Directions:

1. Prepare the oven. Preheat your oven to 400F or 200C. If you’re using a gas oven, set it at 6.

2. Clean the peppers. Cut the top of each pepper and set it aside. Remove the seeds and membranes. Wash with water. Set it to dry by putting it upside down on a wide strainer. You can use a plate lined with paper towels to absorb water.

3. Cook the stuffing. In a pan, brown the ground beef. You can add a tablespoon o more of the extra virgin olive oil if you’re using a non-stick pan. After browning, rinse the ground beef and let it drain. Set aside.

4. Saute the flavoring. Add two tablespoons of extra virgin olive oil in pan. Sauté onions until tender. Add tomato paste and sauerkraut. Stir until everything is dissolved. Mix in granulated sugar. Add salt and pepper according to your taste. Let it simmer for 4-5 minutes. Stir occasionally.

5. Finalize the stuffing. Once the sauerkraut mixture simmers, add in round beef. Stir in and let simmer for around 5 minutes to let the flavor settle to the meat. Next, add feta and deal. Stir and add 3 tablespoons of crème fraiche. Allow to simmer while stirring evenly.

6. Stuff the peppers. Spray the casserole dish with non-stick cooking spray or lightly grease it. Put enough of the mixture on each of the peppers. Your German stuffed peppers recipe doesn’t end here, though. Set them on the casserole.

7. Add more flavor. In a bowl, add beaten egg and leftover crème fraiche. Pour a few drops of water. Season the mixture with salt, pepper and hot paprika. Pour in the mixture to every stuffed pepper.

8. Put back the tops of the pepper. Place the tops of the peppers on top of each one. These stuffed peppers should be covered with the dish’s lid or foil.

9. Bake. Bake the stuffed peppers for 40 minutes. After the give time, remove it from the oven and lightly brush each one with extra virgin olive oil. Place it back in the oven without the foil or lid. Turn the heat off and allow the peppers to seat in the oven for around 10 minutes.

Enjoy your yummy German stuffed peppers!
