Winter CarnivalReturns to Ski Big Bear

Ski Big Bear at Masthope MountainLocated at 192 karl Hope Boulevard in Lackawaxen

hake up your mountain routine and enjoy some exciting events

at Ski Big Bear at Masthope Mountain! The winter sports destination will host a day filled with Winter Carnival fun Sunday, January 25.

Hit the slopes for awesome activities including the Lollipop Scavenger Hunt where skiers and riders seek out lollipops stuck in the snow for chances to win a prize if you find a marked stick! Share and share alike is the motto on this lotto—it’s asked that if you find more than one marked stick, you put it back in the snow giving others a chance to enjoy the thrill of the find.

Check out tons of cool demonstrations from the pros. Ski

Demos by Guenther’s Ski Haus, Sawmill Cycles shows off snowshoe and fat tire bike sights, and the Ski Patrol joins in with scenario demonstrations from 1p.m. to 2 p.m.

There’ll be drawings for a complimentary full ski tune in the rental shop with another for a full snowboard tune. Both winners will be announced January 25.

t’s eyes to the skies for some amazing events that offer a glimpse into the amazing wildlife that calls Pocono Mountains home—the spectacular bald eagle! Area environmental learn-

ing organizations are geared up and ready to peak the curiosity with a peek into the world of these amazing creatures.

Turning our attention to a peek into the history of the region, delivers plans underway for this year’s Ice Harvest at Tobyhanna Millpond #1. With eight inches on the ice and hopes the chill endures; organizers are ready to slice into the ice with demonstra-tions of the historic tools and equipment of days gone by.

Rounding things out a bit with a reminder...Most are well aware of a certain holiday approaching that encourages all to muster up a bit of creativity—Valentine’s Day! While it may seem weeks away, now is the time to consider this peek at the area’s amazing sights and entertainment destinations to really put this year’s holiday over the top! Check out the lineup of tidbits spilled over into our Entertainment Section for evening ideas and prepare to dazzle!

Saturday, January 24: Eagle Day at Wallenpaupack Environmental Learning Center, Hawley, (570) 226-3164, [email protected]. The Conservancy and Lacawac Sanctuary hosts this FREE afternoon of family friendly fun with presentations from the Delaware Valley Raptor Center at 1:30 p.m. and 3 p.m. Hands on activities including building an eagle’s nest, live music, and more. Even check out live birds of prey! No need to register in advance.

Saturday, January 24: Eagle Watch for Enthusiasts! Dingmans Ferry, (570) 828-2319, www.peec.org. Pocono Environmental Education

Saturday, January 24: Quiet Valley Farm Animal Tracks, Stroudsburg, (570) 629-3061, www.mcconservation.org. Kettle Creek Environmental Education Center heads to the farm for some outdoor fun checking out the trails critters leave behind from 2:00 to 4:00 p.m. Cost is $5 for non-members and $3 for EE Center Members and children under 12. A January 31 dated is set should inclement weather spoil the fun.

Saturday, January 24: Sharing Your Yard with Wildlife, Kettle Creek Environmental Education Center, (570) 629-3061, www.mcconservation.org. Environmental Educator Darryl Speicher presents this educational and fun look into things we can do to enhance wildlife value in our own backyard. The 1 hour program starts at 10 a.m. EE Center Members are free with a cost of $5 for non-members and $3 for children under 12.

Fridays, January 23 and 30: Eagle Watch, Kettle Creek Environmental Education Center, (570) 629-3061, www.mcconservation.org. Environmental Educator Brian Hardiman leads this journey to the upper Delaware River in search of the Bald Eagle. Forecasting the probability of sightings of the regional resident high they encourage pre-registration. Cost including bus trip is $18 for EE Center Members and $24 for non-members. Meeting at EE Center 8:30 a.m. with a 5:30 p.m. return.

Saturday, January 31: Eagle Watching Bus Tour, Wallenpaupack Environmental Learning Center, Hawley, (570) 226-3164, [email protected]. The Delaware Highlands Conservancy offers this guided eagle-viewing bus trip throughout the Upper Delaware River region seeking out and learning about the magnificent bald eagle. Seats are limited so reservations are required. Cost is $15 for DHC members and $20 for non-members.

Saturday, January 31: Ice Harvest in the Forecast, Tobyhanna Millpond #1, (570) 894-8205. Thick ice equals ice demos but if Mother Nature is uncooperative a look at the historic tools is planned for this popular annual event starting at 9 a.m. with sights set on a full ice house by 2 or 3 p.m.

Saturday, January 31: Introduction to Snowshoeing, Dingmans Ferry, (570) 828-2319, www.peec.org. Pocono Environmental Education Center (PEEC) invites all from 1:00 p.m. to 3:00 p.m. to learn the basics of snowshoeing—no experience necessary with equipment provided. Registration required for a spot. Cost is $10.

Saturday, January 31: The Fascinating Honeybee, Kettle Creek Environmental Education Center, (570) 629-3061, www.mcconservation.org. Bob and Vicki Armstrong, Past Presidents of the Monroe County Bee Keeper Association, offer a 1 hour program on honeybees starting at 10 a.m. Cost is $5 for non-members, $3 children under 12 and free for EE Center Members.

Ongoing: Now through January 31: Bendixen’s Annual Buyers Blowout! Pocono Summit, (570) 839-8795, www.bendixens.com. Indoor thrills are in-store as this popular destination hosts its storewide sale offering the opportunity to take “a bit of country” back home. Hours: 10 a.m. to 5 p.m. every day.

Ongoing: Saturdays and Sundays: Now through January 31: Shawnee Mountain’s NASTAR Race Series, East Stroudsburg, (570) 421-7231 EXT254, www.shawneemt.com. Shawnee’s Upper Tomahawk Race Course hosts this competitive racing program for all ages and abilities from 10 a.m. to 2 p.m. each day. Cost for two timed runs is $7 with five timed runs at $13. Lift Ticket/pass and NASTAR race ticket required to participate.

Ongoing: Mondays through Saturdays, Now through February 28: Snowshoe & Cross-Country Skiing, Nescopeck State Park in Drums, (570) 403-2006. This free first come first served loaner program encourages outdoor fun in the park from 8:30 a.m. to 2:30 p.m. Rules include: equipment must be returned by 3 p.m., at least 4” of snow must be on the ground for skis and 6” for snowshoes, borrowers must provide a valid driver’s license. Park staff is available for a brief instruction upon request.

delights; takes us to Mountainhome Diner. We admit, it’s not merely what’s on the menu filled with a lovely mix of Greek and Traditional delicacies that draws our attention; it’s the people behind this Mountainhome site that’s secured their spot as one of the top Pocono Mountains’ eateries.

A warm inviting atmosphere filled with fine food and friendly faces—quality that seems to come naturally to MD owners of six years, Voula and Jim (Jimmy) Katsigiannis. Calling the diner “our second home” with patrons that are “like family;” Voula tells of the pair’s commitment to community.

“We love these people and these people love us,” she says sharing a plaque received in gratitude for their support of the Barrett Township Police Department alongside a “Pocono Proud” Community Service Award received in November from the governor’s office.

Directions

Preheat oven to 350˚F. Butter the bottoms and sides of a 9x13 inch pan. Chop nuts and toss cinnamon and sugar-set aside. Unroll phyllo dough then cut whole stack in half to fit pan. Cover with a dampened cloth to keep from drying as you continue preparations. Place two sheets of dough in pan and butter thoroughly. Repeat until you have eight sheets layered. Sprinkle on two to three tablespoons of nuts. Top with two sheets of dough, butter and nuts-layering each. Your top layer should be six to eight sheets deep. Using a sharp knife, cut out diamond or square shapes all the way to the bottom of the pan. Bake approximately 50 minutes until golden and crisp.

Prepare syrup topping while baklava is baking...Boil sugar and water until granules are melted. Add vanilla, honey, cinnamon sticks and cloves. Simmer about 20 minutes.

Remove baklava from oven and immediately spoon syrup over it. Let cool. Serve in cupcake papers and enjoy!


MD waitress of three years, Christy Smith, considers the Katsigiannis’ generosity, “One of the great things about a small town diner,” adding, “We’re part of the community.” The question of her favorite dish, is met with a response asking, “Just one?!” Laughter and a list including Greek Chicken Panini soon follows. “A good breakfast at a fair price,” is what a retired couple close-by

regards as reason enough to take the weekly drive up from Scotrun. Calling MD a “local favorite;” they add “a friendly atmosphere” to what they consider the diner’s recipe for success. Turning talk toward true ingredients for a tasty treat; Voula shares a recipe for the Katsigiannis Family Baklava; though readers will have to visit Mountainhome to feast upon her other freshly prepared platters of pastries...

As the Frein manhunt directed the nation’s attention to the area; it’s businesses like MD that captured their hearts. Preparing food for the countless emergency responders enveloping the region in search of the accused gunman; they donated a warm meal and smile asking nothing in return. Calling the effort “a big commitment” Barrett Township Police Chief Steven Williams described it as “their way of reaching out” that was there before the incident and lives on.
