Supercritical is a state above critical point attained through high temperatures and pressures , where distinct liquid and gas phases does not exist. This property allows oils & fats to dissolve into methanol under supercritical state, which is not possible under atmosphere even with a catalyst. Small changes to temperatures and pressures result in large changes in density and help accelerate the reactions beyond normal conditions.
