CONRAD AQUINO - EXECUTIVE CHEF Conrad Aquino is the executive chef at Turtle Bay

Resort. Chef Aquino’s skills and exemplary reputation during

his years with Starwood Hotels resulted in his being selected as

task force chef for many of the company’s properties

throughout Hawai'i. Mr. Aquino was born, raised and

educated in Hawai'i, were he also studied under a number of

renowned chefs. He received his Culinary Arts degree from

Kapiolani College, and gained international culinary

experience through internships in England. He is the past

recipient of numerous “Manager of the Quarter” honors and

has brought Turtle Bay Resort to a new level of catering.

Chef’s philosophy is represented in all aspects of the food

served here at Turtle Bay. From our farm to table restaurant

“North Shore Kula Grille”, to our sea to table restaurant”

Pa'akai”, to these specially prepared catering menus, his main

goal has been to incorporate our local food community and

the abundance and diversity of products that are available

here on Oahu’s Fabled North Shore.

EVENT POLICIES

GUARANTEES

Turtle Bay Resort requires that all menus be submitted to our Catering Managers at least thirty (30) days prior to your function. A final guarantee is

required no later than three (3) working days prior to the event. If the guarantee is not received by that time, the agreed number listed on the

BEO will serve as your guarantee or the actual number served, whichever is greater, will be the number for which you will be charged. Should the

number in your party increase considerably, we reserve the right to move your group to a more appropriately sized room or location.

Turtle Bay Resort will set the room up to five percent (5%) over the guarantee, however if a larger set is needed, additional charges may apply. If

your guarantee increases within three (3) days of the event, we will do our best to accommodate, however we cannot guarantee that we will be

able to offer the same menu choice for the additional guarantee.

DINING

All menus are priced for one and a half (1½) hours of food service only, unless otherwise specified. At the conclusion of allotted service duration,

all food with the exception of wedding cake, become the property of Turtle Bay Resort and can not be taken from the banquet function.

Functions served with less than the required minimum will be charged a per guest surcharge up to the minimum required. Plated options are

suggested for groups smaller than thirty (30). If a buffet menu is required for smaller groups, a $20.00 surcharge (plus tax and service) will be

added per person.

SPECIAL DIETARY REQUESTS

Any special meals, vegetarians or dietary restrictions are to be submitted with menu selections thirty (30) days out. Any additional meals that need

to be prepared at time of event to accommodate these needs will be charged at the full menu price.

SERVICE FEES AND TAXES

All food and beverage prices are subject to a 23% taxable service charge and 4.712% Hawai'i’ State sales tax. Catering menu prices are subject

to change. All contracted catering events will be given a 6-months advance notice of any menu changes for budgeting purposes.

PRICING

A maximum of two (2) entrées per plated event will be allowed, with the exception of any special dietary requirements. If two (2) entrées are

chosen for your event, the higher priced entrée will be charged. We require counts on each entrée and any special dietary requirements five (5)

working days in advance. Prices quoted may be subject to change, given market fluctuations. Patron grants the right to Turtle Bay Resort to raise

prices accordingly or to make reasonable substitutions on the menu and agrees to pay such increased prices and to accept substitutions.

COMPLIMENTARY MENU TASTING

A complimentary menu tasting for a maximum of two (2) guests will be provided for contracted catering events. There will be a charge of $30 per

person, plus tax and service charge for each additional person. Menu tastings must be scheduled one month in advance.

BEVERAGE

Turtle Bay Resort as a licensee is the only authority licensed to sell and/or serve liquor for consumption on the premises. Therefore, no alcohol can

be brought onto the licensed property. Turtle Bay Resort reserves the right to discontinue any and all service in the event of blatant or willful

disregard for the law on the part of the event sponsor or guests in attendance.
