Science has never drummed

tranquilizing agent as a sunny

spring day.

Page 4: Solstice Green - Spring 2013

Fifty years ago, at the 1962 World’s Fair in Seattle, the future was invented! Officially, the event was called the “Century 21 Exposition,” and it showcased a bright, utopian future, where technology solved all the world’s problems. Well, here we are in the 21st Century, and the world still has problems. In those five decades, the global population has doubled, and the average consumption per person has more than doubled. Our species

hasn't done a great job at "housekeeping" when it comes to the Earth.

As we look forward to the next fifty years, it's time we deal with these issues in new ways. The key to making this possible is the large and growing number of consumers, who in their consumption are conscious of the environment, conscious of their health, conscious of society, and of community, including consumers who are conscious of consumption itself. These “conscious” consumers dream of a better future, with sustainable products and services, delivered by “conscious” companies. The time has come to do a little homework to see how claims measure up before YOU become a customer...

The spring season is a good time to plan a cleanse. This helps the body to refresh and renew to prepare for allergy season and clean out toxins stored during winter. It is best to do a mild cleanse rather than a harsh fasting type. Drinking herbal cleansing teas can assist the body in clearing out toxins. Cleansing herbs include burdock root & dandelion root which help improve liver function. Marshmallow root has a soothing effect on the kidneys and urinary tract. Fennel, flax seed, and fenugreek flush out the gastrointestinal system. These herbs can be made into a tea taken 2 or 3 times a day for at least 3-5 days for a simple cleanse. A diet of fruits, vegetables, grains with a little fish and chicken and no processed foods should be undertaken during the cleansing period. Eliminate caffeine, sugar, alcohol, flour/wheat & dairy. In spring, focus on tender, leafy vegetables that represent the fresh new growth of this season. The greening that occurs in springtime should be represented by greens on your plate, including Swiss chard, spinach, kale, Romaine lettuce, fresh parsley, and basil. In early springtime, Mother Nature provides us with lots of greens that spring up with the soft rains. Dandelion, miner’s lettuce, sheep’s sorrel, beet greens, nettles, arugula, asparagus and many other herbs are ready to harvest as perfect diuretics for the kidneys, urinary tract and liver. A lemon liver flush first thing in the morning during a cleanse is highly recommended.

Here is the recipe: 1 lemon, rind and seeds removed / 2 tbls olive oil / 2 cloves of garlic / ½ inch chunk of fresh ginger / 1 oz. grapefruit juice (optional) / Blend all of the ingredients in a food processor. Take first thing in the morning and wait an hour before eating.

Quick Tip:

Throwing away an aluminum can wastes as much energy as if you filled the can half full of gasoline and poured it on the ground.

Sunscreen expiration?Sunscreen is designed to remain at its original strength for up to 3 years. After that, it isn’t very effective. Check the bottle for an expiration date. If it’s expired, has been around for more than 3 years, or has been exposed to high heat, toss it.

Birds may be the most welcome harbingers of spring. Colorful to see, a delight to hear, birds lend grace and beauty to our surroundings and provide natural insect control. To make your residence or neighborhood an inviting sanctuary for birds, create places for them to nest, feed, drink, and wash. Here's some advice on birdhouses, feeders, and birdbaths:

Birdhouses: If suitable natural nesting habitats such as old trees are in short supply, build or buy a birdhouse and install it out of reach of cats, squirrels, and other predators.

feeders: Commercial bird feeders are available in most hardware stores, but you can also make feeders out of plastic bottles or milk cartons that can be hung from safe places

such as a clothesline. If you prefer to grow bird food, consider planting native wildflowers, shrubs, and sunflowers.

flowers: Cultivated flowers also are especially attractive to some birds, particularly goldfinches, house finches, juncos, white-throated sparrows, and hummingbirds.

Bird Baths: Birds are most comfortable with a rough-surfaced source of water about 2 feet wide, no more than 2 inches deep. A shallow dish or gently-sloping bowl placed right on the ground will do, as will a plastic or terra cotta plant dish or inverted metal trash lid. Put the bath out in the open, not close to shrubs or places where cats can hide. A thorny bush or protective brush pile may make the birds feel more secure.

Gardening Tipsfor dry weather!

Weather patterns are becoming increasingly erratic. There is no way of assuring that "April showers will bring May flowers" anymore. The following techniques are a must in dry-weather but also provide useful guidelines for environmentally conscious gardeners everywhere. Group plants by their water needs. When possible, put high-need plants in naturally wetter areas of your property. Test your soil. Add organic matter when necessary - maybe from your own compost pile - to increase your soil's water-holding capacity. Mulch. Cover plant beds with composted leaves or grass to help retain moisture. Plant native species. Plants that have evolved in your area's climate are more naturally adapted to its water conditions.

some things to think about this

Earth Day!Earth Day this year falls on April 22nd. The suggestions that routinely appear, including recycle more and buy compact fluorescent light bulbs, certainly help build a healthier world. But to really do the job, we need to change more than light bulbs. We need to change the way we think. Here are the top 5 things you can do to help:

Burn less stuff. This means driving less, turning lights off, and other standard energy-saving strategies. pull your kids away from the tv and into the great outdoors. Kids who grow up without appreciating nature can grow into adults who don't understand why they should care about it. Visit national parks instead of theme parks this summer. Become a life-cycler. Before you buy anything, consider its full life cycle. What's

the product made from and where does that stuff come from? How is it manufactured, where is it produced, and what occurs when it is? What happens when you use it? And when it's thrown away? go local. Expand your definition of "local" to embrace things that are homemade, artisan-produced, used, and borrowed. The idea is to replace our unintentional economic backing of destructive practices, products, and companies with support for local economies, communities, and individuals even if they aren't next door. start sharing eco info. Yes, environmentalism is infectious. So tell everyone what you're doing and why. Tell your family, friends, neighbors, newspaper, and elected officials. Be friendly and compassionate. Avoid being pushy or self-righteous, and try sharing the inspiration

with a sunny smile!

Quick Tip:

It takes an incredible amount of energy to refine aluminum from its ore. Recycling it only takes a tenth as much electricity as making the same aluminum from virgin bauxite ore.Walking

Good forbody and mind!Spring is a great time to start walking. If you live near a grocery store and only need a few items, walk instead of drive. If you have school age kids, pick a day a week to walk with them to school. If you have a dog, give him a few extra blocks on your evening stroll, and instead of heading to the sofa after dinner, head outside for a jaunt. It’s good for the body and the mind.

Have you ever wished that you didn’t have to use Styrofoam to-go containers when ordering take-out food? Did you know that you may be ingesting harmful chemicals when you eat or drink hot foods from them?

Most restaurants choose Styrofoam because it is the least expensive option—an understandable concern. However, excellent and inexpensive alternatives are available. If you grew up using and loving Tupperware®, you may be pleased to know that you can now buy this same type of food container made of glass or stainless steel!

Styrofoam is created using a number of dangerous chemicals like benzene and styrene which may cause a variety of physical ailments to humans, not to mention the harm it can do to the environment. To break the chain of using Styrofoam for to-go food or beverages, consider doing one or all of the following:

1. Don't forget to carry a reusable mug or thermos with you at all times.

2. When you call in your to-go orders, tell them that you will be bringing your own food containers (and don’t forget them when you head out the door!).

3. Talk to your favorite restaurant’s manager about providing an alternative to Styrofoam.

Once you get into the habit of doing this, you’ll be happy that you did and you may even find that your food and beverages taste better too!

can having a Dog make you Healthier?Dogs. We love them. But, has anyone ever suggested that having one can make you healthier? Here is some information that supports that idea:

1. A study published in the Journal of Physical Activity & Health found that dog owners are 34 percent likelier to be more active than those who do not have a dog.

2. A study from the University of Western Australia found that people with dogs walk about 30 minutes more a week than non-dog owners.

3. Teens with dogs get about 32 minutes of physical activity a day, reports the American Journal of Preventative Medicine.

4. A one year study from the University of

Guelph found that having a pet around had a positive effect on the physical health of those 65 and older.

5. When people who didn’t own a dog signed up for a dog walking program, they lost 14 pounds in about a year, according to a University of Missouri/Columbia study.

6. Last, but not least, is a study from BMC Public Health, which shows that in addition to walks in the park, people with dogs are more likely to participate in outdoor recreational activities.

Has reading this convinced you to bring a furry buddy into you life? If so, check out the adoption facilities here on the Central Coast and join the many others who are healthier thanks to their canine pal!

With global CO2 emissions at an all-time high, our oceans are absorbing more carbon dioxide from the atmosphere and at faster rates than ever before, creating greater ocean acidity. This removes carbonate from the water. Carbonate is an essential building block for calcifying organisms such as corals, mollusks, sea urchins and many other important creatures that live on reefs or help to build them. Too much carbonic acid lowers the natural pH balance of the oceans, causing acidification, which wreaks havoc on marine habitats and species. Acidification is reducing the ability of shellfish, coral and fish to form shells, corals and bones, threatening the collapse of marine life. Some of the solutions proposed by leading climate change experts, top marine scientists, and prominent coral reef managers from around the globe include reducing global emissions, protecting reefs that are less vulnerable to ocean acidification, restricting access to more fragile coral communities, and farming local corals that prove more resistant to acidification, then “planting” them in place of those that weaken and break apart.

Blueberries a super food!Blueberries are a seasonal spring fruit. They are rich in antioxidants, vitamin C, and potassium. They're also great for your heart and act as a natural anti-inflammatory. In the summer, when these berries are in season,

why not add them to cereal, yogurt, or your favorite dessert? Strawberries, pineapple, mango, oranges, honeydew, limes, and apricots are some of the tasty fruits also in season during the spring months.

It's time to get gardening, deep-clean your home, and detoxify your body! Try these six tips to help you make green, earth-friendly choices throughout the lovely spring season.

1. skip the chemicals when spring cleaning your home: Spring is when we tackle really big cleaning jobs. You don't have to use heavy-duty cleaners to get the job done. Check out eco-friendly, non-toxic cleaning (page 34) and you probably already have most of the ingredients in your home!

2. choose organic, heirloom, native plants for your garden: Go local. Local nurseries will be able to help you choose plants that are uniquely suited to your area. Native plants don’t need as much water and fertilizer. Look for organic heirloom varieties of edibles. you're helping to preserve bio diversity.

3. throw an eco-friendly garden party: Garden parties are such a fun way to celebrate spring. Decorate your garden with recycled

accents, invite your friends over and serve local, organic food and beverages.

4. cleanse your body and spirit naturally: Give your body a fresh start with a spring detox: sip teas that help your body eliminate toxins, eat a light, cleansing diet and welcome tranquility into your life.

5. visit a national or state park, or a botanical garden: A big part of living an eco-friendly life is embracing and appreciating nature. In the springtime, there’s so much to see since wildlife is active, flowers are blooming and the weather is mild.

6. set a goal for being greener by summer: Take baby steps. Little things like skipping the drinking straw at restaurants, buying a reusable coffee filter, and eating ice cream out of a cone instead of a cup are so easy and attainable. Even small things help!

Spring is a favorite time for boating. It's a family favorite. It is also one of the contributors of the most serious hazards that pollute lakes, rivers and oceans. Careless disposal of plastic debris: plastic bags, six-pack rings, fishing line and food wrappings. Many people don't realize how hazardous this trash can be. Here are five steps that you can take to keep plastics out of the water:

1) On your boat, stow plastic trash and old fishing gear for proper disposal on land. Secure trash bags to a fixture on the boat (so that they are not accidentally washed overboard), and make sure all trash finds its way there. Dispose of trash at the dock. 2) Use reusable items such as washable dinnerware to minimize the amount of plastic waste that you generate. 3) Dispose of old fishing line properly. Lost

line can be lethal to fish, sea turtles, birds and other marine animals. 4) Clean up after picnics and beach outings. Dispose of all waste in trash receptacles to prevent debris, especially plastics, from blowing into the water from the beach. 5) Break or cut the loops of plastic six-pack rings before disposing of them to ensure that if the rings blow into the water, it will not entangle and harm an animal.

Vegans are people who, for a variety of different reasons, choose not to use or consume animal products. Unlike vegetarians who won't eat meat but will usually eat other foods that come from animals, vegans do not eat milk, butter, eggs or any other animal derived products. Many vegans also go a step further by avoiding the purchase of any type of animal product, like leather, for example, for any purpose. Although there is some debate as to whether certain foods, such as honey, fit into a vegan diet, if you are cooking for other vegans, it is best to err on the side of caution and avoid these and other questionable foods.

Holistic healing...

You might be surprised to learn that certain forms of holistic healing have been around since the 5th to 6th century BCE. Certainly, most have been practiced well before this time. Why does this approach to healing work so well? To me, holistic healing is taking into account all the dimensions of self. The emotional, mental and spiritual aspects of us need healing as well as the physical. It’s working with all the parts that create the whole. Most of the time the physical ailments are just the symptom of something that was not addressed at another level and manifested as an illness or disease in the physical

body. Fortunately, we have many types of holistic healing available to us. By using these alternative healing forms, in addition to the traditional medicine, we can be more complete in our process and keep the physical symptoms from re-occurring or prevent them from showing up at all. Some examples of alternative healing are: Multi-Dimensional Soul Level Healing, Acupuncture, Massage, Energy Healing, Reiki, Sound Healing, Transformational Guidance such as Astrology, Intuitive Reading, and Meditation to name just a few. See the glossary of terms on pages 50 to 51 of this book for more examples.

URES One area of our environment is our

home/apartment which calls for a periodic cleaning. Yet many cleaners used to remove dirt and dust within our household may irritate our eyes, lungs, and skin due to the various hazardous substances within them. These are just some of the ways to clean in a more environmentally friendly way with baking soda and vinegar:

1. Vinegar is effective in cleaning windows and mirrors. Try using approximately a quart of water mixed with one-fourth cup of white vinegar on the windows and wipe dry with a newspaper or rag.

2. Baking soda may be used as a carpet deodorizer. Sprinkle baking soda on the carpet and let it remain overnight, then in the morning vacuum the carpet.

3. Sprinkle some baking soda inside of the dishwasher before using, as it will remove some of the material that collects inside and refresh the smell of the unit.

4. Use baking soda for cleaning the toilet. Sprinkle the baking soda into the bowl, then squirt with vinegar and follow up by scouring with a toilet brush.

5. Clean the tub and tiles by using two cups of baking soda and enough water to make

a thick paste. Place paste on the tub

or tile and leave for approximately 20 to 30 minutes. Use a soft rag to remove the paste from the surface. Spray the area with 50/50 vinegar and water to rinse.

6. For a slow moving drain, try using approximately a quarter cup of baking soda. Pour the soda down the clogged drain, followed by a half cup of vinegar. Tightly close the drain until fizzing stops, then flush the drain area with boiling water. For completely clogged drains, use a plunger or a plumber’s snake to dislodge the clogged material.

7. Counters and walls can be cleaned with a mixture of approximately one part vinegar and three parts water.

May we continue to be respectful of life by reducing, recycling, reusing, and conserving the goods of our sister, Mother Earth.

Quick Tip:

For every family that recycles its daily newspaper, five trees can be saved every year.

No doubt you’ve heard about “superbugs” – virulent bacteria stubbornly resistant to the antibiotics developed to fight them.

There’s increasing evidence that antibiotic protocols typically used in high-production feedlots are contributing to the rise of these bugs. Because the livestock are generally crowded together in less than pristine conditions, the animals are routinely dosed to keep them healthy and to promote faster weight gain.

Realize that this is not getting antibiotics as humans would, to restore health. The livestock are getting antibiotics to maintain health, and they’re getting a lot of them. In his June 11, 2011 New York Times opinion-editorial piece, Nicholas Kristof noted that, “The Food

and Drug Administration reported recently that 80 percent of

antibiotics in the

United States go to livestock, not humans… The single state of North Carolina uses more antibiotics for livestock than the entire United States uses for humans.”

To avoid eating meat produced this way, The Consumerist suggests checking labels for “organic,” “certified grass fed,” and specifically stating “no antibiotics used,” or for certification from “American Grassfed Food Alliance.”

Another option for those of us here on the Central Coast: buy from local livestock producers with whom you can have a conversation about their ranching practices. Yes, this meat might cost more than what’s on sale at a national grocery store, but you’ll not only be keeping your dollars at home, you will also be eating meat that’s healthier for you and tastes better as well!

Of all the bounty that spring brings to farmers, fava beans stand out. An ancient member of the pea family (Europeans and North Africans have been eating for millennia), fava beans have a nutty taste and buttery texture all their own.

All fava beans have to be shelled. Look for sturdy green pods with velvety fuzz. Avoid any with slimy brown spots. For most recipes, you'll blanch and peel the beans. Remove beans form pods and cook in a pot of salted boiling water for 2 minutes. Drain, and run under cold water. Remove skins. Here are a couple more recipes.

fava Bean soup: Saute 1½ cups chopped white onion in 1 tablespoon extra virgin olive oil. Season with sea salt. Stir in 2½ cups vegetable stock. Bring to a simmer. Add 2½ cups blanched, peeled fava beans. Simmer until tender. Stir in ½ cup grated Parmesan. Puree. Season with lemon juice, sea salt and freshly ground pepper.

grilled fava Beans: Stir together chopped mint or cilantro, extra virgin olive oil, sea salt and pepper. Grill fava bean pods directly on grates over high heat, turning, until charred, 10 to 12 minutes. Let cool. Sprinkle with mint or cilantro, lemon juice and sea salt. Serve with your favorite herb sauce and lemon wedges.

Barn Owls nature's pest management

Sustainable farming rises out of necessity as man realizes that natural resources such as water, soil and bio diversity are not infinite. Barn owls have been helping humans since before the term “integrated pest management” was invented. One family of barn owls can consume over 3000 rodents per year making them the farmer’s best friend. In recent years the rodent-suppressing abilities of this predator has attracted a growing interest among agribusinesses. The more barn owls inhabit a site, the fewer rodents. The vineyards and olive orchards in California are attracting owls to control pocket gophers as well as other troublesome rodents. Red-tailed hawks are Mother Nature’s answer to ground squirrel control. With a combination of these predators, environmentally safe rodent control is 24/7. Creation of safe barn owl habitats is an alternative to the use of deadly poisons and pesticides, achieves great rodent control plus contributes to the conservation of the beloved barn owl.

Is it more environmentally friendly to buy beer in aluminum cans or bottles? Virgin glass is made by combining sand, soda ash and limestone in a blast furnace at temperatures of over 2700ºF. Bottles can also be made with up to 100% recycled glass. In practice, 40% recycled glass is mostly used. Aluminum is the third most abundant element (after oxygen and silicon) and is refined from the ore bauxite

through a very energy intensive refining and smelting process that also creates a number of greenhouse gasses including the extremely potent perfluorocarbons (PFCs). It is by far the most energy demanding material. It requires 211 megajoules (MJ) of energy per kilogram to produce, compared to 10 to 14 MJ per kilogram for glass. The figures for each are improved when recycling is taken into account. All are highly recyclable and energy savings of 93% are possible for recycled aluminum and 57% for glass over virgin product. Despite the savings through recycling, aluminum production is still the least energy efficient, although a can is much lighter than a bottle, therefore reducing transportation costs. So in summary, a close call; glass wins by a narrow

margin.

in the raw...Brussels Sprouts!

by Betsy Asmus

Eating raw, organic, local and seasonal is an adventure during the colder months. Grab yourself a stock of Brussels sprouts! You know, those little cute looking cabbage-like green globes at your local Farmer’s Market. Here's a way to try them:

ingredients: 1 pound Brussels sprouts, trimmed, leaves separated / 2 Tablespoons pumpkin seeds / 1 avocado, sliced / 3 Tablespoons extra-virgin olive oil / 1 teaspoon Dijon mustard / Zest of 1 lemon / 1½ Tablespoons lemon juice / Sea Salt / Freshly ground black pepper.

instructions: Whisk together in a small mixing bowl the lemon zest, lemon juice and mustard. Gradually add in the olive oil, whisking to emulsify. Toss the dressing with the Brussels sprout leaves and the pumpkin seeds. Gently stir in the avocado and season to taste with salt and pepper.

raw food Betsy Hints: You can brighten up this salad by adding segments of tangerine or pomegranate seeds; swapping out the pumpkin seeds for diced pecans, or adding shaved fennel and celery root to make this an even heartier salad.

It is also the home of nesting Peregrine falcons, and is closed to any climbing or disturbance. Morro Rock was an important navigational aid for mariners for over 300 years, as its height of 576 feet, made it the most visible in a chain of nine peaks. Portuguese explorer Juan Rodriguez Cabrillo named the rock “El Morro” in 1542. In Spanish "Morro" means crown shaped hill. Morro Rock, sometimes called the “Gibraltor of the Pacific,” is the last peak which extends from San

Luis Obispo to Morro Bay. In 1966 a bill was introduced which transferred the full title to the State of California. Later the San Luis Obispo

County Historical Society and the City of Morro Bay succeeded in getting the Morro Rock declared

as a California Registered Historical Landmark in 1968. The rock has

since been designated a bird sanctuary.

Mercury-Free dentistry by Scott Taylor, D.D.S.

Many people, and even some dentists, do not realize that “silver” amalgam fillings are around 50% Mercury. A large filling may contain as much mercury as a thermometer. Mercury vaporizes easily at room temperature, and in this state, is odorless, colorless and tasteless. Inhaled mercury vapor is readily absorbed into the bloodstream. The World Health Organization has concluded that dental fillings contribute more mercury to a person’s body than all other sources of mercury combined. For a portion of the population, mercury can be powerful, long-term poison, especially if one’s ability to detoxify isn’t optimal. Published research demonstrates that mercury is more toxic than lead, cadmium or arsenic. No amount of exposure to mercury vapor can be considered harmless, especially considering its cumulative effect.

Many patients ask me if I’m a mercury-free dentist. Yes, I am! But let me explain what that means. Some dentist advertise themselves as mercury free so long as they don’t place new amalgam fillings. When you choose a

mercury-free dentist, find out what measures they take to protect you from mercury whenever any failing amalgams in your mouth may need to be replaced. A mercury free dentist will at least use a non-latex rubber dam, air filters within the room to trap stray mercury vapor, high speed suction beside the drill, suction under the dam, and also offer the option of a fresh supply of oxygen or medically filtered air. In addition, a good dentist will also be willing to work with your physician or other whole-body practitioner to coordinate recovery and detoxification with your dental work.

acupuncture is a form of health maintenance, which stimulates the body’s ability to correct and balance itself. Based on the ancient Chinese practice of using ‘punctures’ to cure the body of disease and relieve pain. This process is used to channel the chi life force throughout the body by a network of meridians in a continuous flow. Disease is considered to be an imbalanced meridian system, and ‘needles’ are inserted at various points along the meridians to stimulate or disperse the life-force flow to correct the imbalance.

aromatherapy is a form of alternative medicine that uses volatile liquid plant materials, known as essential oils (EOs), and other aromatic compounds from plants for the purpose of affecting a person’s mood or health. Essential oils differ in chemical composition from other herbal products because the distillation process only recovers the lighter phytomolecules. Aromatherapy is a generic term that refers to any of the various traditions that make use of essential oils sometimes in combination with other alternative medical practices and spiritual beliefs.

ayurveda is an ancient holistic science from India. Said to be more than 5,000 years old, ‘Ayur’ means life and ‘Ved’ means knowledge. Ayurveda is the study of longevity that offers healing, rejuvenation, and self-actualizing therapies utilizing diet, exercise, yoga, herbs,

sound vibration therapy is based on the fact that the universe is in a constant state of vibration; therefore, the body’s cells are constantly vibrating. Sound vibration therapy employs the direct application of the voice, music, and other sounds.

52 Solstice Green Directory - Spring 2013

We have been asked many times why we

chose the name Solstice for our Green

Directory. Twice each year, the Earth is at

a point in its orbit, where one hemisphere

is most inclined away from the Sun. This

causes the Sun to appear at its farthest below

the celestial equator when viewed from the far

hemisphere. It creates the longest day (summer) or

longest night (winter). The Sun appears to “stand still,”

which is the literal Latin translation of the word solstice. It can

go no further before returning to balance. It then begins its journey

back to the point of equinox (equal day and night). We are now at the point

of “solstice” for our species and all living things on Earth. We too must begin our journey

back to balance on this beautiful shimmering blue planet we call home, if we are to survive.
