forests, it usually rains only

sporadically, but in the Amazon, it rains daily. Millions of years of daily rainfall combined with constant heat leached the nutrients from the soil,

leavingithighinaluminumandironoxideswhichare responsible for the soil’s characteristic red color. The soil is highly acidic and unable to support much plantlife.Withouttheconstantfallofdeadmaterialfromabove,thedirtisworthless.

• Sotheecosystemoftherainforestisup-side-downin comparison to other forests: the nutrients are storednotinthesoil,butinthelivingcanopy.Whenthe forest is cut and burned, the only nutrients left are in the ashes.

• Afterthetreesarecutdowninatropicalrainforest,nutrients in the soil disappear after only a few harvestsofcrops,andthesoilissoonlostentirelytoerosion,nevertobereplaced.Oncetheforestiscleared,itisextraordinarilydifficulttoreversethedamage.

THE DESTRUCTION• A forested landscapeacts as a living reservoirbytrappingrainfallandreleasingitslowly.Inthedensejungle,thecanopyissoheavythatthewaterfromadriving rainstormmay take10minutes to reachtheground.Rainiscaughtbyleavesandtrappedinhollowswhereitevaporatesgradually.It’ssuckedup by roots and it soaks into soil that acts like a sponge. Rain feeds underground springs.

• Butwhenthelandiscleared,rainfall isnolonger

absorbed.Therearenoleavesandbranchestoprotectthegroundfromthepoundingrain.Waterrunsoffimmediately,takingthesoilwithit.Exposedtothesun, the ground becomes an unproductive hard-packed cement. The small amounts of nutrients in the soil are quickly leached away.

• A2.5acretractofhealthygrowingrainforestwillloseanaverageof threepounds(1.3kg)ofsoil througherosion annually. Cut the forest, however, and thesameareacanloseupto34tonsofdirtinayear.

• Halfoftherainthatfallscomesfromwaterevaporatingfromtheforestbelow.Withnoforest,thelanddriesquickly and offers no moisture to be turned into more rain.When the forest is gone, the rain is gone too.Drought,erosion,andfloodingresult.

• It’sbeenestimated that theAmazonproduceshalfofalltheoxygengeneratedbylandplantsonEarth.Withouttheclimate-moderatingeffectsoftheforest,temperatures would rise. Rainfall would plummet. Loss of the Amazon could cause a change in the globalenvironment.

THE INCREDIBLE AMAZON• Covering about 2.1million squaremiles of land,theAmazonrainforestisabouttwo-thirdsthesizeoftheU.S.TheAmazoncoversapproximately40%of the SouthAmerican continent. If theAmazonwere a country, it would rank 9th in size

• Around60%of theAmazon is inBrazil;13% inPeru; 10% in Columbia; and six other countriessplit the rest.

St. Patrick’s Day the Traditional Way

I read an interesting nationwide St. Patrick’s Day survey recently, which found that regardless of family roots or Irish heritage, the holiday is more about food and family than drinking. More than 30 percent of respondents said they celebrate at home or at the houses of friends and family mem-bers. Less than 14 percent of those who participated in the survey cele-brated at a bar or local pub.

If you’re planning to celebrate the holiday at home, my traditional St. Patrick’s Day menu is easy to prepare ahead of time. The main course is a Lamb Stew with Root Vegetables and Pearl Barley with a side of Northern Irish Potato Bread. Here’s a little his-tory about my traditional Irish menu and recipes:

IRISH STEW: This dish origi-nated from the old ways of cook-ing over an open fire. A good Irish stew should be thick and creamy, not swimming in juice. Adding potatoes and pearl barley gives the stew body and makes it a hardy, main-course meal. Carrots are typically added for extra color and interest.

The authentic Irish recipe calls for mutton, which is usually an older lamb with a tougher texture of meat, which made it perfect for stewing. I suggest using lamb from Australia, which is read-ily available at most American grocery stores. It’s juicy, tender and raised to a specific size and weight that produces a quali-ty product that is nutritious, slightly leaner than beef, and less expen-sive than American domestic lamb. BREAD: Northern Ireland’s love of the potatoes is part of a rich legacy of dishes, including this recipe for pota-to bread (also called fadge or farls). Typically, this bread recipe incor-porates leftover boiled and mashed potatoes.

Try these traditional Irish recipes and use Australian lamb to add a modern twist to your St. Patrick’s Day menu

Lamb Stew With Root Vegetables And Pearl Barley

2 pounds boneless Australian lamb shoulder, trimmed of fat and cut into bite-size pieces 1½ teaspoons salt 1½ teaspoons freshly ground black pepper 1 tablespoon all-purpose flour 1 tablespoon olive oil, divided 1 or 2 medium Irish or white pota- toes, scrubbed and cut into 1/8-inch rounds 3 medium carrots, cut into 1/4- inch rounds 2 large yellow onions, chopped 4 cloves garlic, minced 1 cup pearl barley 4 cups water or chicken broth 2 tablespoons chopped, fresh parsley

1. In a medium mixing bowl, toss the lamb with the salt, pepper and flour.

2. Heat 1/2 tablespoon olive oil in a 4 to 5-quart Dutch oven over medium-high heat until it shimmers. Add half of the lamb, and brown on all sides, about 7-8 minutes total.

Remove the lamb to a bowl and repeat with the remaining oil and lamb. Remove the second batch of lamb and add it to the bowl.

3. Add the onions to the pot, and cook for 1 to 2 minutes. Add the gar-lic, potatoes, carrots and the remain-ing teaspoon of salt and pepper. Cook for 3 to 4 minutes, stirring occasion-ally. Return the lamb to the pot with the barley. Stir to combine.

4. Add the water or chicken broth and bring to a boil. Once boiling, decrease the heat to low, cover and simmer for 30 to 45 minutes or until the liquid is absorbed and the lamb and barley are tender. Five minutes before the stew is finished, add the parsley. Stew will be thick. Taste for seasoning and add more salt and pep-per as desired.

Northern Ireland Potato Bread

1 cup mashed potatoes 1 tablespoon unsalted butter or Irish butter 1/2 teaspoon salt 1/4 cup flour plus more for sprin- kling

1. Place potatoes into a large, micro-wavable bowl. Mix in the butter and salt. Heat on HIGH for 3 to 4 minutes or until warm. Mix in the flour until the mixture turns into a dough.

2. Split the dough into two equal pieces. Sprinkle a cutting board with the remaining flour. Roll the dough on the floured board to create two circles about 1/4-inch thick.

3. Cut the circles into quarters. Brown on both sides on a light-ly greased hot griddle or heavy bottomed pan about 5-6 minutes. Serve warm with stew.

•Shepatentedherdesignin1886andherwealthyfriendsimmediately starting ordering the Cochrane Dishwasher for their own luxurious kitchens. A Chicago machine firm began to manufacture them while Josephine

managedthecompanyandmarketedtheproduct.Shelater said that designing the dishwasher was far easier than marketing it.

•The home model did not sell well. Few homes hadelectricity.Water heaters were rare. Most municiplewater systems offered only hard water which did notmakesoapsuds.Theprice tagof$150wouldbeequivalenttoabout$4,500today.

•Housewivesoftenfeltthatsoakingtheirhard-workinghands by washing the dishes in hot soapy water was a relaxing way to end the day. Cochrane changed her sales pitch to point out that water in dishwashing machines was far hotter than human hands could stand andthereforeresultedingerm-freedishes.

•The strongest market for the dishwasher lay not inprivate homes, but in industries. Hotels, restaurants,boardinghouses, andhospitals saw the advantageofbeingabletowash,scald,rinse,anddryupto20dozendishes of all shapes and sizes in two minutes.

•She got her big break when she not only exhibitedher dishwasher at the Columbian Expo in 1892 inChicago, but also sold her dishwashers to many of the restaurantsandotherestablishmentswithvastkitchenscateringto the largecrowdscomingtosee theExpo.Against heavy competition from around the world,her dishwasher received the first prize for “the bestmechanical construction for durability and adaptation toaparticularlineofwork.”Oneoftheconcessionairesusingherproductsentherthisglowingtribute:“Your

The company kept growing, pushed by Josephine Cochrane’s energy andambitionuntilherdeathatage74in1913.

•Lateinherlifeshesaid,“IfIknewallIknowtoday[I]neverwouldhavehadthecouragetostart.”
