Italy is a country steeped in history and tradition. One of these traditions was that the family would keep a pig. When it came time, this pig would be cured and every part of it would be used to provide the family with food throughout the year.
In Italian kitchens or cantinas, a range of home-cured sausages, salami and prosciutto would be found hanging from the ceiling.
These cured meats would be served either as an antipasto before a meal or used as an essential part of the primo or secondo piatto (entrée or main course).

Thousands of years ago curing meat was the best method of preserving it. Although we now enjoy the luxury of refrigeration, the traditional process lives on through the popularity of fermented meats like Salame. And over the centuries they have become so popular that individual regions have developed their own characteristic versions of the century-old art of salame charcuterie.
Whatever shape it comes in, consumers love their salame. They appreciate their unique taste, versatility and wonderful heritage.
Salame is made and enjoyed in many countries around the world and can be eaten on its own, or enjoyed with bread, cheese and olives. It spices up pizza and pastas, livens up salads, is great on crackers, provides a lift to boring cut lunches and is a must for entertainment platters.

A sophisticated Italian delicacy.
Only the very best legs of pork are selected for San Marino Prosciutto. They are salted and seasoned to a traditional Italian recipe. The Prosciutto is then air-dried and matured over an extensive period. Sliced very thin, Prosciutto is mouth watering with fresh crusty bread and makes a great accompaniment to juicy rockmelon.
The word prosciutto derives from the Latin perexsuctum, which gave way to the modern Italian word prosciugare which means “to thoroughly dry.”
In Italian, “prosciutto” refers to the pork cut, not to its specific preparation. Italian patrons therefore make a distinction between prosciutto cotto (cooked ham), which is what we often would call ham, and prosciutto crudo (raw ham), the dry-cured ham which we refer to as simply prosciutto.
Renowned and appreciated throughout the world, the history and traditions of Prosciutto date over 2,000 years. Prosciutto is one of the most popular Italian meats perfect for wrapping mozzarella, figs, veal and asparagus. It also adds a delicious flavour to creamy pasta sauces, stuffings and pizza.

PanCEtta
Pancetta is an Italian style of cured pork and gets its name from the Italian word for belly, ‘pancia’, which refers to the cut of pork used.
Each region in Italy has its own way of making pancetta, but it generally involves trimming, salting and seasoning a piece of pork belly, then leaving it to air-dry for two to three months. A delicacy that’s perfect for all occasions and utilises one of San Marino’s classical products, Pancetta.
It’s a great substitute for streaky bacon and is traditionally used to flavour Italian sauces and pasta dishes (a must for carbonara). Pancetta is also a great inclusion diced in stuffings and crisp-fried slices are delicious when crumbled over salads and into pasta dishes.

Italian tradition comes to Australia...
The company started with the passion of founder Tony Marino who migrated to Australia in 1960. He worked as a butcher and restaurateur prior to entering the meat and smallgoods processing industry in 1967. He purchased the South Australian business in 1975 with a loan from the original owner and by working non-stop, paid the debt in 6 months. In 1984, he bought out his partner and renamed the business San Marino.
In March 2012, San Marino was acquired by Bertocchi Smallgoods, one of Australia’s largest manufacturer of quality products, 100% Australian wholly owned and operated.
To this day, San Marino operates as a separate entity within the Bertocchi Group and its products are prepared to the same uncompromising high standard using the original product specifications, rustic and traditional Italian techniques that replicates the authentic award winning range of smallgoods.
The San Marino product range has since expanded to include an exciting, new and innovative range of Hams, Bacon, Salame and Continental lines, using only the highest quality fresh pork and ingredients with time honoured traditional values for which San Marino products have become renowned.
