The evidence used to track the developments set out in this report is based onthefindingsofaSeptember2015OxfordEconomicsstudy,commissionedbytheBritishHospitalityAssociation(BHA),andanannualBHAsurveyoftheleadingUKFoodServiceManagementcompanies.
TheFSMsectorhasbeendefinedusingthenational2007StandardIndustrialClassification.
In1972,seniorexecutivesoftheUK’sleadingFoodServiceManagement(FSM)companiesformedagroupundertheauspicesoftheBritishHospitalityAssociation.Overthepast43years,theFoodServiceManagementForum(FSMF)hascontinuedtoguidetheBHA’sadvocacyofthecontractcateringsectorandtoinformtheassociation’sdialoguewithgovernment,mediaandotherinfluencers.
TheFoodServiceManagementSurveywascreatedbytheFSMFtotrack,analyseandreportontheperformanceofthesector.Surveyresultshaveequipped the association with an evidence-based approach to its strategic advisory work and communications. Thanks to our year on year tracker, the survey also provides valuable insights on current and future trends helping toshapetheFSMsector.
Wearedelightedtopresentthefindingsofthe2015FSMsurvey–our24thFSMsector-specificreport.Resultsaffirmthesector’scontinuedsuccess–asemployers,andintermsofitscommercial,environmentalandcommunity-focused activities.
ThisreportalsoincludesthelatestfindingsfromOxfordEconomics’research, commissioned by the BHA earlier this year. According to its findings,theFSMsector’sannualturnoverhasgrowneachyearsince1998andhasnowreached£10.8bn.Similarly,thesector’scontributiontoemploymenthasincreasedyearonyear,topping268,000in2014.Trendsandoptimismpointtocontinuedgrowthintheshortandmediumterm.Itisalsoveryencouragingtoreportthesector’sprogressontacklingwaste,andpromoting health and nutrition.

Theindependentstudy,completedin2015byOxfordEconomicsfortheBritishHospitalityAssociation,confirmsthathospitalityistheUK’sfourthlargestindustry.In2014,itaccounteddirectlyfor2.92millionjobs.Addingindirectemploymentof775,000(wherehospitalityfirmspurchasegoodsandservicesfromUKsuppliers)andinducedemploymentof941,000(wherehospitalityandsupplychainemployeesbuyconsumergoodsandservices).Thetotaleconomicimpactofhospitalityisover4.6millionjobsandgrossvalueaddedof£143billion,some10%ofUKgrossdomesticproduct.Detailson the development over the past decade of direct employment in the food servicemanagementsectorareonpage10.

Since2012,theFoodServiceManagement(FSM)sectorhasrecordedpositiveyearonyeargrowth.Thesectorcontinuestobenefitfromstrongsalesacrossitsentireportfolioandhasbenefittedfromthelatestdiningouttrends, ranging from street food to full service concepts. According to national statisticsissuedbyDEFRAattheofend2014,mealsconsumedoutofthehomeintheUKaccountedfor£83.9bn,42.7%oftotalconsumerexpenditureonfood,drinkandcatering(£196.6bn).

Marketingexpertspointtothegrowingimportanceofbrandsincustomerengagement and differentiators between competitors, not only in terms of the service offer, but also as a representation of what the business stands for.Theexpectationisthattheengagementofincreasinglydiscerningcustomers will rely on the ability of brands to leverage emotional and societal values.
Around80%oftheFSMcompaniessurveyedstatedthattheynowofferedfoodpackagedundertheirownbrandsandonlyslightlyfewer70%usedfranchisedbrandssuchasStarbucksorCostaaspartoftheirserviceofferto clients.
Inthisyear’ssurvey,respondentspointedtoanexpectationforrevenuesincreaseyearonyearforthenextfewyears.Overaquarteranticipatedasignificantincrease,reflectingthehealthystateofthemarket.
TheFSMsectoroperatesinadynamicenvironmentandisresponsivetoevolvingmarkettrends.InthelastthreeyearsthetoptrendsshapingtheFSMsectorrangefromtheincreasingpopularityofstreetfoodtotheimpactofallergenregulations.Respondentstothenationalsurveyhighlightedtheinfluenceofnewcustomerdemands,increasedregulation,inparticularthe2014FoodInformationRegulation,andtheUKskillsshortageamongthehighest-rankingimpactsontheUKFSMsector.
Accordingtoindustryexperts,currentmarkettrendswillcontinuetoevolveintheshortandmediumterm.Indicatorspointtoacontinueddriveforhealthy dining options, a desire for honesty in food - from authenticity and localsourcingthroughtotransparencyandinformationatpointofsale–andanincreasingdiversityoffoodtypesandcuisines.TheStreetFoodtrendisexpectedtoplayabigpartandhand-held,quickfoodisexpectedtotakeagreatershareofthetotalmarket.ThesetrendsarepromotinggrowthinDeliandCaféstyleservices.
Thecurrentfocusoncorporateresponsibilityandsustainabilityisexpectedto increase. Whilst not an issue for all, the requirement for integrated facilities management is also predicted to grow.
Respondentsalsodrewattentiontohighlevelsofuncertaintyinrelationtolonger-termtrends.Inparticular,thebuyingbehaviouranddiningpreferencesoftheMillennialsgeneration.Settobethegreatestproportionoftheworkforceoverthenexttenyears,MillennialsareexpectedtohaveasignificantimpactontheprovisionofFSMproductsandservices.Theimpactoftechnologyisalsoexpectedtoimpactallaspectsoffoodservice-from communications with customers, through to ordering and transactions, including cashless payments.

TheBigHospitalityConversationisauniqueplatformbringingindustryleaderstogetherwithyoungjobseekerstodiscussprospectswithinthehospitalityindustry,therebyraisingtheprofileofcareeropportunitieswithintheindustry.TheBigHospitalityConversationcampaignalsoencourages hospitality businesses across the UK to offer more quality workexperience,moreapprenticeships,andtoemploymorelocalyoung people. To date, 2,900 hospitality businesses have engaged in BigHospitalityConversationsacrosseveryregionoftheUK,generatingover 47,000newopportunitiesforyoungjobseekers.
While staff turnover rates were high for nearly half of the companies responding to the survey, results also show that nearly a quarter of companieshavestaffturnoverratesbelow10%lowerthantheUKaverage for all industries.
ThesurveyofFSMcompanieswasconductedsoonaftertheelectionofanewgovernmentinMay2015.Respondentswereaskediftheyexpectedtheincominggovernmenttosupportthehospitalityindustry.Just25%respondedpositively. Just as many were convinced that this would not be the case pointing to the need for continued advocacy and lobbying.
Operatinginagrowinganddynamicmarketplace,thesectorhasaconstantneedtoattractnewtalent.FSMcompanieshaveprovensuccessinofferingexcellentcareeropportunitiesandprogression-regardlessoftheskillslevelsof new entrants. Nevertheless, the sector still faces a skills shortage.

The food service sector prides itself on a good gender balance in the boardroomwith62%ofmembercompaniesstatingthatatleast25%oftheirboardmemberswerewomenandafurther44%ofcompanieswereledbywomen.
ThesurveyconfirmsthatFSMbusinessesremaincommittedtotheircorporateandsocialresponsibilities(CSR),andcontinuetoprioritiseallthekeyareasofimportanceforCSRwithintheUKhospitalitysector.

ThePublicHealthResponsibilityDealforEngland,ledbytheCoalitionGovernmentbetween2010and2015,soughttotapintothepotentialforbusinessesandotherinfluentialorganisationstomakeasignificantcontribution to improving public health.
HospitalityandtourismbusinessessigneduptotheResponsibilityDeal,committing to take action to improve public health as employers, as well as through their commercial and community actions. The commitments resultedinsignificantinvestmentsonthepartofcompanieswhohadsigned up. These investments were primarily made to alter the way companies approached, monitored and reported on the results of theiractions.TheBHAcallsontheDepartmentofHealthtorevivetheResponsibilityDeal,buildingonthecommitmentofhospitalityand tourism businesses. The BHA is committed to working with the DepartmentofHealthtofurtherthecollaborativeandvoluntaryapproachto improving Public Health in out of home dining.

Backingthegovernment’saimtoreducewastefromfoodandassociatedpackaging on a voluntary basis, the hospitality industry and its supply chainhavealreadymadesignificantprogressinimprovingenvironmentalperformance with more than two thirds having a full food waste action plan.
TheUKGovernmentcommittedtoachieving100%sourcingofsustainablepalmoilbytheendof2015.Currentlyjustunderhalfofthoseorganisationssurveyedwereachievingthis.Thisfigureisexpectedtoincreasefollowingacanvas of the industry which has shown that most businesses are now taking steps to transition toward sustainable palm oil products, or interested in doing so in the near future.
