    20 pr aw ns ( shr imp) , medium size4-5 cups chicken br ot h/ soup st ock2 s t a l k s f r esh lemongr ass , light ly pounded, cut int o 1 inch long segment s4 t able spoons f i s h s a u c e1/ 3 cup sliced fresh galangal1/ 2 cup straw mushroom or local f r esh mushr ooms, halved or w hole6-8 kaf f ir lime leaves , shredded4 t ablespoons li me juice6 crushed f r esh Thai chile pepper s ( or mor e t o suit your t ast e)2 t ablespoons "pr ik pao" r oast ed chile in oilFr esh cilantro for garnis h

    Method

    Wash t he pr aw ns and shell t hem w it hout r emoving t he t ails. Br ing chicken br ot h t o a boil. Ad d lemongr ass,galangal and lime leaves. Br ing back t o a boil t hen add mushr ooms, f ish sauce, pr ik pao and lime juice.

    Add pr awns and f r esh chile pepper s. As soon as pr awns t ur n pink ( cooked t hr ough) ser ve gar nished w it hc i l a ntro.

    The f r eshest and most delicious "Pr ik Pao" you w ill ever t ast e. This ist he "Yellow Label" t hat Mae Pr anom makes f or t he local Thai mar ket .I t 's made specif ically f or Tom Yum Goong but w e f ind it 's gr eat justspooned over f r eshly st eamed r ice (then mixed to incorporate the prikpao into all of the rice) or added when making f r ied r ice. We like it as asimple dip f or f r esh veget ables.

    You get 32 oz of pr ik pao in each can, so t his is a lar ge quant it y andallow s f or gener ous use. O n a per - ounce basis, t his is less expensivethan our 8 oz jar of w hit e label pr ik pao .

    The t op opens up like a paint can, just use t he handle of a spoon t o pr yit up. The Pr ik Pao is packed inside t he can, in a moder n, st r ongplast ic pouch ( see pict ur e below ) . Just open t he pouch and pour it backint o t he can f or st or age in your pant r y.
