These days we call it "sustainable." Our parents would have just called it good common sense. Here is something to consider: there may be an unconscious bias about business sustainability issues, stemming from the legacy of being seen as a "tree-hugging hippy," who has no place in a boardroom. Although, thanks to the efforts of growing numbers of business leaders becoming aware of responsible

capitalism and sustainable business, attitudes are changing. Profits with principles may be a much better phrase going forward. It's most helpful, when larger companies transition into sustainable products and services. As an example, spurred by the environmental movement of the 1960s and 1970s, architects began to think about building homes that were more environmentally friendly. Nearly a quarter of all newly built homes in the U.S. last year were green, according to industry research. Green homes could account for up to a third of the new-home market by 2016. Their entry confirms the legitimacy and importance of sustainability as a viable concept. It says, "This is real and it is here to stay."

Pay attention to these bear-y

important messages.

Imagine consuming as much as 58,000 calories in a day, weighing about 1,000 pounds, and losing hundreds of pounds over one season? Well if you were a grizzly bear, this scenario would not be unusual. Bears have been known to gain an unimaginable amount of weight while maintaining normal blood pressure and cholesterol levels. Moreover, aside from not experiencing the negative side effects of putting on those pounds, they don’t seem to have a hard time ditching the weight during hibernation

either. Perhaps we should pay attention to some of these bear-y important messages: 1) Fill up on berries, nuts, fruit, roots, and

vegetation. Bears don’t eat rich sauces, desserts or treats from vending machines. 2) Be as active as you can. Some bears walk as much as 100 miles away from home to find food. Catch up on zzzz’s. 3) Bears avoid

all electronic devices in winter. Cutting back on screen time before bed helps invite a sound sleep.

Although thought to have originated in South America, pineapples were first discovered by Europeans in 1493 on

the Caribbean island that came to be known as Guadalupe. In the 18th century, pineapples began to be cultivated in Hawaii,

the only state in the U.S. in which they are still grown. They are second only to bananas as America's favorite tropical fruit. Although

the season for pineapple runs from March through June, they are available year-round in local markets. Pineapple is an excellent source of

the trace mineral manganese, which is an essential cofactor in a number of enzymes important in energy production and antioxidant defenses.

Bromelain extracts can be obtained from both the fruit core and stems of pineapple. Studies have shown that bromelain has

a wide variety of health benefits. Excessive inflammation, excessive coagulation of the blood, and certain types of

tumor growth may all be reduced by therapeutic doses of bromelain when taken as a dietary supplement. Add fresh

pineapple to your morning smoothie, lunch time yogurt, any fruit and most vegetable salads. For example, try adding chunks of pineapple to your next coleslaw or carrot salad. Here is a smoothie recipe: 1 mango,

skin removed and cut / 5 strawberries, stems removed / 1 cup diced pineapple / 1 cup orange

juice / 4 ice cubes. Combine all the ingredients in a blender and puree until smooth for about 2 to 3

minutes. Makes two servings.

1) Warm up with herbs and spices. Add powdered ginger, cinnamon and nutmeg to morning grains and dairy. Add

rosemary, oregano and pepper to pasta and casserole dishes. 2) If you are feeling chilled, keep warm by

wearing a silk undergarment or a thick cotton undershirt. 3) Warm yourself up on a chilly morning with a cup of ginger tea. Grate two tablespoons of fresh ginger root into one and a half cups of water. Bring it to a boil and let steep for one half hour. Strain out the ginger and enjoy. 4) If you feel

a cold coming on, stay home. Taking a sick day at the beginning of a cold keeps you from having to

take four sick days later. Also stay home from work or school if you are contagious! You have no idea who might be susceptible to your cold, if it is an elderly person or a baby, your could have a serious impact on them. 5) Winter is the easiest time to get dehydrated. When mucus membranes are dehydrated it is easier to catch a cold. One thing you can do to make drinking water more pleasant in the winter time is to warm it up. Carry a thermos with warm water, a little honey, and lemon to sip on throughout the day. 6) Think of eating foods that are warmer, like soups and cooked vegetables. Winter is not a time for cold foods like watermelons and cucumber. Also, your drinks should be warm.

1) Organic food doesn't contain synthetic pesticides. More than 400 chemical pesticides are routinely used in conventional farming and residues remain on non-organic food even after washing. Children are especially vulnerable to pesticide exposure. One class of pesticides, endocrine disrupters, may be responsible for early puberty and breast cancer. Pesticides are linked to asthma and cancer. 2) Organic food isn't irradiated. Animals fed a diet of irradiated food developed symptoms of multiple sclerosis within 3-4 months. 3) Organic food isn't genetically modified. Here's 7 Reasons Why!minerals. On average, organic is 25% more nutritious in terms of vitamins and minerals than products derived from industrial agriculture. Since on the average, organic food’s shelf price is only 20% higher than chemical food, while this makes it actually cheaper, gram for gram, than chemical food, even ignoring the astronomical hidden costs (damage to health, climate, environment, and government subsidies) of industrial food production. 6) Organic food contains qualitatively higher levels of essential minerals (such as calcium, magnesium, iron and chromium), that are severely depleted in chemical foods grown on pesticide and nitrate fertilizer-abused soil. UK and US government statistics indicate that levels of trace minerals in (non-organic) fruit and vegetables fell by up to 76% between 1940 and 1991. 7) Eating organic has the potential to lower the incidence of various health issues. Some of these may include diabetes, cancer, coronary heart disease, allergies, osteoporosis, migraines, dementia, and hyperactivity.

Almonds are the ideal nut to help you sleep, and you can still get the same benefit from almond butter. They

are rich in B vitamins, calcium, iron, zinc, potassium and magnesium. These are nutrients that help regulate brain activity, relax the muscles and increase the secretion of

sleep-inducing compounds such as melatonin. In addition, almonds are rich in 14 amino acids including tryptophan

which is used to synthesize serotonin and melatonin. They can also help regulate your blood sugar levels. By

preventing wild fluctuations in blood glucose levels, this nut allows the body to enjoy restful sleep.

what is passive

Solar?Passive solar design lets sunlight into a building in winter to provide warmth, while screening it out during summer. It is a key sustainable building technique. Coupled with good insulation, it reduces the amount of (fossil fuel) energy needed to heat and cool a building. Passive solar design takes advantage of the fact the sun is higher in the sky in summer, when the sun's rays can be screened out by eaves, awnings, etc., above windows.

For those that partake of the fruit of the vine, wine is always an appropriate gift for the holidays or any special occasion – but all wines are not created equally. To choose one that truly respects the planet, you have to look beyond the cute critter and “green” buzzwords on the label. Many winegrowers/makers do adhere to responsible techniques without going through the certification process, but here are some definitive terms you can trust:

SIP™ (Sustainability In Practice) Certified: Launched in 2008 by the Vineyard Team, this program looks at “sustainable practices on every level of the winegrowing process, from farm labor to agriculture – from energy conservation to water quality.” Certification must be bestowed annually via a rigorous third-party verification before the SIP™ seal can be used on labels and other marketing materials, and many local Central Coast wines have achieved this accreditation. (sipcertified.org) Demeter Certified: This label assures that the winery has adhered to biodynamic principles, a multi-faceted concept embracing holistic approaches to the winegrowing, the winemaking, and the ramifications to the earth’s ecosystem as a whole. (demeter.net) Certified Organic: Often a confusing term because standards vary with the certifying agency. At its basic level, it mean no pesticides or added sulfites. Your best bet is to look for a “USDA Organic” seal or an “Oregon Tilth” seal. (tilth.org)

Almond butter is now becoming very popular while peanut butter has been popular for ages. There are nutritional differences between the two, and each has its own advantages that it can add to your dietary plans. Peanut butter is high in monounsaturated fats. Peanuts and peanut butter are a good source of magnesium, folate, fiber, protein and vitamins B3 and E. Almonds are a highly nutritious food. By eating almonds or almond butter, you get vitamin E, potassium, magnesium, iron, calcium and phosphorus. Almonds are a good fiber source and also contain protein. Both almond butter and peanut butter can be healthy and nutritious. Almond butter is a viable alternative if you have peanut allergies. Peanut butter is generally less expensive than almond butter. Are you planning to give children's gifts this season? Before you shop, take a peek at this list. It will help you make better choices that are healthier for the kids and kinder to the environment. Look for simple toys: Give gifts that stimulate a child's imagination. Consider items like clay, paints, or other art supplies plus gifts for assembling a kite or sewing a cloth doll. Buy Local: Visit local arts and crafts fairs to buy all-natural, toxin-free toys, like musical instruments, wooden boats and cars, or handmade dollhouses. Choose free trade: Find companies that sell toys that are not made in sweatshops overseas. Many of these do not meet safety requirements. Include the "gift" of spending extra time with the children in your life.

With the holidays just around the corner, many of us at some point will experience what is often referred to as the “Holiday Blues.” Emotional Freedom Techniques, known as Tapping, consists of fingertip tapping on specific meridian end-points while talking through emotional upsets, helping reduce or eliminate the feelings of stress, overwhelm and depression, especially common during the holidays. Tapping sends signals directly to the stress centers of the mid-brain. It accesses the amygdala, an almond shaped part of the brain that initiates the body’s negative reaction to fear, known as the “fight or flight” response. Clinical psychologists Dr. David Feinstein and Dr. Dawson Church, award winning author of The Genie in Your Genes, have confirmed through their landmark study that tapping on specific meridian points has a positive effect on cortisol levels, known as the “stress hormone.” EFT may be your answer to a more joyful and fulfilling New Year!

According to the USDA, cranberries offer one of the highest levels of antioxidants compared to other fruits. Studies have also found they reduce the risk of heart disease and certain cancers, maintain urinary tract health, and possibly even positively affect teeth and gums. Fresh cranberries are available September through December. Whole cranberries are prized for their medicinal value. Research suggests that cranberry sauce is just as healing. In fact, it may lower LDL (bad) cholesterol by 14 percent and boost HDL (good) cholesterol by 10 percent. Another reason to enjoy cranberry sauce: Its malic acid flushes energy sapping toxins out of the body. Select cranberries that are plump, shiny and intensely colored. Before using, discard any berries that are shriveled, soft or brown. Cranberries will keep for up to two months in the refrigerator if they're tightly covered or in their original packaging. Frozen berries can last up to a year.

Fresh Cranberry Relish: 2 cups cranberries / 1 cup fresh, chopped pineapple / 2 Granny Smith apples, peeled, cored and cut into wedges / 1 cut up orange, seeds and skin removed. In a food processor, combine cranberries, pineapple, apples and oranges. Blend into small chunks and add sugar if needed. Chill and serve.

Anti-Aging is this reality?

We hear about it all the time. Call it “Anti-Aging,” “Regenerative Medicine,” or even “Longevity,” it represents one of the “hottest” topics in Medicine today. As one might imagine, this is an extremely complex topic, but one where breakthroughs are happening every day. There was a time in the not so distant past when we referred to “anti-aging” as the ability to stave off “age-related” disease states (e.g., arthritis, osteoporosis, etc.). However, now medical science is truly delving into ways to stop cellular aging.

The concept, as proven by The American Academy of Anti-Aging Medicine (A4M) is very real. A4M is a progressive organization with thousands of members world-wide, dedicated to informing and teaching healthcare practitioners (who include among their membership: scientists, physicians, chiropractors, pharmacists, dentists, veterinarians, nurses and

others) the science of aging and treatments to improve cellular health that will assist us in the anti-aging process.

So the question still begs, are there products that actually aid with anti-aging? The truth is that, technically speaking, our bodies are constantly forming new cells. This is accomplished by DNA replication. During this process, the tips of the DNA strands (Telomeres) become shorter, which results in cellular aging. Until recently, the only proven way to stop aging was through caloric restriction, (aka, dieting.) However, there has been a breakthrough in this technology with one patented product that mimics caloric restriction. It is called Oxaloacetate (benaGene®). Stay tuned, it

only gets more exciting!

Historically, the herb has always been seen as a mental booster. It is said that Greek students would wear

rosemary while sitting for tests, believing the plant’s scent would boost their brain power. It’s also been used in

remembrance since ancient Egypt, when the tradition of putting sprigs or

wreaths of rosemary on the tombs of the dead first began. But, rosemary’s power of

remembrance doesn't stop there. Recent studies have found it to actually boost

memory and stave off age-related cognitive decline. Sniffing the herb can increase memory by 75%! Try

fresh rosemary in a jar or vase. Not only does it add a touch of greenery and life to a space, but it smells so delicious. Grow some of your

own. Rosemary Sweet Potato Crisps: Peel and slice sweet potatoes or garnet yams into 1/16 inch rounds.

Rinse briefly in cold filtered water and pat dry. Arrange rounds on a baking sheet lined with parchment paper,

and lightly mist with virgin olive oil (an oil atomizer works best for this) and bake at 320 degrees for 20

minutes. Remove tray from oven, flip the potatoes

over and lightly mist with oil once again. Sprinkle

with sea salt, black pepper and rosemary and bake

for another 10 minutes, or until the edges just barely

begin to brown.

Dining Out?Here are some basic rules to make a restaurant meal much more nutritious and guilt free: 1) Start with a low calorie, low fat appetizer such as soup or salad. 2) Order an appetizer as your meal. They are smaller portions and offer more of a variety, since more than one can be substituted for the main meal. 3) Choose foods as close to their natural state as possible. For example, order a baked potato rather than fries. 4) Order oil and vinegar for your salad. 5) Instead of ordering a whole dessert, share one portion with a friend and you will get your sugar fix without the guilt trip.

Use it or Lose it...

staying mentally fit!

The expression, "use it or lose it," applies not just to muscles, but to brain function too. Researchers at the University of California have found evidence that throughout life, the brain continues to grow dendrites (connections between nerve cells that allow them to communicate with each other).Continually challenging the intellect seems to promote this dendritic growth. Previous studies had found an association between higher education and better mental function in later life. Research has found that it also affects physical function. Mental function may also reflect how much a person uses their brain throughout life, and has no connection to their level of schooling. Here are some tips to help you stay mentally alert: Mental Activity: Try your hand at painting, sculpting, writing, reading, or discussing current events. Learn a foreign language or even help a child with algebra. Social Ties: Pursuing diverse interests not only keeps you mentally alert, it can also connect you with many different people. Get to know people. Contribution: Get into the habit of being useful to people outside your immediate circle. Read to kids in a day care center, correspond with a prisoner or pick up the phone to call a long lost friend. When we extend ourselves, the rewards are always worth the effort.

6 easy ways to Save Water!1) Opt for reusable water bottles. Tap water is drinkable. Keeping a nice, BPA-free water bottle in your bag is a simple way to save the cost of a three-dollar bottle of water (the same cost of 700 gallons of water out of the tap at home). Bottled water is incredibly wasteful on so many levels: An estimated 80 percent of them don't get recycled and, because of the plastic production process, it takes three times the amount of water in a water bottle to produce just one. 2) Install a low flow showerhead. It's an easy way to use 25 to 60 percent less water in the shower, which means big savings on the water bill. Most showerheads are adjustable, so it’s easy to use the low flow setting when lathering up and a high flow when it’s time to rinse. The cost? Affordable. 3) Turn off the tap. It’s an all-too-common habit to leave the tap running while washing your face, brushing your teeth, doing the dishes, and so on. It’s simple, and saves a lot of resources in the long run. 4) Repair that leaky faucet. A leaky tap can waste 140 gallons of water a week. That’s a pretty big dent in the utility bill. People are often unaware of leaks, so make a note to check all fixtures (including pipes under sinks) regularly. 5) Take shorter showers. Shaving even one minute off of the daily shower may save about a thousand gallons of water every year, which translates into big savings on the water bill. 6) Wash produce and save the water. Wash fruits and vegetables in a large bowl and save the runoff for watering the garden, lawn or those little potted plants. The same thing can be done after boiling pasta or potatoes. Just make sure the water is cool and not salted.

Dodge that kiss: Try to avoid it completely with a preemptive handshake (but then go wash your hands) or frown like a person with a bad cold and say something like: “I’m coming down with something, gotta skip the usual greeting.” Sick people should stay home: As much as you care for your loved ones and colleagues at work, do them all a favor and keep to yourself. If you can’t take time off, at least stay hydrated. Pick up some cough drops. And keep a hefty supply of hand sanitizer nearby. Offer the flu season fist-bump: When confronted by unwanted intimacy, this is a reasonable option. People will laugh, but then they’ll probably try it themselves. Sneeze into your elbow: You probably thought it was okay to sneeze into your hands? Wrong! And then you’re going

to shake someone’s hands? Sneezing into your elbow drastically decreases the spewing action that can catapult germs into the air or onto your hand. Wash your hands frequently: Hand washing is the best thing we can do to prevent the spread of colds and the flu. Wash your hands for 15 to 20 seconds every time you sneeze, every time you shake hands and before you sit down to eat. Don’t be shy about telling others you’re sick: They’ll be glad you did. Discretion has no place in the battle to fend off the flu and colds. Take extra precautions when flying: Bring plenty of anti-bacterial wipes to clean off tray tables, armrests and seat belts, as well as some travel-size hand sanitizer. Keep yourself hydrated with water, teas, or juice.

Cold and Flu Season? This is the time of year for the "dos" and "don'ts" of cold and flu etiquette. Here you go...

4 easy tips forWeight Loss...

1) Sit down for meals and snacks, express appreciation for the nourishment, savor each bite, and chew your food well. 2) Eat whole, fresh food as much as possible and avoid canned, processed, frozen, or pre-packaged foods. 3) Instead of chemical-laden microwave popcorn, make it from scratch on your stove and season with sea salt, a pinch of cayenne pepper and a squeeze of lime. 4) Focus on small steps and incremental progress. Just drinking more water, adding a green vegetable to each meal, and walking around the block once a day can make a big difference!

Healthy eating is a lifelong commitment, not a sprint to the finish line. Try these tips:

Here are some tips for days full of cloudy, grey coldness. Break out the power of scent to overcome the blues. By diffusing or dabbing a few drops of essential oils you can help to create emotionally uplifting effects around your home. Here’s a list of fragrances you might want to try this winter season...

Citruses: The essential oils of lemon, grapefruit, and tangerine are familiar scents that bring sunshine to the heart. In addition to using the essential oils extracted from these fruits in the ways mentioned above, peeling (and consuming) these fruits, can provide a similar, immediate mood-enhancing surge. Other citrus-derived oils include bergamot and neroli. Happy herbs and spices: Rosemary, sweet basil, and cinnamon oils are also familiar scents that, for many, induce a sense of well-being. Also, simmer a pot of water sprinkled with a spoonful of cinnamon on your stovetop to create a yummy, comforting fragrance in your home. Mints: The scents of peppermint and spearmint are both familiar and refreshing to many people. Florals: Lavender and geranium oils are recommended for an emotional uplift. While the scent of lavender is familiar to many, geranium oil is frequently used in massage oil blends and in many aromatherapy therapeutic treatments. A few friendly warnings: these oils are powerful, so a few drops go a long way. Also, to avoid skin irritation, do not apply oils directly to skin. Always mix them in a massage-grade carrier oil.

1) Change that light bulb. How many environmentalists does it take to change a light bulb? We're not sure either, but we know they'd be replacing it with an energy efficient one. Like most eco-friendly gadgets, they're more expensive up front (about five dollars a bulb), but they use a quarter of the energy and last 10 times longer. With lighting comprising 13 percent of the standard energy bill, it’s worth

the change. 2) Turn down the water heater. When was the last time you used the “hot” tap without also

turning on the “cold” one? Whether showering or washing, we rarely need tap water as

hot as it can get, so why not turn down the hot water heater?

The standard setting is around 140 degrees, but adjusting it to 120 degrees could save up to 10 percent in water

heating costs. 3) Get insulated. Un-insulated homes don't just lose heat and cool air, they're also wasting energy and money (two things we should keep an eye on). Pay special attention to insulating the attic and basement (but don't worry so much about the garage). 4) Carpool. It saves gas and means fewer cars on the road (which means less carbon emissions). Plus, it'll keep you punctual and you'll have time to enjoy the other passengers in the car. 5) Watch those windows. When running heat or air conditioning, keep all windows and doors closed as tight as possible so air doesn't escape the room. It’s easy to forget that a window might be open a crack, but when air is seeping out of a room, the heater or air conditioner is working

saving Energy!harder than it needs to (which means unnecessary cash and energy is being spent). 6) Unplug everything. A lot of appliances, (un)affectionately called “vampire appliances,” use up electricity even when they're switched off. Set top boxes (like Google TV and Apple TV) are the worst culprits, but DVD players, modems, and computers also act like little Draculas, sucking up power even when they're meant to be off. 7) Buy energy-efficient appliances. Look for Energy Star Appliances, which cost a bit more money to buy initially, but are more durable, more environmentally friendly, and will save cash on utility bills. An Energy Star washer uses 50 percent less energy and water than standard washers, which means big savings over time. 8) Know your washing machine. Front-loader washing machines use less water and energy than their top-loading brethren (if you're in the market for a new one). It’s also best to wash with cold water as often as possible. About 90 percent of the energy used by a top-loader is for heating the water—and never run half a load! 9) Line dry. If you have a clothes dryer, there’s a good chance it uses more energy than anything else in your home. Grab a clothes rack, set up a clothes line outside, or just hang wet laundry on clothes hangers around the house. 10) Turn off the lights. Make a habit of turning lights off when leaving a room, and especially whenever you leave the house. 11) Know your dishwasher. Switching on a half-full dishwasher wastes water, energy, and money like nobody’s business. Always fill it to the brim, and learn to use the “delay” feature. A dishwasher that doesn't run until after midnight will rack up some of those sweet off-peak energy hours, saving some cash and helping the planet by reducing peak hour electricity demands.

It’s looking like the use of Styrofoam containers might go the way of plastic bags at least in San Luis Obispo. City

leaders are looking at putting together an ordinance that will ban the sale and use of certain types of polystyrene products.

Polystyrene is a petroleum-based plastic made from the styrene monomer. Most people know it under the brand name of Styrofoam. It’s used in everything

from packaging to take-out food containers. The biggest environmental health

concern is the danger associated with Styrene – it is classified as a possible

human carcinogen by the EPA. The city would like to ban these foam products from being used in San Luis Obispo restaurants

and in local stores. According to the Earth Resource Foundation,

the toxic chemicals that leach out of these products when

heated threaten human health and reproductive

systems. Almost 100 cities and towns, including San

Francisco, Seattle and Portland have banned polystyrene food and beverage containers,

according to the Natural Resources Defense Council.

You can take steps now to curb use of Styrofoam

containers by carrying reusable containers and asking your

favorite restaurants to replace these containers with healthier alternatives.

bye, bye...Styrofoam?

Optimism has been linked to better cholesterol, a better handle on stress and a stronger immune system. So how can we start adopting a brighter mentality? Here are six beliefs, that people who are optimists, remind themselves of on a daily basis. Good things are going to happen: Life is a series of ups and downs – and when they're in a valley, optimists anticipate the peak that's right around the corner. Gratitude makes you stronger: Optimists aren't just very aware of the positive aspects of their lives, they make sure to take stock of them. As a result, these simple acts of gratitude improve their mental well-being. Research has shown that expressing thanks can increase joy, result in better sleep, and even improve heart health. Tomorrow is a new day: Optimists know that when things don't go their way, they've just had a bad day, not a bad life, and a new day is coming tomorrow. Optimists know tomorrow is a fresh start. Anyone has the power to make a difference: Part of having a positive attitude is choosing to see the goodness that exists in the world. Research suggests this approach benefits them: A 2013 study found that realistic optimists were more likely to achieve more success and happiness due to their positive, yet grounded, views. Sleep is critical: In order to have a positive attitude, optimists get their proper shut-eye. And this habit helps: Research suggests that getting enough sleep may be linked with positive personality traits, such as optimism and self-esteem. Forgiveness is key to a happier life: We all have our pitfalls, and optimists choose to see those as opportunities for second chances. Adopting a bright mentality allows you to let go of a grudge in order to live a longer, joyful life. The person that you are having a hard time forgiving probably wishes that he or she could erase the past as well.

are you anOptimist?

cleaning your

TeaKettle!

For mineral deposit build up in your tea kettle, fill the kettle with water, add a handful of thin slices of lemon peel, and bring to a boil. Turn off heat and let sit for an hour, drain, and rinse well. For coffee pots, add ice, salt and lemon rinds to the empty pot, swish and swirl for a minute or two, then dump and rinse.

Quick Tips:

Use a water filter to purify tap water instead of buying bottled water. Not only is bottled water expensive, but it generates large amounts of container waste.

Chocolate...reaping the benefits!

Always opt for dark chocolate with the highest cocoa content (at least 70%). Dark chocolate contains polyphenols and flavanols, which work as an antioxidant to protect your body from damage done by free radicals. Unrefined raw cocoa also contains epicatechins, another powerful antioxidant, but it has a bitter taste and is therefore often removed from commercially available chocolate. Good quality dark chocolate also contains more soluble fibers and a wide range of essential minerals such as iron, magnesium, copper, manganese, potassium, phosphorus, zinc, and selenium. Avoid white or milk chocolate. Milk chocolate interferes with antioxidant absorption and white chocolate is one big sugar bomb. Research suggests 7 grams of dark chocolate a day, or half a bar a week, is the ideal amount to reap

the benefits. Dark Chocolate Strawberries: 2 tbsp. coconut oil, melted / ¼ cup cocoa powder / 1½ tbsp. maple syrup / ½ tsp. vanilla / 8 organic strawberries. In

a glass bowl, blend all the ingredients above except strawberries. If chocolate is too thick, put bowl in warm water to re-melt. Holding the strawberry

by the stem, dip into chocolate mixture and place on wax paper. Pop them in the freezer for 3–5

minutes for the chocolate to harden and then,

indulge!

helpful tips for

Garlic Lovers...Fresh is best when it comes to garlic. It is more trouble to use than garlic powder, extracts or minced preparations, but it is less expensive and incomparable in terms of flavor. Sauté gently over low heat in butter or olive oil until it turns golden. Don't let it burn or it will taste bitter. If you are going to sauté onions and garlic together, start with the onions and wait until they are almost done before adding minced or chopped garlic. Here’s a chef’s trick: To remove the skin of a clove, simply crush one or more with the side of a big kitchen knife. The skins will slip off easily. You can

also remove skins easily by dipping the garlic cloves in boiling

water for about a minute or heating them for 30 seconds in a microwave. Let cool and peel off skins with your fingers. Braided garlic strands also make a lovely decorative touch when hung in the kitchen. If you like garlic spread, try roasting unpeeled bulbs, wrapped in foil or in a garlic roaster for about 1 hour at 400 degrees in your oven. Cool, then cut across top (not stem end) and squeeze out the roasted clove. This makes a great spread for crusty French or Italian bread. Last, but not least, if you love garlic but hate the aftertaste, try chewing on parsley sprigs or fennel seeds. You can also drink lemon or lime juice.

Here are some important tips to shopping the eco-friendly way:

1) Have a list with you when you shop. You will save time and money and avoid unnecessary purchases. 2) Pick out items that come with less packaging. You will save by not having to dispose of it in your trash. 3) Shop using your own bag. If you forget, lots of stores sell them at minimal prices. 4) Walk to the store. If it’s too far, you can go ahead and bike. If you have to bring too many items, shop with a friend and carpool to save gas. Shopping with a friend is more fun anyway.
