Easy set-up guide
Before using for the first time, wash thelid and the ceramic pot. Assemble theslow cooker by putting ceramic pot
into the base.

Place ingredients and stock/sauce intothe ceramic pot and place the lid on.Do not fill to brim, allow 2.5cm (1 inch)underneath the rim of the ceramic potfor simmering. We advise you tobrown meat in a separate pan prior toslow cooking. With liquids always usehot stock, gravy or sauce to aid the
cooking process.
2 Select Timewarmhighlow
Plug in the appliance, four smalldashes will appear on the display. Thisindicates the product is in standbymode.3 LOW HIGH WARMSelect the heat setting by pressing theSelect button. Press once for the Lowsetting or twice for the High setting. Adefault time of 7 hours will appear forthe Low setting and 3 hours for theHigh setting. A red indicator light willappear and the display will flash.

The cook time can be adjusted bypressing the Time button whilst thedisplay is flashing or even once it hasstopped.Cooking will start automatically oncethe display has stopped flashing.

To adjust the default times, press theTime button which increases in 30minute intervals within a time range:Low range 7 10 hoursHigh range 3 8 hours6 W HIGH WARM TIME
Once cooking has started, the displaywill begin to count down, indicatingthe amount of time remaining.7 LOW HIGH WARM TIMECTWhen cooking has finished, thedisplay will show zero hours andminutes and will automatically switchinto the Keep Warm function. A greenindicator light will appear and thedisplay will count up in minutes to amaximum of 2 hours.
8 HIGH WARM TIME
To serve food, unplug the slow cookerand remove the lid. We recommendfood is served directly from the slowcooker. If you remove the ceramic potuse oven gloves and please take greatcare as the pot will be heavy.

Mains lead The mains lead should reach
from the socket to theappliance without straining theconnections.
Do not let the mains lead hang

Do not let the lead run acrossa cooker or hot area whichmight damage the cable.
Never leave the applianceconnected to the socketoutlet when not in use.

Other safety considerations Do not switch on the slow
cooker if the ceramic pot isempty.
Allow the lid and ceramic potto cool completely beforeimmersing in water.
Never cook directly in thebase unit. Use the ceramicpot.
Do not use the ceramic pot orlid if cracked or chipped.
Do not switch on the
appliance when it is upsidedown or laid on its side.
The lid and ceramic pot arefragile. Handle them withcare.

About Slowcooking
Slow cooking has alwaysbeen the best way toprepare a nutritious hot mealwith minimum preparationand maximum free timeaway from the kitchen.
Slow cooking gives youconvenient, versatile andflavoursome food. The longercooking times allow betterdistribution of f lavours,giving them time to blendand season the food. A slowcooker heats food gently,making it a great way tocook meats - in particular,less expensive cuts, such asstewing beef, which aretenderised through the longcooking process. Rememberthere are no limits to thepotential uses of your slowcooking, only in yourimagination!
IMPORTANT: The slowcooker works by building upheat and maintaining aneven temperature. To get thebest cooking results, do notremove the lid during
cooking, since this will loseheat and therefore slowdown the cooking time. Thetransparent lid allows you tomonitor the cookingprogress without interruptingthe cooking time.
USING FORTHE FIRST TIME
Before use, wash theceramic pot and glass lid inhot soapy water, rinsethoroughly and dry.
During initial use, you may
notice a slight odour due tothe burning off ofmanufacturing residues. Thisis completely normal and willdisappear after a few uses.
INSTRUCTIONS FOR USE
Assemble the slow cookerby placing the ceramic potinto the base.
Place ingredients andstock/sauce into the ceramicpot.
This 5 litre slow cooker has aworking capacity of 4 litres,space must be left betweenthe top of the ceramic potand the food surface toallow for simmering. Werecommend 2.5cm (1 inch)of space is left.
We advise you to brown themeat prior to slow cooking,this must be done in a pan.Do not try and brown food inthe slow cooker.
Plug in the appliance, foursmall dashes will appear onthe display. This indicatesthe product is in standbymode.
TIME SETTINGS
This slow cooker has twosettings, Low and High. TheLow setting has a range ofbetween 7 10 hours andthe High setting between3 8 hours.
Select the Low or Highsetting by pressing theSelect button. Press oncefor the Low setting or twicefor the High setting.
For the Low setting a defaulttime of 7 hours will appearand for High setting 3 hours.
A red indicator light will
appear and the display willflash.
To adjust the cook timepress the Time button whilstthe display is flashing oreven once the flashing hasstopped. The time scale beadjusted within a time range.
Refer to the cooking timesrequired in the recipes.
Low range 7 10 hoursHigh range 3 8 hours
COOKING
The slow cooker startscooking automatically oncethe display has stoppedflashing. Once cooking hasstarted the display will beginto count down, indicatingthe amount of timeremaining.
Never leave uncooked foodat room temperature in theslow cooker.
KEEP WARM When cooking has finished,
the display will show zerohours and minutes and willautomatically switch intoKeep Warm function.
A green indicator light willappear and the display willcount up in minutes to a
maximum of 2 hours untilyou are ready to serve.
Food should not be kept in awarm state for more than 2hours, if food is left over andyou need to keep it, allowthe food to cool and freeze.
SERVING To serve the food, switch off
at the power socket andunplug.
We recommend food isserved directly from the slowcooker. If you choose toremove the ceramic pot,
oven gloves must be wornand great care must betaken as the pot is heavy.
Always place the ceramicpot on a heat proof mat orsurface if removed.
CAUTION: be careful not totouch the base unit aftercooking as it remains hot.

SLOW COOKINGTIPS
In use tips
Removing the lid will allowvaluable heat to escapereducing the efficiency of theslow cooker. If you removethe lid more than a couple oftimes you will need to allow10 15 minutes extracooking time.
After cooking if there is toomuch moisture in your food,remove the lid and turn thecontrol to High if set to Lowand reduce the moisture bysimmering for 30 minutes.
Alternatively if the recipeallows, use cornflower tothicken the liquid.
Do not use the slow cookerto reheat food.
If you are cooking halfquantities, time can bereduced usually to 2 /3 rds, soif a recipe calls for 10 hourson Low, this will require 7hours.
The food will be fully cooked
using the time guide in therecipes, depending onpersonal preference if youfind you need to cookfurther to soften rootvegetables, if set to Lowsimply select High and cookfor a further 30 minutes.
Preparing food tips general
If adapting an existing recipefrom conventional cooking,you may need to cut downon the amount of liquidused. Liquid will notevaporate from the slowcooker to the same extent
as with conventionalcooking.
Make sure all frozeningredients are thoroughlythawed before use.
Some ingredients are notsuitable for slow cookingsuch as; pasta, seafood,milk and cream. Theseshould be added towardsthe end of cooking.
Preparing food tips meat
In most recipes in thisbook, the meat ingredientsare browned first toimprove their appearanceand flavour.If you choose to skip thisstep, simply add your meatinto the slow cooker andcover with boiling stock. Youwill need to increase therecipe cooking time. ForHigh add 1 hour, for Lowadd 2 hours.
Browning meat before slowcooking helps seal in juicesand reduces fat separationduring slow cooking.
Where stock is required useboiling water, this will aid thecooking process;
Trim excess fat from meat
before cooking as slowcooking does not allow fat toevaporate.
Slow cooking gives youflavoursome food. The longercooking times allow betterdistribution of f lavours,giving them time to blendand season the food particularly less expensivecuts of meat such asstewing beef which istenderised through the longcooking process.
When cooking joints ofmeat, ham, poultry, the sizeand shape of the joint is
important. Try to keep the joint in the lower two thirdsof the ceramic pot and fullycover with water. Ifnecessary, cut into 2 pieces.
Insert a meat thermometerinto joints of roasts or hamsto ensure they are cooked tothe desired temperature.
Preparing food tips vegetables / pulses
Cut root vegetables intosmall even pieces, as theytake longer to cook thanmeat. They should be gentlysauted for 2-3 minutesbefore slow cooking. Ensurethat root vegetables arealways placed at the bottomof the ceramic pot and allingredients are immersed inthe cooking liquid.
Uncooked red beans mustbe soaked and boiled for atleast 10 minutes to removetoxins before use in a slowcooker.
CARE ANDCLEANING
Allow the ceramic pot andlid to cool before washing.
The ceramic pot and glasslid may be washed in adishwasher or washed byhand in hot soapy water. Donot use harsh abrasivecleaners.
Do not immerse theelectrical base or plug inwater, or any other liquid. Toclean the base, unplug andwipe clean with a dish cloth.
CARE FOR THE CERAMIC POT
Authentic stoneware is firedat high temperatures,therefore, the ceramic potmay have minor surfaceblemishes, the lid may rockslightly due to theseimperfections. Low heatcooking does not produce
steam, so there will be littleheat loss. Due to normalwear and tear through theproducts life, the outersurface may start appearingcrazed.
Do not put the ceramic potor lid in an oven, freezer,microwave or on agas/electrical hob.

Do not pre heat beforeadding ingredients.
Do not subject the pot tosudden changes intemperature. Adding coldwater to a very hot pot couldcause it to crack.
Do not allow the pot tostand in water for a longtime (you can leave water inthe pot to soak). There is anarea on the ceramic pot thathas to remain unglazed formanufacturing purposes.This unglazed area isporous, therefore will soakup water, this should beavoided.
Do not switch the cooker onwhen the ceramic pot isempty or out of the base.
Cooking time range
Some recipes in the bookinclude a time range (eg. 4-6hours.) This indicates therecipe will be cooked in 4hours, however it is stillacceptable to leave the food
cooking for 6 hours.
RECIPES
Vegetable soup4 litres
Butter 50g
Mixed vegetables, (e.g. potato,onion, carrot, parsnips, celery,leek, tomato etc.) 2kg
Flour 50g
Stock 1.5 litre
Mixed herbs 2 tsp
Salt and freshly ground blackpepper
MethodPeel, wash and cube or sliceall the vegetables. Melt thebutter in a pan and gently frythe vegetables for 2-3minutes. Add the hot stock,stir well and bring to theboil. Season to taste andadd mixed herbs. Transfer allingredients to the ceramicpot and place pot in theslow cooker base. Coverwith the lid and cook forapproximately 4 1 /2 - 6 1 /2
hours on High or 8-10 hourson Low. Cool and liquidisethe soup and then reheat ina pan on the hob. Thicken itwith the flour.
Minestrone soup4 litres
Butter 50g
Streaky bacon, chopped90g
Onion, finely chopped 2 large
Garlic cloves, crushed 3
Celery, chopped 4 sticks
Potatoes, peeled and cubed450g
Carrots, peeled and diced2
Cabbage leaves, shredded4
Tomatoes, skinned and roughlychopped 4
Chicken stock 2 litre
Tomato puree 2 1 /2 tbsp
Worcestershire sauce 2 1 /2 tbsp
Parsley, finely chopped 2 tbsp
Pasta shells 120g
Parmesan cheese, grated3 tbsp
Salt and freshly ground blackpepper
MethodMelt the butter in a pan andfry bacon and vegetablesuntil soft. Make up stock andadd stock, bacon andvegetables to the ceramicpot. Add remainingingredients except theparsley, pasta shells and
parmesan cheese. Place theceramic pot in the base unit,cover with lid and cook forapproximately 4 hours onHigh or for 10 hours on Low.45 minutes before serving,add the pasta shells andparsley. Adjust theseasoning if necessary andsprinkle with parmesancheese. Serve with crustyfrench bread.

Lentil soup4 litres
Smoked bacon, chopped175g
Onion, finely chopped 2 large

Method
In a pan, gently fry thebacon until the fat begins torun. Add the onion, carrotand celery and fry until soft.
Add all the remainingingredients except theparsley and bring to the boil.Simmer for 2 minutes.Transfer to the ceramic pot.Place ceramic pot into theslow cooker base, cover withthe lid. Cook forapproximately 3 hours onHigh or 10 hours on Low If asmoother consistency isrequired, liquidise the soupafter cooling and then reheatthe soup in a pan. Sprinklewith parsley and serve with
crusty french bread.

Seasoned flour 60g
Onions, chopped 4 large
Carrots peeled and sliced5
Green pepper, de-seeded andchopped 2

Chicken stock 800ml

MethodClean, wipe and dry chicken,coat in seasoned flour. Usinga pan, fry the chicken in thebutter until brown all over.
Add onions and carrots andfry until soft. Add pepper,
paprika, tomato puree, andthe remaining flour, stir well.Gradually mix in the chickenstock. Bring to the boil andseason. Transfer allingredients to the ceramicpot and place in the baseunit. Cover with the lid andcook for approximately 3-4hours on High or for 10hours on Low.
Carribean Chicken4 litres
Vegetable oil 3 tbsp
Onion, chopped 2 small

Mushrooms, sliced 300g
Red pepper, de-seeded andsliced 2
Chicken joints, skinned 6
Canned sliced peaches 1
Canned pineapple chunks1
Cornflour 8 tbsp
Paprika 3 tsp
Soy sauce 3 tbsp
Worcestershire sauce 3 tbsp
Malt/wine vinegar 6 tbsp
Boiling water 700ml
Salt and freshly ground blackpepper
MethodFry onions, celery, carrot,mushrooms and pepper in apan. Add chicken joints andfry until browned all over.Drain peaches andpineapple, reserving juice,and add them to the pan. Tomake the sauce, blendcornflour and paprika withsoy sauce, worcestershiresauce, vinegar and reserved
juice, add seasoning, boilingwater and pour into pan.
Bring the sauce to the boil,stirring continuously. Transferall ingredients to the ceramicpot and place pot into thebase unit. Cover with the lidand cook for approximately4 hours on High or 10 hourson Low.

Chicken in white winesauce4 litres
Chicken joints, skinned 6
Butter 60g
Onion, finely chopped 2 large
Mushrooms, sliced 20 0g
Cornflour 3 tbsp
Dry white wine 800ml

Double cream 7 tbsp
Salt and freshly ground blackpepper
MethodPlace the chicken joints andbutter in a pan and gently fryuntil all the juices are sealedin. Add the onion and fryuntil softened but notbrowned. Add themushrooms and cook for aminute on low heat. Blend
the cornflour with a little ofthe wine. Pour the remainingwine into the pot with theblended cornflour, mixedherbs and seasoning. Bringto the boil, stirringcontinuously until thickened.Transfer all ingredients to theceramic pot, place in thebase of the slow cooker andplace the lid on the slowcooker. Cook for forapproximately 4 hours onHigh or 10 hours on Low.Just before serving, beattogether the egg yolk andcream. Beat in a fewtablespoons of hot sauce,mix well together. Pour this
mixture into the slowceramic pot and stir until thesauce thickens.
Chicken andmushroom casserole4 litres
Chicken quarters 6
Butter 50g
Flour 2 1 /2 tbsp
Onions, finely chopped 2 large
Celery, thinly sliced 3 sticks
Mushrooms, thinly sliced 400g
Clove of garlic, crushed 2
Chicken stock 600ml
Salt and freshly ground blackpepper
Cream (optional) 6 tbsp
MethodToss the chicken in the flour,place in a pan and fry in thebutter until golden brown onall sides. Add the onion andcelery and gently fry untilsoftened but not browned.
Add the mushrooms andgarlic and stir in the stock.
Bring to the boil and season.Transfer all ingredients to theslow ceramic pot and placepot in the base unit. Placelid on the slow cooker.Ensure that the chicken andvegetables are immersed.Cook for approximately 4 1 /2 -61 /2 hours on High or for 8hours on Low. Beforeserving, stir in the cream.
New England Beef4 litres
Piece of topside 1.5 kg
Bouquet garni 1

Swede, diced 200g
MethodPut the beef into a pan andcover with cold water. Addall the remaining ingredients,cover and bring to a simmer.Season well and thentransfer all the ingredients tothe ceramic pot. Place theceramic pot in the slowcooker base. Place the lidonto the slow cooker. Cookfor approximately 4 hours onHigh or for 10 hours on Low.Take the beef out of the slowcooker with a slotted spoonand allow to cool for 10
minutes. The cooking liquidcan be used as a base tomake gravy. Cut the beefinto slices and spoon a littleof the cooking liquid over.Serve with vegetables andgarnish with fresh parsley.
IMPORTANT: When buying a joint of meat, make sure thatit will fit the ceramic pot. Itshould fit into the ceramicpot so that when it iscovered with liquid, it will stillbe 2.5cm below the rim ofthe pot. The joint must notstick out above the rim andthere should be enoughroom to cover the meat with
water. The shape of the meatis just as important as theweight.

Chilli con carne4 litres
Vegetable oil 21 /2 tbsp
Onions, chopped 2 large

Minced beef 800g

Chilli powder 3 tsp
Flour 2 tbsp
Brown sugar 2 tsp
Tomato puree 6 tbsp
Can red kidney beans, drained2 x 400g
Salt and freshly ground blackpepper
MethodFry the onions, garlic and
pepper in a pan until soft. Add minced beef and fryuntil lightly browned. Blendtogether chilli powder, flour,brown sugar and tomatopuree. Stir in tomatoes, chillipaste and seasoning.Transfer all ingredients to theceramic pot and place pot inslow cooker base. MethodFry the onion garlic andmeat until browned on allsides. Add the tomatoes andwine to the meat and bringto the boil on the hob. Oncethis has come to the boiltransfer all the meat andstock mixture to the ceramicpot and add all theremaining ingredients. Cookfor 5 1 /2 to 6 hours on High
and from 8-10 hours on Low.Remove the bay leavesbefore serving.

MethodIn a pan, gently brown themince without adding any fator oil. When the fat hasstarted to run from the meat,add the onion, celery and

MethodCut pork into cubes andtoss in seasoned cornflour.Heat oil in a pan and frygarlic and onion. Add porkand fry until lightly brownedon all sides. Blend cornflourwith pineapple juice and add

Boiled ham
Gammon joint up to 1.4 kg.
MethodPut the gammon in a pan,cover with cold water andbring to the boil, drain andrinse. Place in the ceramicpot and cover with boilingwater. Place the ceramic potin the slow cooker base unitand cover with the lid. Cookfor approximately 5-6 hourson High or 7-10 hours onLow. Drain and cool slightlybefore removing the skin.
Allow to cool, wrap tightly inkitchen foil and place in therefrigerator until well chilled.Coat fat with toastedbreadcrumbs before serving.IMPORTANT: When buying a
joint of meat, make sure thatit will fit the size of theceramic pot. It should fit intothe ceramic pot so thatwhen it is covered with liquidit will still be 2.5cm belowthe rim of the pot. The jointmust not stick out above therim and there should beenough room to cover the
meat with water. The shapeof the meat is just asimportant as the weight.

Place the basininto the ceramic pot and fillwith boiling water half way

Vanilla pod 1 / 2
Double cream 400ml
Egg yolks 5
Caster sugar 40g
Icing sugar 2 tbsp
MethodSlit the vanilla pod and placein a sauce pan with cream.Bring just to boiling andquickly remove from heat.Leave for the flavours toinfuse. Mix egg yolks andsugar. Scrape seeds fromvanilla pod and add tocream. Warm the vanillacream and stir in eggmixture (its important thatthe eggs combine with thecream and do not cook.)Strain the custard into a jug.Pour mixture into 1 litrepudding bowl and place inslow cooker and fill withboiling water half way up thesides. Cover and cook onLow for 3- 3 1 / 2 hrs until set.Lift out, cool and place in
fridge until well chilled.Just before serving sprinklewith icing sugar andcaramelize with a blowtorch.
