Sugar
It is familiar to most as the pure white sugar
It is being used to sweeten beverage.
It is also known as refined sugar
processed from sugar cane or sugar beets syrup.
2.Confectioner’s
Sugar
Obtained from granulated sugar by pulverization
Finest, smoothest, and whitest form of sugar
to which cornstarch is added to prevent caking.
It is used for:•frosting•for candies•for dusting
3. Brown or Yellow Sugar
This is partially purified product
Its natural liqueur is not removed from the brown sugar
Functions of

1. Sugar increases dough development
2. It gives a rich crust color to the baked product.
3. It improves the product’s aroma, flavor, & nutrition value.
4. It increases tenderness through the development of crust color.
5. It increases loaf volume.
Correct Storage
of Sugar
1. Store sugar in airtight jars or canisters to prevent caking.
2. Keep unopened containers of honey and syrup at room temperature.
Once opened, refrigerate to protect against molds.
3. Place white and brown sugar in a covered container
in a dry place at a room temperature.
