Welcome to the second edition of The

Boat House Group diary. It’s packed

with events, promotions and activities

to keep you busy throughout the

summer and into winter.

It’s been a busy year for the Group

already with the launch of our first

Grape House shop, the introduction

of a two-floor play zone at The Tree

House and a new management team

for The Beach House. I also took on a

personal challenge in April by running

the London Marathon and I want to

thank all our staff and customers for

their overwhelming support.

I hope you enjoy our diary of events

and find something to interest you in

each of our venues; The Boat House,

The Beach House, The Farm House

and The Tree House. Also don’t forget

Sauce:450ml Heinz Tomato Ketchup

250ml Mrs Balls Chutney or Branston Pickle

20ml English Mustard20ml Worcestershire Sauce

300ml White Wine 1 Large Onion, Sliced

4 Garlic Cloves, Crushed4 Bay Leaves

Fresh Chili (optional)Large Pinch of Fresh Chopped

Coriander

1 Whole Lobster2 Large Scallops

2 Large Tiger PrawnsFillet or Sirloin Beef 6 oz (Cut into 1 Inch

Cubes)1 Lemon

Large Skewer 10 Inch (Soak in Water to Wet)

1 lb Jersey Royals (cooked)1 Bunch of Local Jersey Asparagus

(cooked)Mix Leaf Spring Salad

For the ‘Monkey Gland Sauce’1) Place all the sauce ingredients but only 200ml of the wine, into a saucepan and stir.

2) Cook gently until the onions are soft then add the remaining wine to get a gravy consistency.

For the Meat1) Marinate the beef and prawns in the monkey gland sauce for as long as you can

before cooking.

2) Boil the lobster for 5 minutes, cool in cold ice water - don’t use all the ice; keep enough for your drinks!

3) Skewer the beef, prawns and scallops.

4) Using a sharp knife push the tip of the blade into the centre of the lobster head until it cuts right through, then cut downwards towards the tail (don’t crack the claws). Place the lobster and the skewer on the BBQ and cook for 5 minutes,

turning the skewer over occasionally to make sure the meat cooks evenly, then serve and enjoy!

SILVERSTONE SCREENING10th July

Head to either The Tree House in St

Brelade, or Quay Bar at The Boat House

to watch the British Grand Prix from

ZOE BLACKBURN, QUAY BAR SUPERVISOR

EMPLOYEEOF THE QUARTER

Zoe Blackburn works in Quay Bar at The Boat House. Zoe came from

Sheffield two and a half years ago and started work as soon as she arrived

in the Island. Although new to the industry, she has proven herself to

be a very valued member of staff. Zoe has progressed from waitress to

supervisor and often runs the floor in Quay Bar.

Zoe says: “I really love working at The Boat House and living in Jersey. I

enjoy serving all the regular customers and having a chat but also enjoy

dealing with tourists and letting them know what a lovely island Jersey is.

At The Boat House I work with a very professional team but they are also

my friends and we have a great time together.”

Quay Bar Manager, Kay Winter says: “Zoe deserves the Employee of the

Quarter title because she stepped up to the mark when it was needed. She

is always willing to give that little bit more without being asked and we

would be lost without her!”

How long have you worked for the Boat House Group?

I’ve been with the Group just over three years now. I started in The Boat House in 2008 working predominantly in Sails Brasserie. Over the three following years I

constantly strived to improve and work my way up the ladder, eventually moving to The Tree House early this year as General Manager.

What do you enjoy the most about your job?

The most enjoyable part of my job is that I get to meet new people every day and also really get to know loyal customers. I get a buzz from the job, there’s nothing better than a customer coming to you at the end of the night thanking you for a

great time.

How is the kids play zone ‘The Monkey House’ being received?

Honestly, I think that was the best thing we could have done. Being a local lad I have always associated the pub and restaurant as a family orientated place and to

bring the kids play area back on this scale is fantastic. The kids have been going ‘Bananas’ over ‘The Monkey House’ and the kid’s party packages.

What’s your favourite dish on the menu and why?

At the minute we are renowned for our pizzas and rotisserie chicken, but what I am really pleased about is our new menu being so well received. My favourite dish on

the new menu would have to be our Seafood Antipasti Platter.

What event are you most looking forward to this season?

I am really looking forward to our ‘Big Day Out’ over the August Bank Holiday, where we will be having live music all throughout the day, kids entertainment and a

BBQ themed menu running all day.

200g LentilsSplash of Red Wine Vinegar

2 Bay Leaves½ Onion, diced

2 cloves Garlic, crushed2 tbsp Carrots, diced2 tsp Celeriac, diced

100g Pancetta, cut into Lardons2 tsp Tomato Puree1 tbsp Fresh Thyme

Chicken or Vegetable Stock, enough to cover

2 Lamb Fillets½ Cucumber, diced

4 fresh Tomatoes, chopped and deseeded

2 tbsp CorianderMinted Yogurt

Pomegranate Seeds, to servePotato crisps, to serve

Method1) Soak lentils overnight in water (enough to cover), a splash red wine vinegar and 2

bay leaves.

2) Fry diced onions, garlic, carrots, celeriac and pancetta lardons.

3) Add tomato puree, drained lentils and fresh thyme.

4) Gently fry for a few minutes and add chicken/vegetable stock.

5) Let it simmer for 30 minutes or until stock has reduced to syrup consistency.

6) Remove from heat when lentils are soft and leave to rest for 10 minutes.

7) Grill the lamb, turning periodically until cooked as desired. Leave to rest and retain the juices.

8) Fold the diced cucumbers, chopped deseeded tomatoes and coriander into the lentils.

9) Slice the lamb fillets and plate on top of the lentil salad. Drizzle with lamb jus and minted yoghurt and serve with pomegranate seeds and potato crisps.

each restaurant that have been inspired by

Delecti mushrooms and delicious Jersey beef.

MEXICAN BBQ EVENING24th September

NEW! To mark the end of the BBQ season, The

Farm House will be having a BBQ party to end

all parties. The theme is Mexican so everyone

is welcome to wear Sombreros and get into

the Tequila fuelled spirit. The evening is £15 per

NEW! A party for the Jersey glitterati! Sails Brasserie (upstairs at The Boat House)

LOBSTER STIR-FRY1 tsp Salt

½ 1 tsp Sugar1 tbsp Dark Soy Sauce

1 tbsp Oyster Sauce1 tsp Sesame Oil

2 tbsp Chinese Rice Wine or Dry Sherry1 x 750g Lobster, raw, cut into pieces

Pinch of freshly ground White Pepper2 tbsp Cornflour

Sunflower Oil120g fresh Root Ginger, peeled & thinly sliced

2 Garlic Cloves, crushed90g Spring Onions, cut into 2.5cm pieces

250ml Chicken Stock 2 tsp toasted Sesame Seeds

Serves 2-3

Method1) Mix the salt, sugar, dark soy sauce, oyster sauce, white pepper, sesame oil, Chinese

rice wine/sherry together in a small bowl and set aside.

2) Sprinkle the lobster pieces with 1½tablespoon of cornflour, stir fry, in 2 or 3 batches if necessary, for 2 minutes. Lift out and drain on kitchen paper.

3) Heat a tablespoon of sunflower oil in wok. Add the ginger, garlic and spring onions and stir-fry for a few seconds.

4) Add the lobster to the wok with the soy sauce mixture and stir-fry for 1 minute. Add the chicken stock, cover and cook over a medium heat for 2 minutes.

5) Mix the rest of the cornflour with 2 tablespoons of cold water, add to the wok and stir for 1 minute until the sauce thickens. Add toasted sesame seeds.

BALLOTINE OF CONFIT RABBIT

1 Whole Rabbit, cut into 6 pieces1 Banana Shallot, cut in half

2 Bay Leaves20g Juniper Berries

1 small bunch Thyme1 small bunch Rosemary

Duck Fat (or can substitute for a mix of 80% Olive Oil to 20% Veg Oil, although you will lose some of the flavour)

Sea Salt and Whole Black Peppercorns20g Pistachio nuts, unsalted, shelled and roughly chopped

Method1) Mix together all the ingredients, except the pistachio nuts, and place in a pot using

enough fat to completely cover the rabbit.

2) Cover the pot and cook in the oven on a medium/low heat for approximately 3 hours, or until the meat easily falls away from the bone.

3) Strain off the fat and retain for future use (this will keep for several months in the fridge and is great for making tasty roast potatoes or repeating this dish).

4) When the rabbit is cool enough to handle, but still retaining some heat, tear the meat into small pieces discarding and bones and sinews.

5) Season the meat with a little more salt to taste & mix with the pistachio nuts.

6) Roll the mixture up in cling film to make a thick sausage shape and chill overnight.

7) To serve, cut the Ballotine into portion sized pieces, coat in a little oil and warm through in the oven.

1/2lb Raisins6oz Candied Peel

1/4lb Sweet Almond1/2lb Self-Raising Flour

1/2lb Breadcrumbs1/2lb Shredded Suet

½1/2 Teaspoon Salt

1oz Mixed Spice1/2oz Nutmeg

1/2lb Demerara Sugar1 Lemon

1/2lb Marmalade6 Eggs

1/2pt GuinnessTablespoon of Brandy or Rum

Method1) Blanch the almonds and slice them.

2) Mix together the almonds and all the dry ingredients until they are equally blended. Add the zest of the lemon, finely grated, and the juice strained.

3) Next add the marmalade and well-beaten eggs. Add half the Guinness gradually and beat well.

4) Cover with a cloth and leave for 24 hours.

5) After 24 hours add the remainder of the Guinness and stir until mixed.

6) Sprinkle with the brandy or rum and again beat well.

7) Turn into a well-greased basin, cover with greaseproof paper and a cloth and seal. Place into boiling water, the water should come just below the rim of the basin. Cook

for 6 hours, making sure the water doesn’t boil dry.

8) On Christmas Day place into boiling water again for 2 hours before serving.
