assion, creativity and a strong desire to succeed.These three attributes have fast become the trademark of Jay Archer, a self-taught florist who’s making quite an impression on the industry…

Fresh from her appearance on Channel 4’s ‘Billion Pound Flower Market’, Jay is buzzing with ideas as we get the interview underway in her workshop in Odiham.

“I’m a creative, a maverick… a little bit naughty I suppose…!” Jay states, by way of introduction. “Ever since I can remember, I’ve loved flowers and the natural environment. My passion started from an early age, with childhood summers spent helping my grandparents in their garden, cutting sweet peas and crushing lavender pips between my fingers!”

Since launching her business in 2011, Jay has been a strong advocate of British flowers, believing firmly in not only their quality, but their importance in sustaining the industry in the 21st century, amid fierce competition from cheaper, mass-market alternatives.

Largely self-taught, Jay’s award-winning style is natural, loose and abundant, with an emphasis on homegrown, seasonal, locally-sourced, and scented flowers.

“I find inspiration for my designs in everyday life,” she explains. “My mind is always buzzing with ideas; my pencil rarely stops sketching, or my scissors cutting. I’m a complete ‘flowerholic’, and enjoy every day I spend at work doing what I love.”

Wedding floristry, combined with the Great British weather, doubtless presents its own challenges - but Jay is keen to point out that these are simply part of the job: “Seasonality is a big thing for me, and of course on their wedding day everyone wants everything to be absolutely spot on. Preparing for a wedding is hugely demanding but also massively rewarding… It may sound cheesy, but it’s about playing a small part in making people’s dreams come true. I guess I’m a bit of an old romantic really!”

Jay is also passionate about helping others learn floristry skills, whether they are looking to go professional or simply a keen amateur. The Jay Archer Floral Design Flower School runs a range of courses, from ‘An Introduction to Wedding Floristry’ to ‘One Day Bridal Bouquet Flowers’.

Jay explains: “The flower school materialised when a few people got in touch with me asking if they could come along and learn some of the key skills of the trade. It’s important to keep it to quite a small group – maximum of seven really – so they can spend time with me personally

but also feel integrated and support each other within the group.

“I found it so hard to get into the industry when I was starting out – it’s incredibly challenging when you’re trying to make a name for yourself – so I’ve always wanted to help and support people aspiring to do what I do.

“When you run your own business, not only do you have the passion and drive to succeed, but you’re also master of your own destiny – you can take it wherever you want to go.”

But why set up shop in Hampshire?

“Originally I’m from the West Midlands, but I moved down here because of work, and then ended up meeting my husband here. I honestly

can’t see my life being anywhere else now.

“Not only is it an affluent area, but people care about local produce, crafts and artisan things. There’s a good locality to the growers who I’m buying from (including the Real Flower Company near Petersfield) which makes all the difference to what I do.

“I honestly love it here – and believe it or not, but there really is more sunshine than up north…!”

style insiderStudents from across Winchester School of Art’s postgraduate held a Fashion Show at Southampton’s West Quay shopping centre, as part of an event for International Women’s Day. The theme of the show - “Be Bold for Change” - aimed to encapsulate a vibrant message about a new, existential female fashion consumer.

Following an initial inspiration from Reem Alasadi, the MA Coordinator of MA Textile Design and MA Fashion Design at WSA – in collaboration with programme leaders from the MAs in Fashion Design, Fashion Management, and Fashion Marketing & Branding – students from across the school formed a company to organise and produce the show.

Students took on all the roles including forming an advertising team, organising sponsorship, PR and Marketing, photography, journalism, styling, and back stage activities, as well as acting as models and providing the clothes for the catwalk.

Such was the success of the project, with students attracting sponsorship from Body Shop, Karen Millen, Oasis and FatFace and writing in the international media, that a similar project at the same time next year has already been pencilled in.

AlresfordExploring

In the heart of the Hampshire countryside, Alresford is the epitome of the English country town.

Perhaps best-known as the UK’s capital of watercress, in recent years Alresford has become something of a hub for independent producers and eateries, many of which have shaped their business around the local landscape to bring fresh, innovative ideas to the table…

Today, this beautiful Georgian town still celebrates its roots with the annual Watercress Festival, which brings together thousands of visitors drawn from the local community and from far and wide to celebrate watercress - the superb locally-grown, delicious and versatile crop. This year’s event takes place on Sunday 21st May.

Inspired by Alresford’s roots, The Watercress Company believe in the importance of farming ‘in harmony with the environment’, and their five-acre farm at Bishops Sutton is still owned by the Mills Family who first established a watercress business in the 1800’s.

Surrounded by grazing used by the local dairy farms, the farm can be seen from The Watercress Line steam railway which runs daily between Alresford and Ropley.

Indeed, the perfect way to truly embrace Alresford’s roots is a trip on the historic steam railway, which runs for 10 miles through the beautiful countryside. Take a step back in time and experience the splendour of steam with fine dining on board the Watercress Belle, from a traditional Sunday lunch to high tea – a slice of the high life in the heart of Hampshire.

A short stride from Alresford station is The Horse & Groom, a traditional pub which has served the Alresford community for some 400 years. The first known inn on this site opened around 1550, and specialised in good liquor and good conversation - just as it does today!

Talking of which, Raimes English Sparkling released their first ever vintage at the end of November at Wine Festival Winchester – an elegant well-balanced sparkling wine produced from grapes grown at Hinton Ampner.

Augusta and Robert are the fifth generation of the family to farm the fields now flourishing with vines. Together with land farmed on the historic Tichborne Estate, the farm stretches from the water meadows of the river Itchen, to the grassy rolling hills of the South Downs near Winchester.

This desire to push the boundaries and aim for perfection is matched by Winchester Distillery, based at Manor Watercress Factory, where Paul Bowler produces premium spirits and alcoholic concoctions inspired by the Hampshire countryside and its wealth of local botanicals.

The distillery’s best-known creation, Twisted Nose gin, truly celebrates Alresford’s watercress connections, combining 10 botanicals including locally-grown watercress to create a spirit that is intense, fragrant and very refreshing.

Innovation and creativity are also in evidence with Alresford’s array of eateries, from Caracoli’s modern coffee culture to traditional treats at Tiffin Tea Rooms.

Meanwhile, seasonality is key at Long Barn Café, on the picturesque Long Barn lavender farm. From healthy smoothies to ‘hint of lavender’ scones, the Long Barn Café offers something a little different and embraces local produce throughout the menu.

Long Barn co-director Jane Marsden comments: “Delicious local, fresh and seasonal produce are always on the menu here at Long Barn Café. One of our café best-selling dishes is the local butcher’s bacon bap at weekend brunch time and our

amazing cakes, all locally baked or made in-house, are a special feature of our afternoon teas.”

Meanwhile, back in Broad Street, Pulpo Negro has added a sunny slice of the Med to Alresford’s quintessentially English appeal.

There’s a smart-casual, modern feel-good vibe about the place, with its floorboards, café-style chairs, pews and wooden tables.

The appealing tapas menu features succulent, full-flavoured secretto (shoulder) Ibèrica, slow-cooked Ibèricus tomatoes bursting with sweetness, spicy Alejandro chorizo teamed with local watercress, and individual piquillo pepper tortilla.

A determination to celebrate local connections at every opportunity, coupled with a desire for consistent quality, has seen independent producers flourish in the Alresford area.This has surely been aided by a far greater understanding and appreciation of the importance of buying local in recent years.

The knife glides beautifully through the large tomato at the centre to discover the next stage to the dish, the gazpacho mousse, while the inclusion of smoked mozzarella and tapenade helps to create a vibrant and imaginative dish, bursting with flavour. The scallops, served with carrot tortellini, black garlic and crispy cuttlefish, are simply superb – brimming with the tastes of the sea.

For the main event, it is very much a local affair. We enjoy a tasting of Rother Valley Organic lamb: roast saddle, breast and shoulder, served with a ragout of peas, beans and lettuce; and roast sirloin of Rother Valley Organic beef, served with truffle gnocchi, broccoli, almonds and pickled shallots.

The rich, robust flavours of each dish offer a nod to traditional wholesome and homely British cuisine and, as with the starters, the superb presentation makes a strong impression.

After exploring a multitude of savoury flavours, it is time to sample some sweetness with the desserts, and what better way to embrace the Great British summer than with a ‘Taste of Summer’… Poached white peach, snow egg and blueberry ice cream provides a beautiful balance of contrasting tastes, sharp versus sweet. Meanwhile, the Raspberries and White Chocolate dessert features choux buns, fresh raspberries

and malted milk ice cream – another beautifully presented dish which truly lives up to expectation.

Completing a fine dinner, we enjoy coffee and complimentary handmade petit fours, served in a cigar case: white chocolate and violet macaroon, salted chocolate and caramel, white chocolate and cranberry fudge and homemade nougat. Simply divine…

ucked away in the charming Bakery Lane, Fez is a family-run restaurant which aims to embrace the spirit of Anatolian cuisine – serving a wide range of authentic meze, chicken,

lamb and seafood dishes in relaxed surroundings.

After growing up and training in Turkey, their chef uses top quality ingredients sourced from genuine Turkish suppliers to help ensure every meal has an exacting blend of flavours.

From entering the restaurant, it was clear that we were in for an authentic Turkish experience, with the smell of fresh, delicious food filling the room, as we glimpsed the chefs working in the kitchen on our way to the table.

Refreshingly different

Beautiful South’s Denise Lloyd enjoys authentic Turkish dining in the heart of Petersfield…

The traditional Turkish décor throughout the restaurant really set the scene, replicated by the function room, where Fez also cater for parties and group bookings.

With so much choice on offer, it was a tough task to whittle it down to one dish, but the attentive staff drew on their experience to offer recommendations tailored to our preferences. To start, we opted for the warm mixed Mezzeler platter and, from the specials menu, Mucver - Courgettes frittes made with feta cheese, eggs, flour and fresh herbs (mint, dill and parsley), served with salad and cacik (diced cucumber with garlic in yoghurt).

Moving on to our mains, we enjoyed Imzir Kofte - a lamb meatball casserole dish with vegetables in a rich tomato sauce, served with rice, salad

and yoghurt – and, from the specials menu, Bal Pirzola – grilled lamb cutlets served with honey rice, cacik and antep esmesi (fine diced tomato, spicy pepper puree, red pepper, onion, parsley and olive oil). These vibrant, fresh dishes demonstrated Turkish cuisine at its very best – wholesome, satisfying and above all, bursting with flavour.

To finish, we enjoyed a sweet treat: traditional Baklava – layers of filo pastry with walnuts and honey syrup, topped with crushed pistachio.We could not fault the quality of the food – all wonderfully fresh and bursting with flavour, complemented by the warm, welcoming atmosphere and great service throughout.

But above all, Fez brings something refreshingly different to dining in Petersfield – an experience to savour, which will leave you wanting to come back time and time again…
