All About Induction(NC) Although induction cooking has been around for years, the tech-
nology remains a mystery to many of us. With a number of key benefits, induction cooktops are an intriguing alternative to traditional gas or elec-tric ranges.
By using a unique science, induction cooktops use an electromagnetic field of energy to heat pots and pans directly, rather than heating a burner and then waiting for it to transfer heat to the cookware. When a magnetic pan is placed on the cooking surface, the iron molecules in the pan begin to vibrate 20,000 to 50,000 times per second. It is the friction between those molecules that creates heat, warming up only the cookware and the food within it but not the burner itself. The system is intuitive, meaning that when the cookware is removed from the burner, the burner automatically shuts off.

1. Speed and responsiveness. Induction cooktops can work almost twice as fast as their gas or electric counterparts. In fact, with GE Ap-pliances’ high-wattage burner, you can bring a pot of water to boil in just 101 seconds. Speed is coupled with precision, allowing you to eas-ily achieve and hold just the right temperature to melt, simmer or boil whatever you’re cooking.
2. Efficiency. With an induction range, you’re cooking at record speed, using less energy. Also, heat doesn’t flow up from a burner to a pot or pan, and so there’s no wasted heat.
3. A safer way to cook. Because only the cookware heats up during the cooking process, an induction cooktop will always be cool to touch, eliminating the possibility of accidental burns, making it perfect for households with children. Plus, say goodbye to spills that end up baked onto your burner – you can wipe an induction cooktop clean quickly and easily just seconds after cooking.
Just remember that the electromagnetic energy needs to interact with iron in your cookware, so not all pots and pans will work with an induc-tion cooktop. Cast iron or magnetic stainless steel pots or pans work best. If you’re unsure about whether your cookware qualifies, try stick-ing a magnet to the bottom of the pan. If it stays attached, you’re good to go.

(NC) When you’re in the market for a new home it can be a tough de-cision — do you head to the sales office of a local builder or check out resale homes on the market? Here are some reasons to consider a new build.
1. The latest technology. Homebuilding has seen significant changes in construction techniques and new technology over the last 10 years. New homes today come with efficiency features such as tankless wa-ter heaters, high-efficiency condensing furnaces, low-flow showerheads, Energy Star appliances, high-performance windows and smart thermo-stats. 2. Registered builders versus DIY. New home builders in Ontario need a licence to build. In fact, it’s the law that they be registered with Tarion, the regulatory authority. An older home on the other hand may have changed ownership several times, which could mean it’s seen many years of DIY fixes or renovations that may not meet the current Ontario Building Code. 3. Best-in-class warranty. Almost every new home or condo in On-tario is covered by a new home warranty with up to $300,000 in cov-erage. From the moment of possession, almost everything the builder provides, inside and out, is covered in the first year. The major systems inside your home, including heating and plumbing, are covered for up to two years, and major structural defects are covered for up to seven years.
4. Customized finishes. A newly built house or condo gives you the opportunity to customize it to your tastes before it’s even built. Depend-ing on the builder, you can often choose wall colours, design and colour of cabinets and counter tops, types of fixtures in your kitchen or bath-room, floor finishes and the style of interior trim throughout your home.

Ask for recommendations. Request recommendations from friends and neighbours when hir-
ing professionals for the job. But even with a referral, verify the service provider holds valid insurance, licences and certifications and that their subcontractors hold insurance and applicable licences as well.
Use a licensed electrical contractor. Whether working with a general contractor or tackling small proj-
ects yourself, the safest and most cost-effective decision you can make is to hire a licensed electrical contractor for electrical work. In Ontario, only they can legally do electrical work for hire. They understand the Ontario Electrical Safety Code and can help ensure all electrical components are considered. Plus, they are required to handle the details, including permits and inspections. Once the work is complete, ask for a certificate of inspection for your records.
