The Restaurant continues to be one of only two establishments to hold this prestigious distinction in the Western United States. The Restaurant at Meadowood offers a fine dining experience in the country where the best traditions of Napa Valley are wedded with a modern, enlightened approach to cuisine which is based on the innate goodness of regional ingredients. The chef ’s philosophy of stewarding flavors can be likened to Napa Valley wine-makers allowing the grapes to express themselves in finished wines, resulting in dishes that are flavorful, fresh and healthy, offering intensity of flavor without heaviness. The interior showcases Meadowood’s natural, tranquil setting with rows of windows bringing the beautiful surroundings into full view. Wine pairings are available for each course.

Day Two...The Wine

Page 5: The Napa Experience

The Tasting Begins... ❚ 9:45 AM - Driver/Guide pick up at Meadowood ❚ 10:00 AM - Merus Winery ❚ 11:45 AM - Kelham Family Vineyards ❚ 3:30 PM - Morlet Family Winery ❚ 5:15 PM - Return to Meadowood ❚ Dinner at French Laundry

Merus Winery - When William Foley brought Merus into his Foley Family Wines group at the end of 2007, one of his first goals was to find a Napa Valley winery site worthy of the brand. A few months later he acquired a historic ranch tucked into a canyon on the east side of the valley. One of Napa’s fabled “ghost wineries,” it had been abandoned in the wake of Prohibition and only recently brought back to life. Now the fully updated winery includes custom-made wine-making equipment and 7,000 square feet of caves for barrel storage. The winery’s new tasting salon and a second tasting area in the caves were stunningly renovated by Merus co-founder Erika Gottl’s Amsterdam-based UXUS design consultancy. The guests will enjoy a tasting of three wines in the privacy of the wine cave.

Kelham Family Vineyards - Their goal as a family is to grow, produce, and bottle premium wines from their own prized vineyard in Oakville. These sophisticated wines are made to age and directly reflect the finest grapes and soil for wine-making. The varietals on the sixty acre property consist of Cabernet, Merlot, Sauvignon Blanc, and a small planting of Petit Verdot. Concentrating on the integral quality and craftsman-ship of their estate fruit they strive for perfection in all of their wines. The current production for the Oakville property is 4,400 cases. A private platter style tasting luncheon will be served by one of the family members with up to 6 wines paired perfectly to the luncheon.

Morlet Family Vineyards - In St. Helena, the heart of the Napa Valley, Luc and Jodie Morlet hand-craft their vineyard designated wines and unique cuvées from the surrounding Napa Valley and from Sonoma County. Meticulously farmed vineyards and low-intervention wine-making techniques produce powerful yet refined wines. Guests will enjoy a private tour and tasting with Jodie Morlet.

The French Laundry – Three Michelin Star - Thomas Keller’s Magnum opus in Yountville may be famous for being famous but consider yourself royalty if you land a table at the “haute” French-American restaurant. Built in 1890 as a French Steam Laundry, this rustic two-story stone house is surrounded by a country garden planted with vintage roses, perennials and seasonal herbs. The Three Star Michelin French Laundry Restaurant has an intimate dining room with 15 tables. The dining time is 3-4 hours with two prix-fixe menus to choose from and jackets are required for gentlemen.

The Experience Continues... ❚ Breakfast at Leisure ❚ 10:30 AM - Driver/Guide pick up at Meadowood ❚ 10:00 AM - Chappellet Winery ❚ 1:45 AM - D.R. Stephens Estate Winery ❚ 3:30 PM - Return to Meadowood for Private Tasting in “Founders Room” ❚ Dinner at Bottega

Chappellet Winery - The Chappellets’ romance with Pritchard Hill started when Donn and Molly Chappellet first glimpsed its spectacular vistas. Perched 1,200 feet above the floor of the Napa Valley, the atmosphere at the Chappellet family’s winery and Pritchard Hill estate vineyards is serene and peaceful. You can’t help but fall in love with the breathtaking views and the gentle mountain Donn and Molly Chappellet made their home.

D.R. Stephens Estate Winery - In 1996 Don and Trish found Oz II, their 35-acre property on How-ell Mountain Road in the Saint Helena area of the Napa Valley, and an opportunity became available to attain their dream. Trish designed and built their French-European home on a four-acre plateau above the vine-yards and indigenous olive trees. Wine-maker Celia Welch and vineyard manager Jim Barbour work with consultant Cary Gott to craft Cabernet Sauvignon and Chardonnay at DR Stephens.

The Founders Room - You will enjoy a tasting of BOND Estate wines and Promontory Estate, both produced by Bill Harlan. The Founders Room is an invitation only winery that is still under the radar and known strictly to educated wine collectors. A former real estate developer, Bill Harlan is best known for his Harlan Estate wines, some of which sell for as much as $750 a bottle. His other brands include vineyard-des-ignated BOND Estates and The Napa Valley Reserve—but he’s always had a special interest in what is—for now—being called Promontory.

Bottega - Chef Michael Chiarello has returned to his culinary roots by creating seasonal farm-to-table Italian cuisine reflecting the bold flavors of Chiarello’s heritage in his signature style 1st made famous at Tra Vigne in the 90’s. An award winning chef/vintner & Food Network host, Chiarello celebrates his Italian roots and the Napa Valley with a menu echoing his long practice of using the finest locally/sustainably produced food. Located in Yountville, in the heart of the Napa Valley, Bottega’s extensive wine list represents hard-to-find favorites of the Valley and interesting Italian selections. Chiarello restored the integrity of an old 1800’s estate by uncovering beautiful hard wood floors, timber beams, old brick walls and windows. The inviting dining room is accented with reclaimed antiques, warm fabrics and eclectic light fixtures lending to the restaurant’s old world comfort.
