President’s Report Summer, 2013
The year is quickly winding down, and soon it will be summer break. I hope you all get some well-‐deserved rest. This spring has been exceptionally busy and I will highlight some of the activities of the executive and myself in this report. I was honoured to be selected as the PSAC representative to the Provincial Standing Council on Curriculum this spring. I have attended one meeting, where there were several presentations on assessment (although there is another group that is looking at this area). At that time curriculum revision
teams were being selected for many courses, and I was told Applied Skills was coming. I was recently told again that it is coming, but I’ve seen nothing official. I will continue to pursue what is happening with Applied Skills, and home economics in particular through this council and the BCTF. Denise Nembhard is now a member of another Ministry group, although it is not directly related to our teaching areas and is more associated with trades, but we feel we need to be represented in these areas related to Applied Skills. We (THESA) applied for an inquiry grant to assist us in beginning to collect the information we will need to create a “best practices” guide for Home Economics in the province. I was recently informed that we have been approved for the grant, with our question being: What kind of environment enhances the teaching and learning of students in a Home Economics classroom? We will soon be sending out an application for members who would like to participate in this project. Our plan is to select the committee from applications at our November meeting, with the group beginning work in January, 2014.
We have had the opportunity to present workshops at several conferences this spring, including the New Teacher’s Conference and a professional development day in Chilliwack.
You will be receiving information soon about changes to the FoodSafe course that will be implemented in January, 2014. The changes look positive and there has also been some discussion about certification for teaching FoodSafe – look for more information on this later.
Conference planning by the Coquitlam group is also well under way – don’t forget to register after September 1st!
Have a great summer, and I look forward to seeing many of your at our October conference.

What does your THESA Executive Do for You?
• Make recommendations to the PSA Council bargaining representatives for inclusion in provincial bargaining strategies.
• Applied and received an inquiry grant to look at the environment that best promotes teaching and learning in Home Economics.
• We encouraged members to communicate with the Ministry regarding the BC Education Plan as it relates to Home Economics.
• The THESA president has been appointed a member of the Provincial Standing Committee on Curriculum, representing PSAs in BC
• THESA members have participated on committees such as Healthy Schools, Foodsafe, ERAC, and think tank for BCesis.
• We continue to explore rewriting an old Foods textbook that was originally published by the Ministry of Education and is still used by many teachers in BC to support the Foods 11/12 IRPs.
• BC home economics teachers have collaborated with a major publisher on the writing of new junior and senior foods textbooks that meet the BC IRP.
• THESA members presented a workshop at the New Teacher’s Conference about teaching in a Home Economics classroom.
• Curriculum support materials have been shared and archived on our Ning site. Maintain THESA website.
• Provide 4 e-‐newsletters per year of classroom ready resources. Past issues are archived on our website.
• THESA members work through BCERAC to evaluate and recommend resources for the BC Home Economics IRPs.
• Provide professional development opportunities, such as annual THESA conference, webcast seminars and a trip to China for home economics teachers in July 2014.
• Provide variety of promotional items for members. • Continue to promote THESA with UBC teacher preparation with a visit from a member of
the executive as well as support for student attendance at conferences or workshops. • Two scholarships were given this year in support of students and teachers studying in the
area of Home Economics. • Build connections with national and international organizations related to home
economics. • Support local initiatives, such as the Food History project/competition

Home Ec Teacher Meet-‐Up Group The Vancouver Home Ec Enthusiasts is a group of Home Ec Teachers who get together to socialise, share ideas, have a few good laughs, and stay up to date with food and drink trends. So far, we’ve met for dinner and drinks, and taken a cake decorating course at EAT Vancouver! A future trip is planned to Tasting Plates ( http://tastingplatesyvr.com/ ). • Consider size of space, configuration, equipment, and class size and composition
• How may this be different for students with disabilities and special needs? While this inquiry project may not result in the actual guide to “best practices,” it will form the foundation for that guide, with the guide being the eventual outcome of the information gained.

Recipes and Resources For this newsletter I thought I’d share some favourite recipes that work great for summer. Vietnamese Salad Rolls 110 g rice vermicelli 4 rice wrappers (6.5 inch diameter ¼ cucumber thinly sliced ½ carrot, julienned 60 ml shredded lettuce or bean sprouts 5 ml fresh basil, or cilantro 60 ml hoisin or peanut dipping sauce Directions 1. Bring a medium saucepan of water to boil. Remove from heat. Place rice vermicelli in boiling water, remove
from heat, and let soak 3 to 5 minutes, until soft. Drain, and rinse with cold water. 2. Fill a large bowl with hot water. Dip one rice wrapper in the hot water for 1 second to soften. Lay wrapper flat, and place desired amounts of shrimp, carrot, lettuce and basil in the center. Roll the edges of the wrapper slightly inward. Beginning at the bottom edge of wrapper, tightly wrap the ingredients. Repeat with remaining ingredients. 3. Serve the spring rolls with the hoisin or peanut dipping sauce.
White Chicken CHILI
(serves 2) 125 ml chicken thigh 1/4 large cooking onion, chopped 250 ml Beans (White Kidney or other)
30 ml chopped peppers 10 ml green Chilies 50 ml chicken or veggie broth 1. Brown chicken in skillet over medium heat. 2. Add chopped onion & celery and sauté with beef for 2 to 3 minutes.
3. Pour off excess fat, if any. 4. Add slightly drained kidney beans. 5. From here you are “on your own” to add appropriate amounts of the following seasonings: worchestershire sauce salt And Pepper hot sauce cumin 6. Simmer, uncovered for as long as possible. Taste and adjust seasonings
***** Note: in summer I just throw all the ingredients in the slow cooker and serve over rice

RECIPE for Southern Biscuits _________ cups flour (10 oz) 4 ______ baking powder ¼ tsp baking ___________ 1 tsp salt _______ oz cold shortening 1 cup buttermilk 1 oz butter Measure dry ingredients into a large bowl. Work in fat with fingers until texture of _________________________________ Make well in center and add buttermilk, working in gently. Pat into a thick disk and cut into biscuits. Push biscuit cutter straight down then ___________________ Bake at 400F. A few years back my student teacher Hilary Kinglsey provided this recipe for a grain buffet lab, it remains one of my favourites. Cornmeal Biscuits Makes 12 to 14 biscuits 375 ml spelt flour 125 ml cornmeal 30 ml packed light brown sugar 10 ml baking powder 5 ml salt 2 ml baking soda 1 ml ground chipotle or chili powder 45 ml cold unsalted butter, cut into small bits, plus more for greasing the baking sheet 1 large egg 30 ml well-‐shaken buttermilk, plus more if necessary Place a rack in the center of the oven and preheat the oven to 400° F. Lightly grease a baking sheet with butter. In a bowl, combine the flour, cornmeal, brown sugar, baking powder, salt, baking soda, and chipotle. Using two knives or a pastry blender, cut the butter into the dry
ingredients until the mixture resembles unevenly coarse pebbles. In a small bowl, whisk together the egg and 30 ml of buttermilk. Pour the liquid into the dry ingredients, stirring to combine, until most of the flour is incorporated. If necessary, add more buttermilk to create a soft but not sticky dough. Sprinkle a work surface lightly with cornmeal. Gently knead the dough until smooth, usually 25 to 35 turns. Shape the dough into a disc. Sprinkle more cornmeal onto the work surface and more on top of the disc. Roll the dough out to a generous 1/4-‐inch thickness. Fold the dough in half and gently roll to about 1/2-‐inch thick. Use a two-‐inch-‐round biscuit cutter or a 1/4-‐cup metal measuring cup to cut out the biscuits. Transfer them to the prepared baking sheet. Roll out scraps to create additional biscuits. Bake for 5 minutes. Rotate the pan and continue baking until the bottoms are golden and the tops spring back to a gentle touch, 5 to 7 more minutes, or slightly longer if they were frozen.

The following recipes are submitted by Paula Aquinio – she hasn’t used these at school but they are a family favourite. Sate 1 lb. pork tenderloin (or chicken breasts) 2 cloves garlic, smashed and chopped ½ onion, minced 1 T. palm sugar Juice of one lime 1 T. fish sauce ½ t. tamarind pulp, dissolved in 2 T. warm water 1 T. oil 1. Combine all ingredients for the marinade
(garlic, onion, sugar, lime juice, fish sauce, tamarind juice, and oil) in a food processor. Cut pork into cubes and thread on skewers. Place in a shallow dish and pour marinade over pork. Let sit for one hour in the refrigerator or 20 minutes at room temperature, turning pork occasionally.
2. Remove meat from marinade and cook under a preheated broiler or on the BBQ or a stove-‐top grill. Serve with the dipping sauce.
(Sometimes I don’t use skewers – just marinade the pieces of meat and stir fry on the stove.)
Peanut Dipping Sauce ½ cup crunchy peanut butter 1 onion, minced 1 cup coconut milk 1 T. palm sugar 1 T. cayenne 1 stalk lemon grass, minced 1 T. fish sauce 1 t. sweet soya sauce 1. In a saucepan combine all the sauce
ingredients. Bring to a boil, stirring constantly. One it has come to a boil, remove from heat and transfer to dipping bowls.
Green Chicken Curry 2 lbs. boneless chicken breasts 3 tins coconut milk 2 T. fish sauce 3 T. green curry paste (or according to taste) 4-‐6 dried or fresh lime leaves 4 serrano chiles, seeded and sliced into strips 1 cup frozen peas or ½-‐3/4 cup Thai pea eggplants ½ cup basil, sliced 1. Sauté the curry paste in a small amount of
oil in a pan large enough to accommodate the finished dish. Sauté for 2 minutes.
2. Add the fish sauce, chiles, and lime leaves and cook briefly, then add the chicken and coconut milk. Allow sauce to cook for 10-‐15 minutes, or until chicken is cooked through.
3. Add peas, and once peas are cooked, remove heat. Stir in basil and serve immediately. Serve with rice.
(I use sliced bamboo shoots instead of the peas.)
