SALAD:1/2 head of green cabbage, finely shredded1/2 head of purple cabbage, finely shredded2 cups carrots, matchstick-cut or shredded1 c. fresh cilantro, chopped1/2 c. sliced green onion2 c. cooked edamame, optional1-2 c. roasted cashews (regular or spicy)2 c. crunchy chow mein noodleschicken, shrimp, or any other protein you like
RECIPE BOX
1. Shake the dressing ingredients up in a jar until smooth. Add the Greek yogurt or mayo (optional- just makes it more creamy - add more or less, to taste) and shake again until smooth. YUM.2. Toss all the salad ingredients together. Drizzle with dressing and serve!

How often does an opportunity come along that you turn down? Are you saying no because it’s not part of your normal routine or you are too shy or reserved in those situations? When a new opportunity arises, a lot of us lean toward our comfort zone, but what happens when we step outside of it and say “yes” for a change? Being open to new things can lead to new experiences, expand your personal growth, and even create more friendships. It helps you worry less about the unknown and gives you the confi-dence to try something different more often. Don’t get me wrong, there are certainly times when “no” is the appropriate response. But next time something comes along and you know there is a part of you that wants to say yes, give it some thought. D WNLOADCooking at home is a great way to improve your health. Not only are meals made from scratch often better for you, but many people find the act of cooking relaxing after a stressful day at work. However, it is easy for injuries to occur in the kitchen. Espe-cially cuts and burns. Take a look at these tips for working safely in the kitchen while creating your delicious and healthy meal. • Don’t leave your pots and pans unattended while you are cook-ing on the stove. Turn burners off as soon as you take the pot off.• Point pot handles towards the middle of the stove to avoid accidently bumping them, or having little hands pulling them from below.• In case of a grease fire, DO NOT use water. If you do not have a fire extinguisher, pour baking soda on the fire to snuff it out.• Keep towels, hot pads, and oven mitts away from burners.• Clean up spills immediately, especially if they are on the floor.• Always use a step stool to reach high places.• Make sure your meat is cooked to temperature: o Beef – Medium – 140-145F o Chicken – 165-175F o Pork and Fish – 145F o Ground Meat – 160F• Store leftovers in the fridge below 40F. Never leave food out for more than 2 hours. So call up their friends and cook a safe delicious meal!

On February 4th, Duluth Mayor Emily Larson tweeted “Robust tourism = Robust Economics. Grateful for our hard working tourism partners who lead the way. What an awesome thing to live in a place people think of as a destination.” In 2018 Duluth’s Tourism continued to grow, even beating the city’s budget projections. A year-end report showed Duluth collecting nearly 7.2 percent more in hotel/motel tax revenue and 4 percent more in food and beverage tax, totaling $12.1 million last year. Our Mayor believes that we are broadening our reach as a favorite destination for people in the region. We’re also drawing outdoor enthusiasts from around the States and Internationally. Along with attractions, meetings, and conventions, there’s been a focus on our natural ameni-ties— Lake Superior, St. Louis River, climbing, mountain biking, and hiking trails.The tourism taxes collected all return to support the tourism industry with a small part of it helping to fund us here at the DECC.

NEW: Gym Wi-Fi NetworkMarch Madness is here…DECC style! March is definitely one of my favorite months because of the wide variety of events we have in our building. This month we will see: • High school students at their best with the MN State Archery Tournament, the Masquerade Dance Competition, and the FIRST Robotics Competition. Be sure to check this last one out if you have not yet seen the competition portion. It’s amazing!• Entertainment galore with the Dierks Bentley concert, a visit from the Harlem Globetrotters, a DSSO performance, and the MN Ballet’s spring performance of Copelia (which a little bird told me has pyrotechnics in it!).• The final UMD Men’s home series and hopefully a home ice advantage in the playoffs for both the Men and Women.• Three very different expos with the Women’s Expo, Motor head Madness, and Manion’s Spring Show.• Two conferences with the MN Fire Chiefs and a brand new conference to us, the MN Council of Social Studies. This will be the first time this group has hosted their conference north of St. Cloud and we are honored they chose to do it with us!• Plus we’ll have a variety of luncheons, dinners, galas, and meetings. Including the ever-popular Chef’s Club Brunch!
