SHASHLIKby Anastasia in the Netherlands
I went to Saturadys market that we have
in Eindhoven and bought one shoulder of
a lam in Turkish butchery.
To prepare shshlik from lam I need:
white onions,
fresh parsley,
fresh thyme,
olive oil,
honey,
white semi-dry wine,
salt,
black pepper powder,
coriander seeds.
I cut meat in cubes
+/- 5cm

I need 3x medium size white onions that I cut in thin rings

I use pepper powder just for a taste and not to make shash-
lik spicy. I depends on individual taste. Coriander should be
crushed so I get more taste out of the seeds. Chop fresh thyme
& parsley.

I put about half of sopu spoon of salt, 2x soup spoons of honey
& 1x soup spoon of olive oil.

I use white semi-dry wine, not
expensive. I need about 2,5x
glases of it on the amount of
meet that I get from one shoul-
der. 3.3
I put all the ingredients under
No3 into one bowl and mix them
good

Put everything in a pot an cov-
er it with a lid or a plate.
Than put the pot into frdge for
3-5 hours.

Before putting meat on the
barbeque I usually load it on
shampura (image above). This
time I used bamboo sticks, becau-
se I do not have shampura here
in the Netherlands.

Finally I put shashlik on barbeque
and regulary turn it to cook it
from all sides.

While preparing shashlik on the
barbeque, it is great to eat some
fruits to make your appetite
stronger :) This time we ate
passion fruit - it is great!

With shashlik you shoul eat any
wegetable you like - fresh or also
cooked on barbeque or in any other
way. For a drink you can choose red
wine or a beer.
