SCS was contracted to determine the quality attributes of the Intense 1 Roma tomato and compare these attributes against three other standard Roma tomatoes harvested in the same region of Mexico and with the same maturity and time from harvest. There were five primary objectives in this evaluation process: 1. Slice recovery (% Yield, Color), SCS evaluated 4 labels of roma tomatoes, Rene, Kingdom Fresh, Green Point, and Hilde’s Choice which is the Intense variety , (10 units each) looking at slice recovery (% by weight), and color quality per slice. We sliced the tomatoes using a graduated rotary slicer and reported the results by thickness. Color was measured using the USDA OCED Color numbers and the respective Hunter Color was also run. Based on the test results we determined that 5mm was the most efficient slice (range of 90.3 and 94.58% yield and 7.2 OCED color for all labels) and that would be used in the remaining shelf life studies, and cooking attribute studies

2. Shelf life of Sliced and diced tomatoes (looking at Sensory quality, seed and juice loss, microbiological activity, and pressure/soluble solids for up to 14 days)

Using the same labels as the tomato slice study, SCS evaluated these labels for quality, piece integrity, seed separation and juice separation. Overall Intense (HC label) maintained the highest integrity, appearance, overall accpetance, texture, and pressure while having the lowest seed separation during the 14 day study. Brix levels for all four varieties were very close and did not change during this experiment. For both the piece integrity and overall quality, Intense held up the best throughout the study with scores going from over 14 and down to 10, while the RN and GP labels went down to 4 for integrity, and from 14 to 7 for overall quality where RN and GP went down to 4. In seed separation and juice separation, Intense also was the best in that the products had the least amount of seed separation and juice separation (from 1 gm to 1 gm as compared to 1 gm to 15 gm for KF label and 9 gm for GP & RN labels) 3. Shelf life of tomato as an ingredient (kabob, Caprese salad, and a sandwich) for 5 days. SCS evaluated three food items that the Intense roma tomato would be used by consumers. The Intense performed well in maintaining its shape, integrity, color and quality for kabobs and with only a drop of barely a point (starting at 13 on day 0 and 12 on day 5) on our 1-15 scale. In Caprese salad while Intense started out the highest at 13 on integrity and quality, most of the labels dropped down to 6.5.-7 on these same attributes. As an ingredient in a sandwich, Intense held up well starting off at the highest for integrity at 12 and going to 9. The Intense also was the slowest in loosing juice to the bread over the 5 day period.

4. Quality as used in sauce. SCS evaluated two store bands of tomato sauce as compared from a homemade sauce that met similar industry standards for solids and soluble solids. The sauce made from Intense was the highest overall quality including aroma, sweet/balance taste, appearance, and texture. In looking at color, both the Safeway and Intense were the same OCED value of 12. The soluble solids were also the same for Intense and Hunts, however Hunts had more salt which offset the sweetness and brought the flavor acceptance scores down for this label while raising the soluble solids. 5. Cooking quality (baked and grilled, half and sliced tomato sensory quality). SCS evaluated Intense (or HC) label compared to three other labels in both the physical and sensory attributes when baked and grilled at the same temp and time on a simple baking sheet. In the baking process all four labels as tomato halves were pretty similar in shape retention, weight retention and quality attributes with Intense slightly better in overall quality, sweetness taste, and red color retention. However as a tomato slice, the Intense retained more of its shape, integrity, color, taste, aroma and weight (63%) as compared to the other labels.
