Local Businesses Stand Out Greece Innovators! The Greece Chamber will honor two local businesses this year at its annual Small Business of the Year Award Luncheon, now in its 3rd year. One business from each of the following two categories will be chosen to receive the awards: 2011 Small Business of the Year (business with 11+ employees) and 2011 Microenterprise of the Year (business with 10 or less employees). The award is modeled from the U.S. Chamber of Commerce format. This year 37 businesses were nominated. An International Point of View

Two weeks ago I was fortunate to have the

opportunity to travel to Iceland. I know what

you might be thinking: Brr! Actually, Iceland

was a beautiful land to visit and not really all

that cold. I escorted a group of 26 travelers

from our Chamber and the community who

went on a group tour there.

I’m sure you’ve seen the ads we run each

month talking about our upcoming travel

opportunities. I myself have traveled to China,

Egypt and now Iceland. I admit that I was a bit skeptical about

group travel at first. I like to explore on my own and at my own

pace. It was the China trip that first got me hooked. I knew that

even with my adventurous spirit I was unlikely to ever try to

travel there on my own, but I was interested in seeing this exotic

land we all hear so much about.

That trip opened my eyes to what a great experience group

travel can be. A tour guide/host is there to meet you at the airport

and help transport you to the hotel. They are usually walking

encyclopedias of knowledge as you travel to different sites in the

area you are visiting. You almost always avoid the long lines and

travel in comfort in between site-seeing stops. You could say that

I went from a skeptic to a fan!

I also have to admit that I was very surprised at how much I

loved visiting Iceland. Unfortunately the name conjures up

images of an entire land covered in ice. Actually the truth is

much different (it’s neighboring island, Greenland, however is

covered in ice). It’s a beautiful and very natural land. In our other

destinations we looked at many historical locations built by man

(the pyramids, the Great Wall, etc). In Iceland however we visited

locations that are very natural.

The whole island is volcanic so any mountains you see are

volcanoes! There are glaciers (we even got to touch one!), black

sand beaches, geysers, waterfalls, rivers and mountains galore. It

was absolutely breathtaking scenery. Our group of travelers had

a great time meeting one another and trading stories about their

adventures.

We’ve just recently unveiled most of our 2012 destinations

(Peru, Russia, Australia & New Zealand) and we may have a

couple more to come. I encourage you to think about attending

one of our informational sessions to find out a bit more about

what the trips offer and decide if group travel is for you!

If you are looking for volunteer opportunities, Greece Volunteer Ambulance might just be what you are looking for. GVA has been serving the community for the past 50 years. Volunteer opportunities are available for drivers, EMTs and paramedics (ALS Techs). 16 volunteer hours per month are required of drivers and EMTs and 24 volunteer hours per month are required of ALS Techs. The organization welcomes those with experience and will provide training for people interested that have no medical experience. The GVA Auxiliary, formed in 1990, supports the mission of GVA. Auxiliary members: assist with administration and clerical tasks, maintain the loan closet, repair equipment, teach First Aid and CPR, take vehicles for maintenance, serve refreshments at meetings, march in parades, participate in social functions, and support the corps any way it can. Duty hours are flexible and can be worked day or night. GVA provides uniforms, equipment, ongoing education, and field experience. • Use paper towels, not cloth, to wipe off turkey and clean up juices.

• Thaw your frozen meat on a tray in the refrigerator or in cold water with the breast side facing down. Once thawed, prevent uncooked juices from dripping onto other foods in the refrigerator by placing packaged meats on a separate tray or in a sealed dish.

• Cook fresh meat as soon as possible, but no later than the Use-By date on the package. Fully cooking meat destroys bacteria that could cause food-borne illness.

• Store raw meats away from the cooked meats, as well as away from fresh fruit and vegetables, to prevent cross contamination from occurring.

• Store cooked meats in the refrigerator as soon as your meal is over. The maximum time limit for keeping cooked meat at room temperature is 2 hours.

• When transporting cooked meat from your home to a party or another location, remember to keep it cold in a cooler or similar vehicle.

• Experts recommend using two cutting boards, one strictly to cut raw meats and the other for vegetables and cooked foods. Cutting boards should be washed thoroughly in hot, soapy water after each use and allowed to air dry or be dried with clean paper towels.

• Wash hands, work surfaces, and utensils touched by raw meat and its juices with hot, soapy water.

• Use a meat thermometer to determine turkey’s doneness. If you don’t have a meat thermometer to measure the internal temperature of the stuffing in the turkey, the stuffing should be cooked separately.

• Use cooking methods that allow the turkey to reach an internal temperature of 140 degrees in less than 4 hours and a final temperature of 180 degrees in the thigh. If stuffed, the stuffing should reach 165 degrees. Avoid using a low roasting temperature or partial cooking method.

• Store turkey, stuffing, gravy, broth, and other leftover cooked foods in separate containers in the refrigerator within 2 hours of cooking. Remove turkey from bones before storing.
