an independent distillery since 1853 – until now.
As a team of passionate new world distillers, Archie Rose Distilling Co. is dedicated to honouring our rich spirit-making
past and shaping its future with the launch of the first independent distillery in the City of Sydney in
over a century and a half.

Our vodka is made exclusively with Australian-grown wheat and filtered Sydney water which has twice undergone reverse osmosis and carbon filtration. Crisp apple, citrus and mint flavours are evident along with a
subtle minerality in the aroma. As good neat as it is mixed by our bar team.

Unlike the classic London Dry style, this small batch gin is crafted by tailoring the distillation of individual botanicals, allowing us to bring out
the unique qualities and strengths of each one. Perfectly balanced and wonderfully complex, our gin is accented by native Blood Lime,
River Mint, Lemon Myrtle and Dorrigo Pepperleaf.

Potato Spirit, 40% ABV, Zielona Góra, Poland
Beginning distillation in 1928, Luksusowa is one of the oldest brands of Polish vodka. The use of potatoes has created a creamy texture
and a velvety smoothness.

BOLS GENEVER
Genever Style, 42% ABV, Amsterdam, The Netherlands
Genever is the original gin, first made by Bols in 1575, and offers a vision of what European gin would have looked like centuries ago. A unique style of gin highlighting the grain quality of the base spirit.
HAYMAN’S OLD TOM GIN
Old Tom Style, 40% ABV, Essex, England
A mildly sweetened style, this gin found its popularity among the English working class of the mid 1800s. This is a highly underrated
style of gin deserving of far greater appreciation.
PLYMOUTH GIN
Plymouth Style, 41.2% ABV, Plymouth, England
First produced in 1793, this gin is still created at the same site of the Blackfriars Distillery. Soft and nicely rounded, this was the favoured brand
of the Royal Navy for fending off scurvy during long voyages at sea.
BROKER’S LONDON DRY GIN
London Dry Style, 40% ABV, Birmingham, England
This London Dry gin is distilled in pot stills in the traditional manner using only 10 botanicals. A lovely expression of conventional gin distillation.

The production of gin in Australia has a rich past. One of the earliest distillation licences ever issued was for the production of gin in
Paddington. This flight will explore the diverse flavours and origins of modern Australian gins.

THE WEST WINDS GIN ‘THE SABRE’

As one of the first new wave Australian gins to be released, this spirit is based on a traditional London Dry style with the addition of
wattle seed adding depth and a creamy finish.
BOTANIC AUSTRALIS GIN
40% ABV, Walkamin, QLD
This Mt. Uncle distillate uses almost entirely Australian ingredients including lilly pilly, Eucalyptus olida and bunya nuts.
FOUR PILLARS RARE DRY GIN
41.8% ABV, Yarra Valley, VIC
Distilled with whole oranges and lemon myrtle, this citrus-driven style is both appealing and modern in its brightness.
MCHENRY CLASSIC LONDON DRY GIN
40% ABV, Port Arthur, TAS
A particularly classic gin comprised of minimal ingredients, this is a traditional and restrained style that has been produced
with Tasmanian spring water.
