Alcohol 40%

Composition Pomace of 60% Merlot and40% Cabernet Sauvignon grapes

Distillation Poli uses copper pot stills for distillation, which is carried out at the time of grape harvest. The final distillate, at 75% ABV, is lowered to 40% ABV by the addition of distilled water. It is then chilled to 21°F, filtered and bottled.

Aging Aged for at least 6 months in stainless steel vessels.

Taste Aromas of fresh herbs, mint, rose petals and geranium. On the palate, it is rustic yet smooth, with a generous finish that keeps on giving.

Composition Pomace of 60% Merlot and 40% Cabernet Sauvignon grapes

Distillation Sarpa Barrique is artisanally distilled with Poli’s pot-still composed of 12 copper cauldrons working in small batches. The distillate produced is about 75% ABV and once the aging period is finished, it is brought to 40% ABV by adding distilled water. It is refrigerated at a temperature of 21°F, filtered and finally bottled.

Aging 4 years of aging in 225 liter French oak barrels.

Taste Aromas of exotic fruits, vanilla, almonds and toasted hazelnuts with a rich and long lasting taste.

Named for the iconic bartender and cocktail pioneer Jerry Thomas, known as “The Professor,” Vermouth del Professore is produced at the Antica Distilleria Quaglia in the sunny hills between Monferrato and the hills around Turin.
