HOW IT ALL BEGAN

in 1836. When he opened his sec-ond confectioner’s shop on Parade-platz 23 years later, it was still a quiet side street. But very soon vig-orous construction activity began and Paradeplatz developed into a vibrant centre for the city. With its café that was unique for the era, Sprüngli’s elegant flagship store captured the spirit of the age and all Zurich met there for coffee and exquisite pastries. From here the reputation of the daily-fresh Truffes du Jour, bittersweet grand cru truffles and other delicious Sprüngli classics was carried out into the world. The very first light-and-airy Luxemburgerli also originated at Paradeplatz.

Paradeplatz, Zurich, on the mag- nificent Bahnhofstrasse, is home to the beating heart of the Sprüngli world. Everything had in fact begun on Marktgasse, where David Sprüngli founded Confiserie Sprüngli & Fils

Sprüngli has been successful for over 180 years. What is the secret of this success?

Milan Prenosi l (MP) – Right from the very beginning, the fo-cus at Confiserie Sprüngli was on thrilling customers with unique products and surprising them all over again. Whoever comes to us wants something special, some- thing exclusive. We remain true to this aspiration to this day. Tomas Prenosi l ( TP) – And in order to fulfil this aspiration, we strive for perfection on a daily basis: in the creation and pro- duction of our specialities, but also in the selection of our raw ma- terials.

You yourselves are not confec-tioners. What does this mean for your work?

MP – While it’s true that we’re not confectioners by trade, we grew up

Milan and Tomas Prenosil are now the sixth generation at the helm of the Sprüngli family busi-ness. They are proud of the long tradition and at the same time are very conscious of the need to keep the company constantly evolving for it to remain successful.

And how do you ensure that this passion is preserved?

TP – Our employees take great pride in bringing joy to our customers daily and satisfying their high expecta-tions. As a family-run company, we are able to offer them the ideal frame-work for this. Every day is a fresh chal- lenge, but we think in generations.

Where do you get the ideas for new products?

TP – These ideas are sparked in conversations with other people – with fellow entrepreneurs, friends, while travelling, but above all with our employees. The biggest chal-lenge here is not in creating and manufacturing new products, but in recognising trends in taste or nutrition early on.

What are the top trends for you at the moment?

MP – Above all themes like authen-ticity and regionality. This is home territory for us, of course, because we at Sprüngli already uphold the tradition of artisan confectionery and, apart from cocoa beans, have long sourced raw materials from within Switzerland.

TP – In addition to dietary trends, digitisation also plays an important

in and with this company. Getting to know all areas of the company has given us insight into what’s re-ally important. And of course our aspiration is to have the best con-fectioners work for us.

Your predecessors were strong leaders. What have you learned from them?

MP – That we have to keep on re-inventing ourselves afresh. Our pre-decessors had the knack of com-bining our traditional values with new ideas time and again. Each Sprüngli generation stands for inno-vations, the importance of which reached far beyond our company.

How do you manage to keep your existing clientele loyal and appeal to a new, younger audience at the same time?

TP – We’ve been evolving continu-ally with our customers for gene-rations. With countless product innovations, the takeaway concept, the expansion of our digital offer-ing and our loyalty programme, we are increasingly addressing a younger customer segment.

TP – For me it is also about treating people properly and assuming re-sponsibility with regard to our em-ployees and society. This has been part of what Sprüngli stands for since its beginnings, just as much as its commitment to traditional craftsmanship and the unique qua-lity of its products.

What makes Sprüngli so special today?

MP – The passion for what we do! If you visit our production facilities and retail stores and see the enthu-siasm with which our people work, you’ll sense this extraordinary spirit that characterises our company.

What else are you planning?

MP – For us, Sprüngli is a life voca-tion. We want to hand the company over to the next generation in just as good a condition as when we took it over.

company on Marktgasse.

The new Sprüngli building on Paradeplatz evolves into the

prime address for connoisseurs.

Richard Sprüngli becomes the fifth generation of the family to head the company.

Ever since Rudolf Sprüngli first began producing chocolate in his confectionery over 180 years ago, Confiserie Sprüngli has been among the pioneers in chocolate. From the legendary Truffes du Jour and diverse praline creations, to the grand cru truffles incorporating the finest cocoa varieties and chocolate made from hay milk, we have con-stantly reinvented chocolate all over again. And continue to invent it afresh every day. Everything begins with the selec-tion of the right raw materials. In this respect we spare no effort in Bolivia to find the wild-grow- ing cocoa beans for our unique Truffes Cru Sauvage or, in the re-mote region of Baracoa, the fantas-tically bitter and at the same time utterly exquisite cocoa variety Trinitario for our CUBA collection. In procuring our cocoa beans we also place a high priority on sustain-

ability and responsible production conditions. But it is a long path from the raw materials to the finished product. Our confectioners often tinker for years to discover the perfect com-bination of ingredients and how best to process them. This was the case with our Blanc&Noir truffles, for example, and our attempt to in-fuse the ganache with the liquid champagne without losing its sparkle and aromas. And this suc-ceeded in a unique way. Bite care-fully into one of these truffles and you’ll agree wholeheartedly that the melt-in-the-mouth marriage of

chocolate and Perrier-Jouët cham-pagne is further proof of our choco-latiers’ creativity and mastery of their craft.The recipes for these delicacies are a closely guarded secret passed down from one generation to the next. Applying them correctly requires in-depth knowledge and skilled crafts-manship. And yet we’re not satis-fied with what we have achieved so far. Tastes and eating habits are always changing, which is why we’re constantly on the lookout for new ideas so as to surprise and delight our customers around the world with new chocolate creations.

We are particularly proud of our grand cru specialities. As with wine, grand cru means that the

premium cocoa comes from a limited growing region, is only

produced in small quantities and must satisfy the highest

quality standards.

INGREDIENTS

Sprüngli products stand not only for the finest quality, but also for unique freshness and naturalness. And because the right raw mate-rials are essential to achieving this, key ingredients for our chocolate, our Luxemburgerli, truffles and cakes, such as cream, eggs, butter and milk, are sourced exclusively from Swiss producers. This guaran-tees not only incomparable fresh-ness but also sustainable production methods that conserve resources and uphold high standards of ani-mal welfare.The flour used in our exquisite spe-ciality breads, croissant and plaited yeast loaves also comes from Swiss producers and is IP-SUISSE cer-tified. IP-SUISSE farmers comply with strict regulations on soil and plant protection when growing cereals, and seek to promote bio-diversity. We pay particular attention to en-suring the quality and origins of the

various fruits used in our speciali-ties. The cherries for our enticing Griottes, for example, are grown and harvested in line with our wishes by a family business in the region. We also source strawberries and raspberries wherever possible from Swiss producers who share our high quality standards and with whom we have a long-standing re-lationship. In all we do at Sprüngli, we attach great importance to a responsible approach to the environment and uphold high ethical standards along the entire value chain.
