What is it?

History

• Originally made with oatmeal

• Walkers shortbread are Scotland's largest food exporter

• In Swedish, it is known as “Dreams”…

Walkers Shortbread Ltd.

Part 1 of Production

•Ingredients brought in by truck and stored in large Vats

•When required, the correct amount of each ingredient is released from vats onto a conveyor belt

•This transports them to the mixing machines

•They are mixed together in large mixing machines.

•When the dough is completely mixed together, it is released, and placed in moulds

•The moulds are stacked together on trays.

•These trays are transported (by forklift truck) to the ovens.

•The ovens used are large tunnel/belt ovens ensuring an even cooking time for all shortbread.

•After completion, the biscuits are taken out and left to cool for an hour in a clean chilled room.

•The cooled shortbread is then placed on conveyor belts

• These conveyors transport the shortbread through to a different room where people place them into plastic trays (usually PVC, PP, PET or thin acrylic)

• Trays are then placed on another conveyor belt

• Plastic covers are used to seal the trays and keep the products fresh

• Trays are placed in decorated boxes

• Boxes are stacked on a pallet

• Pallets are transported to the wrapping machines

• Pallets are then wrapped in cling film to ensure stability and security of products

•Pallets loaded into lorry and dispatched…

• The company has received three Queen's Awards for Export Achievement, "the highest accolade given to British exporters."

• Still owned by the Walkers family (they are the only people who can afford Ferraris and Range Rovers in our area!)
