(ARA) - As 2011 begins to wind down, the hectic holiday season is only getting started. It is important to remember that the beginning of winter means more than just presents and Black Friday - it’s about kicking back and celebrating family, friends and good food.
This time tends to be packed with fun and holiday cheer, but the last thing you want is to be partied out too early. Pacing yourself and not getting overwhelmed by the endless gatherings (and dessert trays) is essential. Here are a few easy
tips to help make sure that you’re enjoying this season to the fullest and truly celebrating a great year:
• Make everything a memory: We all know that cleaning, cooking and decorating can be a chore, but by throwing on some music and making it a group or family activity, these can easily become some of your
fondest holiday memories.
• Try not to overbook: One of the most stressful dangers of the holidays is committing to too many parties. Keep a calendar and be honest with yourself-there’s no need to make every celebration if you
aren’t going to enjoy them.
• Keep it simple: Not a chef? Don’t sweat it. Pick a simple, signature dish for the season and stick to it. Make a fruit salad or bake your favorite kind of cookies so you’re not stressing about what to bring before every party.

• Come prepared: We all say we’re going to watch ourselves when it comes to eating this time of year, but the madness of

1/4 teaspoon ground cloves1/4 teaspoon ground ginger1/2 teaspoon salt3/4 cup (1 1/4 sticks) unsalted butter, softened1 cup granulated sugar1/2 cup firmly packed light brown sugar1 tablespoon Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract1 teaspoon Nielsen-Massey Pure Chocolate Extract1 egg1/4 cup original unsulfured molassesDirections:Line two light-colored, heavy baking sheets with parchment paper and set them aside. In a large bowl, whisk together flour, cocoa powder, cinnamon, cloves, ginger and salt, set aside. To a large mixing bowl, add butter, granulated and brown sugars, Madagascar Bourbon Pure Vanilla Extract and Pure Chocolate Extract; beat with an electric mixer on medium speed until creamy. Beat in egg until combined. Add molasses, beat until combined. Reduce speed to low, add dry ingredients in three batches, beating after each addition, until combined. Divide dough into two even pieces, press each piece into a disk shape, wrap with plastic wrap and refrigerate for one hour. Preheat oven to 350 F. Working with one piece of dough at a time, place on a clean, lightly floured surface. For dusting the
rolling surface and pin: In a small bowl, combine 1 tablespoon of cocoa powder with 2 tablespoons of all-purpose flour. This will help keep the cookies a nice chocolaty brown. Roll dough to a 1/4-inch thickness. Using a 2 3/4-inch cookie cutter, cut desired cookie shapes. Transfer cookies to prepared cookie sheets using a thin metal spatula. Bake eight to 10 minutes, remove and place cookies on wire a rack to cool. For a crispier cookie, roll dough to a 1/3-inch thickness and adjust baking time accordingly. Whatever your holiday specialty may be, think about ways you can make it extra special this year. Scan your recipe books, look for a variation of the recipe on the Internet or just use your imagination and give it a test run before the holidays. Then when it comes time to enjoy, your guests are sure to be impressed.

“Get Your Butts At The Hut”Inspired Holiday Entertaining(ARA) - Whether hosting a holiday meal for the family or an open house for the neighborhood, entertaining can be stressful - especially during the holidays when there’s so much pressure to make everything perfect. Make a planTake some time to really plan out the event. How many are coming? What’s on the menu? How should the house look? Make a to-do list and set deadlines. Doing as much as possible in advance will make the day of the party that much easier.Better yet, delegate some of the work. “Enlist the help of your family,” Bean advises. “Even preschoolers can help put away groceries, wash veggies or fold napkins. If a guest asks if she can bring something, let her. People love to feel useful, and it gives you one less thing to do.”
Gather your toolsOnce the menu is set, review your tableware, serving dishes and cookware to make sure you have what you need. Borrow or purchase what you’re missing. Among today’s options is a growing array of cookware designed to go seamlessly and beautifully from oven or stovetop to even the most formal table, saving time, money and clean-up.
Make the most of your spaceThe size of the meal may expand during the holidays, but cooking and serving space doesn’t. A countertop toaster oven or high-wattage double burner can be a lifesaver for expanding oven and stovetop capacity. On the buffet table, tiered servers hold appetizers and desserts vertically, rather than horizontally, saving valuable space and creating an attractive display.
Decorate for the sensesInvolve all the senses in your decorating scheme. Enlist a spouse or older child to come up with a holiday music playlist or CD. Be sure to include instrumental pieces to play during dinner so it won’t impede conversation.Fill the house with holiday scents, such as cinnamon, mulberry or evergreen. Scented candles are an easy and attractive way to provide fragrance and a warm glow to any room, and candlelight makes your guests look 10 years younger. Bean warns, however, against putting candles in high-traffic areas. Enjoy the resultsDon’t be so busy playing hostess that you forget to enjoy yourself. Bean recommends organizing the kitchen so that the bulk of the clean-up can be done later.
