Summer has arrived in full bloom with soaring temperatures! We will

not complain as after that cold winter, we welcome the heat and beautiful weather. Both Lynn and I are very excited about our upcoming Summer Extravaganza, which is SOLD OUT. It’s hard to believe it is our 8th annual gathering, and we promise that it will be a wonderful day at Graycliff Estates!! Be sure to take the opportunity to meet your fellow Solo members from all of our areas: Buffalo, Rochester and Syracuse.

Our Group Dept. is hard at work planning our 2019 trips and I know it will be another great year of exciting adventures, new friendships and many more memories. If you haven’t been on one of our trips, make 2019 the year that you will join us! You will meet many new friends and will have an enjoyable time.

Enjoy the summer, get outside and take time to smell the flowers. We hope to see you on one of our upcoming trips. Don’t forget, we will be heading to Boston this year for New Year’s Eve and yes, rum swizzles will be served. Book now so you won’t be disappointed as the space will go fast!

( My mom's...and it was always a hit! )

INGREDIENTS:• 2-4 lb. chicken breast, cooked

and cut up in small chunks• 1 cup pineapple chunks

(I split the chunk in half)• 2/3 cup slivered almonds

• 1 cup sweet pickle, chopped• 1 cup celery, diced• ½ cup green pepper, diced• 2 Tbsp minced onion • 1 cup Hellmann’s mayonnaise

DIRECTIONS:Combine all ingredients, mix well. Serve on croissants with crisp lettuce, finish the plate with a side serving of cantaloupe. Great for a summer meal, very refreshing!
