hake up your mountain routine and enjoy some exciting events

at Ski Big Bear at Masthope Mountain! The winter sports destination will host a day filled with Winter Carnival fun Sunday, January 25.

Hit the slopes for awesome activities including the Lollipop Scavenger Hunt where skiers and riders seek out lollipops stuck in the snow for chances to win a prize if you find a marked stick! Share and share alike is the motto on this lotto—it’s asked that if you find more than one marked stick, you put it back in the snow giving others a chance to enjoy the thrill of the find.

Check out tons of cool demonstrations from the pros. Ski

Demos by Guenther’s Ski Haus, Sawmill Cycles shows off snowshoe and fat tire bike sights, and the Ski Patrol joins in with scenario demonstrations from 1p.m. to 2 p.m.

There’ll be drawings for a complimentary full ski tune in the rental shop with another for a full snowboard tune. Both winners will be announced January 25.

Lift tickets are required for Carnival participation. For event details and ticket information, visit www.ski-bigbear.com, or call (570) 685-1400.

iscover Daley Chocolates—One of the Sweetest Spots in

the Poconos! Conveniently located just off Interstate 380 on Route 940 in Pocono Summit, this charming shop has everything you need to satisfy anyone’s confectionary cravings.

Valentine’s Day is on the horizon, so Heidi Daley kindly shares a bit of creativity to spice up this year’s holiday. She suggests forego the flora and lean toward a tasty treat instead. With roses as a symbol of romance, why not walk in with a cleverly arranged bouquet of chocolate covered strawberries! Be sure to cover your ears at the likelihood squeals of delight will soon follow as you sheepishly grin

over success in this practical, yet imaginative, idea.

Avoid the familiar squished assortment of retail pre-boxed chocolates resulting from seekers of their favorite fillings. Mix it up with a custom collection of cordials and truffles that shows you not only remember what’s liked, but also took the time to meet with a confectioner to collaborate over freshly prepared creations.

Focus on making 2015 the year of wow! Be sure to plan ahead with a visit to Daley Chocolates! Checkout their ad listing when, where and how to find your treasure trove of tantalizing treats!

eeping in line with our journey into the world of decadent

delights; takes us to Mountainhome Diner. We admit, it’s not merely what’s on the menu filled with a lovely mix of Greek and Traditional delicacies that draws our attention; it’s the people behind this Mountainhome site that’s secured their spot as one of the top Pocono Mountains’ eateries.

A warm inviting atmosphere filled with fine food and friendly faces—quality that seems to come naturally to MD owners of six years, Voula and Jim (Jimmy) Katsigiannis. Calling the diner “our second home” with patrons that are “like family;” Voula tells of the pair’s commitment to community.

“We love these people and these people love us,” she says sharing a plaque received in gratitude for their support of the Barrett Township Police Department alongside a “Pocono Proud” Community Service Award received in November from the governor’s office.

1 cup water•1 cup white sugar•1 tsp vanilla extract•1/2 cup honey•2 cinnamon sticks, few cloves*•

“We love these people and these people love us”

- Voula katsigiannis

Directions

Preheat oven to 350˚F. Butter the bottoms and sides of a 9x13 inch pan. Chop nuts and toss cinnamon and sugar-set aside. Unroll phyllo dough then cut whole stack in half to fit pan. Cover with a dampened cloth to keep from drying as you continue preparations. Place two sheets of dough in pan and butter thoroughly. Repeat until you have eight sheets layered. Sprinkle on two to three tablespoons of nuts. Top with two sheets of dough, butter and nuts-layering each. Your top layer should be six to eight sheets deep. Using a sharp knife, cut out diamond or square shapes all the way to the bottom of the pan. Bake approximately 50 minutes until golden and crisp.

Prepare syrup topping while baklava is baking...Boil sugar and water until granules are melted. Add vanilla, honey, cinnamon sticks and cloves. Simmer about 20 minutes.

Remove baklava from oven and immediately spoon syrup over it. Let cool. Serve in cupcake papers and enjoy!

20 This Week in the Poconos

MD waitress of three years, Christy Smith, considers the Katsigiannis’ generosity, “One of the great things about a small town diner,” adding, “We’re part of the community.” The question of her favorite dish, is met with a response asking, “Just one?!” Laughter and a list including Greek Chicken Panini soon follows. “A good breakfast at a fair price,” is what a retired couple close-by

regards as reason enough to take the weekly drive up from Scotrun. Calling MD a “local favorite;” they add “a friendly atmosphere” to what they consider the diner’s recipe for success. Turning talk toward true ingredients for a tasty treat; Voula shares a recipe for the Katsigiannis Family Baklava; though readers will have to visit Mountainhome to feast upon her other freshly prepared platters of pastries...

As the Frein manhunt directed the nation’s attention to the area; it’s businesses like MD that captured their hearts. Preparing food for the countless emergency responders enveloping the region in search of the accused gunman; they donated a warm meal and smile asking nothing in return. Calling the effort “a big commitment” Barrett Township Police Chief Steven Williams described it as “their way of reaching out” that was there before the incident and lives on.

Before opening the winery three years ago, the energetic pair envisioned a destination that struck “the right balance between elegance and informalness.” Studying viticulture under masters, Sid and Ellie Butler, a vast knowledge of wine making developed. Indulging inquisitive winery tour participants 2 p.m. daily; Randy eagerly shares that knowledge; delivering facts including optimal latitude positioning and total temperate degrees imperative in achieving results the region is recognized for. Considering neighboring vineyards and wineries along the Pocono Wine Trail comrades introducing the excellence of local wines; he explains how they, “Partner up to get the best of the best.” Wineries acquire the harvest grown by vineyards. With one harvest a year, Blue Ridge Estate Vineyard & Winery also sources grapes from other sites for their own wine creations. As wine tasting becomes an increasingly popular invitation to savor the enraptured flavors reminiscent of the Pocono Mountains; the association also creates a pool of people to the region eager to experience each unique taste. Blue Ridge embraces the opportunity with weekend food pairings and a host of events focused on ensuring, “Every aspect of your senses is taken care of.” Live entertainment, Saturday Morning

Yoga, and performances are set well into the future. Bringing romance back to Blue Ridge after last month’s success, they’ve arranged for a bit of Romance in January, Saturday the 24th from 7 p.m. to 10 p.m. Live DJ entertainment, dancing and socialization is on the menu with wine of course! Plan on a repeat next month as Romance in February hits Valentine’s Day the 14th with reservations recommended. Sharing thoughts of ongoing expectations, the Detrick duo tells of plans to introduce new tastes including Elements—a cleverly named blend they prefer to reveal little of enticing guests to watch for, then visit to see for themselves. A future filled with laughter surrounded by friends and family with an open invitation to “enjoy life” best describes their campaign to elevate Blue Ridge Estate Vineyard & Winery and “the art of turning sunlight into wine” to new heights.
